DIJON-PARMESAN CHICKEN BREASTS
Try a new twist on baked chicken breasts! Dijon mustard, Parmesan cheese, basil, garlic and high-fiber cereal create the tasty wow.

Steps:
- Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
- In shallow bowl, mix cereal, cheese, basil, garlic salt and pepper. In another shallow bowl, mix egg white and mustard until blended.
- Dip chicken into egg white mixture, then coat well with cereal mixture; place in pan. Drizzle oil over chicken.
- Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

- Preheat oven to 450 degrees. In a food processor, combine wheat germ, bran, breadcrumbs, flaxseed, Parmesan, onion and garlic powders, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; pulse to combine. Add oil; pulse to combine. Transfer crumb mixture to a large bowl.
- Set a wire rack on a rimmed baking sheet. In a shallow bowl, lightly beat eggs. Dip chicken in eggs (allowing excess to drip off), then dredge in crumb mixture, patting to adhere. Place on rack, and transfer to oven.
- Bake until chicken is opaque throughout, 12 to 14 minutes. Serve with barbecue sauce, if desired.

PARMESAN CRUSTED BRAN FLAKE CHICKEN
This chicken is baked in a crust of parmesan cheese and crushed bran flakes (instead of cornflakes) turns out super yummy and moist!

- Preheat oven to 450 degrees F.
- Lightly beat egg and milk. In another bowl mix Parmesan cheese and bran flakes. Dip each chicken piece in the egg mixture and then dip into the bran flakes mixture, patting well to ensure the mixture adheres to the chicken. Place the chicken on a lightly oil sprayed pan (I use reynolds release and no oil). Drizzle melted butter lightly over each piece of chicken. (The added flavor is worth it!) Bake about 20-25 mins or until internal temperature reaches 165 degrees F.

- Center one chicken breast half on each sheet of Reynolds Wrap® Aluminum Foil. Spoon spaghetti sauce over the chicken. Top with zucchini. Sprinkle with Parmesan cheese.
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make 2 packets.
- Bake 18 to 22 minutes on a cookie sheet in the oven or Grill 12 to 14 minutes in covered grill. Springle with Mozzarella cheese before serving.

- Preheat oven to 425 degrees F. Line a 15x10x1-inch baking sheet with foil; lightly coat foil with cooking spray. Set aside. In a shallow dish, combine egg, water and garlic. In another shallow dish, combine crushed bran flakes, Parmesan cheese and Italian seasoning.
- Dip chicken in the egg mixture, allowing excess to drip off, then dip chicken in cereal mixture, turning to coat evenly. Place chicken in a single layer in the prepared baking sheet. Coat tops of chicken with cooking spray. Bake until chicken is no longer pink (170 degrees F), 15 to 20 minutes.
- Meanwhile, cook spaghetti according to package directions; drain and keep warm. Coat a medium saucepan with cooking spray, preheat over medium heat. Add eggplant; cook about 5 minutes or until tender, stirring occasionally. Add pasta sauce; heat through. Stir in spinach and tomatoes.
- Divide spaghetti among four serving plates. Top with sauce mixture and chicken. If desired, garnish with basil.
