- In a small saucepan, combine the butter, sugar and corn syrup. Cook and stir over medium heat until butter is melted. Remove from the heat. Stir in the flour, brandy and ginger., Drop by teaspoonfuls, 3 at a time, 3 in. apart onto a parchment-lined baking sheet. Bake at 350° for 7-8 minutes or until golden brown., Cool for 30-45 seconds. Working quickly, loosen each cookie and curl around a thick wooden spoon handle. (If cookies become too cool to shape, return to oven for 1 minute to soften.) Remove to wire rack to cool completely., For filling, in a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and brandy; beat until stiff peaks form. Just before serving, pipe cream mixture into cookies. Sprinkle ends with chocolate if desired.

Steps:
- Preheat oven to 350°f.
- Lightly grease and flour cookie sheets.
- In small saucepan combine sugar, margarine, and corn syrup.
- Bring to boil over medium heat.
- ,stirring constantly.
- Remove fom heat.
- Stir in flour, pecans and brandy.
- Drop 12 evenly spaced half teaspoonfuls of batter onto prepared cookie sheets.
- Bake 6 minutes or until golden.
- Cool 1 to 2 minutes until cookies can be lifted but are still warm and pliable; remove with spatula.
- Curl around handle of a wooden spoon;slide off when crisp.
- If cookies harden before curling, return to oven to soften.
- If desired, drizzle with melted chocolate.
- If time is limited, curling of the cookies is optional.

- Preheat oven to 350 degrees F. Line cookie sheets with greased foil, shiny side up.
- In a small saucepan, combine brown sugar, butter, and syrup. Cook and stir over medium heat until well blended. Remove from heat.
- Stir in the nuts, flour, and liqueur. Mix until well blended.
- Drop teaspoonfuls onto a greased, foil-lined cookie sheet about 5 inches apart (bake only 4-5 at a time; cookies spread when baked). Bake for 9-11 minutes; let stand 1 minute.
- Remove from cookie sheet. Pull up three sides to center to form a triangle, or roll around the greased handle of a wooden spoon. If cookies are difficult to remove from sheet, reheat them in oven about 30 seconds. Cool on rack.

GINGER BRANDY COOKIES

Steps:
- Cream together butter and sugar until light and well blended. Add the molass and egg and beat well. In a separate bowl, sift together the flour, salt, baking soda, ginger, cinnamon and cloves. Alternate adding teh dry ingredients and brandy to the wet ingredients, stirring well after each addition. Form the dough into a ball and chill for 30 minutes. Preheat oven to 350. Shape the dough into 1 inch balls, roll each ball in powdered sugar. Bake for 12 min until just firm and a bit crisp. Remove to rack and allow to cool.
