A simple sweet glaze like this simple-yet-delicious recipe will take your store-bought ham from good to great.

1 1/2 cups packed dark-brown sugar
1/4 cup brandy or bourbon
2 tablespoons grainy mustard
1 bone-in half ham (about 6 pounds), fully cooked

Steps:

  • In a small saucepan, combine sugar, brandy, and mustard. Bring to a boil over medium; cook until glaze is thick and syrupy, 3 minutes. (To store, refrigerate, up to 2 days. Reheat before using.)
  • Preheat oven to 275 degrees. Using a sharp knife, cut off hard rind from ham (if any); score the fat in a diamond pattern. Place ham, cut side down, in a roasting pan or on a rimmed baking sheet and cover tightly with foil. Bake until an instant-read thermometer inserted in thickest part reads 145, 1 1/2 hours.
  • Brush ham generously with glaze, making sure to coat all exposed areas. Increase oven temperature to 350 degrees and bake, uncovered, until glaze is sticky and ham is browned, about 35 minutes. Serve warm or at room temperature.

This spiral brandy glazed ham is a favorite on holidays; the glaze was my grandma's recipe that I have continued to use. Using the oven bag keeps the ham moist and juicy.

Number Of Ingredients 8

1 spiral-sliced bone-in half ham
1 large plastic oven bag
GLAZE
1 c brown sugar, lightly packed
1/2 tsp ground cloves
1/4 tsp dry mustard
3 oz orange juice, fresh
3 oz brandy, optional

Steps:

  • 1. 90 minutes before baking ham start by soaking ham in hot tap water. Leave ham in its original packaging(If there is a hole or tear in the original wrapping, wrap it in several layers of plastic wrap before soaking it in hot water), cover with hot tap water; set aside for 45 minutes. Drain and cover again with hot tap water; set aside for another 45 minutes. You can bypass these steps, but the heating time will increase 18 to 20 minutes per pound for a cold ham.
  • 2. Place oven rack in the lowest position and preheat oven to 275 degrees.
  • 3. Open ham and place in oven bag. Gather top of bag tightly so bag fits securely around the ham, tie bag and trim surplus plastic. Set ham cut side down in large roasting pan and cut 4 slits in top of bag.
  • 4. Bake ham until cetner registers 100 degrees, 1 to 1 1/2 hours (about 10 minutes per pound).
  • 5. GLAZE: Combine all ingredients in saucepan. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy about 5 to 10 minutes. There should be about 1 cup. Set aside.
  • 6. Remove ham from oven and increase oven temp. to 350 degrees. Cut open oven bag and roll back sides to expose ham. Brush ham with 1/3 glaze and return to oven until glaze gets sticky, about 10 minutes.
  • 7. Remove ham from oven, transfer to carving board, and brush entire ham with another third of glaze. Let ham rest, loosely tented with aluminum for 15 minutes.
  • 8. While ham rests, heat remaining third of glaze with 4 to 6 tablespoons of ham juices until it forms thick but fluid sauce. Carve and serve ham with remaining sauce at table.

SPICY HONEY-GLAZED HAM



Spicy Honey-Glazed Ham image

1 8-pound fully cooked bone-in half ham (shank or butt)
1 cup low-sodium chicken broth
1 cup honey
3/4 cup packed light brown sugar
1/2 cup dijon mustard
1/2 cup whole-grain mustard
3 tablespoons apple cider vinegar
3 tablespoons hot sauce
1 tablespoon chopped fresh thyme
1/2 teaspoon red pepper flakes
Bring the ham to room temperature 1 hour before baking.

Steps:

  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
  • Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
  • Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

Honey-Glazed Ham image

One 5- to 7-pound fully cooked boneless ham portion
2 tablespoons cloves
1 cup honey
1 can ginger ale
1/4 cup grainy brown mustard
1 tablespoon apple cider vinegar

Steps:

  • Preheat the oven to 325 degrees F.
  • Score the surface of the ham in a diamond pattern about 1/8 inch deep. Stud the top of the ham with the cloves, then put it in a roasting pan with a rack, tent it with foil and bake for 1 hour.
  • Heat the honey, ginger ale, mustard and vinegar in a small saucepan until bubbly. Cook until reduced and a bit thicker, 10 to 15 minutes.
  • Remove the foil and brush the glaze on the ham. Return it to the oven for 15 minutes. Repeat once more. Remove it from the oven and let it rest/cool slightly.

1 10- to 12-pound fully cooked bone-in half ham, shank or butt portion
Glaze ingredients (see recipes within instructions)

Steps:

  • Let the ham sit at room temperature, 1 hour.
  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/2-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham, fat-side up, on a rack in a large roasting pan.
  • Pour 2 cups water into the pan; tent the pan with foil. Bake until a thermometer inserted into the ham registers 110 degrees F, 2 to 2 1/2 hours, adding another 1 cup water to the pan if the liquid evaporates. Remove from the oven and uncover.
  • While the ham is baking, prepare the glaze (see recipes, below).
  • Whisk 1/4 cup of the pan juices into the glaze. Brush the ham with about half of the glaze. Return to the oven and continue baking, brushing with the glaze twice more, until the glaze is caramelized and the thermometer registers 140 degrees F, 1 1/2 to 2 more hours.
  • Transfer the ham to a cutting board or platter; let rest 15 to 20 minutes. Strain the remaining pan juices into a saucepan and boil until slightly syrupy. Spoon the reduced pan juices over the ham. Serve with any remaining glaze.

  • Mustard-Orange(pictured)
  • Before baking, arrange halved orange slices all over the ham, securing with cloves. For the glaze, whisk 3/4 cup light brown sugar, 1/2 cup dijon mustard and the juice of 2 oranges.
  • Pineapple-Rum
  • Before baking, arrange thinly sliced pineapple all over the ham, securing with cloves. For the glaze, simmer 2 cups pineapple juice over medium heat until syrupy, 7 to 8 minutes. Whisk in 1 cup pineapple preserves, 1/4 cup dark rum, 1 teaspoon mustard powder and 1/2 teaspoon each ground cloves, allspice and coriander.
  • Pomegranate-Jalapeno
  • For the glaze, simmer 2 cups pomegranate juice over medium heat until syrupy, 7 to 8 minutes. Whisk in 1/4 cup spicy mustard, 2 tablespoons red wine vinegar, 1 tablespoon chili powder and 1 tablespoon jalapeno hot sauce. Brush on the ham as directed, sprinkling with 2 teaspoons chili powder before returning to the oven. Add 1 cup pomegranate seeds and 1 diced jalapeno to the reduced pan juices.
  • Cranberry-Maple
  • For the glaze, boil 2 cups cranberries, 1 cup cranberry juice and 3/4 cup pure maple syrup with 4 thyme sprigs and 1 cinnamon stick over medium heat until syrupy, about 10 minutes. Remove from the heat and stir in 1 tablespoon chopped thyme.
  • Ginger-Juniper
  • Before baking, add 2 teaspoons juniper berries and 1 teaspoon black peppercorns to the water in the roasting pan. For the glaze, simmer 1 cup ginger preserves, 1/2 cup dry vermouth and 3 tablespoons champagne vinegar over medium heat until syrupy, 4 to 5 minutes. Brush onto the ham as directed, sprinkling with 2 teaspoons crushed juniper berries and 1 teaspoon crushed peppercorns before returning to the oven.
  • Rosemary-Honey Mustard
  • Before baking, add 4 rosemary sprigs to the water in the roasting pan. For the glaze, boil 1/2 cup each whole-grain mustard, honey and dry white wine over medium heat until syrupy, 3 to 4 minutes. Remove from the heat; stir in 1 tablespoon chopped rosemary.
