CHEESE FONDUE
Throw a party with Tyler Florence's Cheese Fondue recipe from Food Network, a creamy mixture of Swiss and Gruy�re; serve it with chunks of bread and apples.

- In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
- Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
- Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

- Brush each side of the kasseri cheese with water. Dredge both sides in flour, making sure the surface is completely covered.
- Preheat a well seasoned cast iron skillet on medium-high heat until smoking. Pour in olive oil. Carefully place the floured cheese in the hot oil. Cook until cheese begins to ooze and a golden brown crust forms, about 2 minutes. Quickly flip cheese over with a spatula. Fry until bottom is golden brown, about 30 seconds more.
- Remove skillet from heat and transfer onto a napkin-lined plate. Pour brandy over the cheese. Light the brandy using a fireplace lighter. Now you can exclaim "Opa!" and marvel at the fire. Squeeze some lemon juice on top to extinguish the last few flames and garnish with parsley.

Steps:
- Gather the ingredients.
- Cut bread into bite-sized cubes.
- Roughly cut the cheeses into small chunks. This technique is preferable to grating it, as it will melt more smoothly.
- Combine the cornstarch and Kirsch and mix to form a slurry.
- Peel the garlic clove and cut it in half, then rub the inside of a heatproof fondue pot with the cut garlic clove.
- Pour in the wine and bring it to a gentle simmer , but don't boil. Stir in the cornstarch-Kirsch slurry until combined.
- Add the cheese a handful or so at a time, stirring until it's melted before adding more.
- Season to taste with salt, pepper, and nutmeg.
- Adjust the consistency of the cheese sauce with warmed wine if it becomes too thick.
- Serve bread cubes with skewers or long fondue forks for dipping into the fondue .
- Enjoy!

- In a small bowl, combine the cracker crumbs, walnuts, butter and cinnamon. Press onto the bottom and 1-1/2 in. up the sides of a greased 9-in. springform pan. Place pan on a baking sheet.
