CHERRY RHUBARB CRUNCH
My husband's grandmother gave me this recipe, along with a bundle of rhubarb, when we were first married. I had never cared for rhubarb, but after trying this dessert, I changed my mind. Now my children dig in, too! -Sharon Wasikowski, Middleville, Michigan

- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, flour and salt; stir well. Cut in butter until crumbly. Pat 2 cups of mixture into a greased 13x9-in. baking dish; cover with rhubarb. , In a saucepan, combine sugar and cornstarch. Stir in water; cook until mixture is thickened and clear. Stir in extract and cherry filling; spoon over rhubarb. Combine nuts with reserved crumb mixture; sprinkle over cherries. Bake until filling is bubbly and topping is lightly browned, 40-45 minutes. If desired, serve with ice cream.

Steps:
- In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
- Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
- Store in refrigerator 4 to 6 weeks before serving.

And I never miss a chance to stop by and eat there when we are near by. I love their Cherry Rhubarb Sauce that comes before the main meal. Try it, I know you will love it!

Steps:
- Place rhubarb into a saucepan, pour sugar over the rhubarb, and let stand for one hour.
- Add water to mixture and bring to a boil slowly, uncovered.
- Cook for 1 to 5 minutes, until your rhubard is soft.
- Cool, cover and refrigerate for several hours before servings.
- Can add a dash of whipping cream to the top if you like for that extra touch.

- In a small saucepan, heat port over medium-high heat until hot. Remove from heat, add cherries, and cover; let stand 15 minutes.
- Heat olive oil in a medium skillet over medium-high heat. Add shallots and cook, stirring, until translucent, 2 to 3 minutes. Add rhubarb and cook, stirring, 3 to 4 minutes. Transfer mixture to a large bowl; set aside.
- Add cherry-port mixture to skillet and let simmer for 1 minute. Add chicken stock, thyme, pepper, salt, and cloves; simmer until reduced by one-third. Whisk in butter, a few cubes at a time, making sure each addition is fully incorporated before adding the next. Return rhubarb mixture to skillet and let simmer for 1 minute. Serve immediately.

- In a medium saucepan, add the cherries, maple syrup, 1/4 cup brandy, and vanilla. Bring to a boil over medium heat and then reduce heat to a simmer. Cook, stirring occasionally, for about 15 minutes or until the cherries are very soft.
- Get some of the juices (2 – 4 Tablespoons-ful) from the pot into a cup. Stir the cornstarch into this liquid until smooth. Add the cornstarch mixture, a spoonful at a time, to the cooking cherries, stirring constantly, until the mixture is thickened. Stop when it is thickened to your liking.
- Remove from heat and stir in the additional brandy. Store in an airtight jar or container in the fridge. Warm and serve over cakes, yogurt, ice cream, etc.
