RAISED GRIDDLE CAKES
This is a very old-fashioned version of cornmeal pancakes which rise overnight. It came to our family via my great grandmother and dates back to the mid 1870s. The cornmeal gives these pancakes a tiny hint of fried mush, a splendid treat that exceeds my patience to make.

Steps:
- In a large bowl, stir together the cornmeal and boiling water. Let soak for about 15 minutes. While still warm but not hot, stir in the flour, sugar, milk and yeast. Cover, and let rise overnight in the refrigerator.
- In the morning, mix in the eggs, baking powder and salt. If the batter seems too thin, add more cornmeal to thicken it up. If desired, set aside a cupful of batter for the next morning's batch of griddle cakes (see Cook's Note).
- Heat a lightly oiled griddle over medium heat. Spoon pancakes onto the hot griddle, and cook until browned on each side. Serve at once with butter and syrup.

Steps:
- Pour the milk over the oats and let stand 5 minutes.
- Stir the flour, baking powder, sugar and salt together.
- Add the beaten eggs to the oat and milk mixture. Add the melted butter.
- Mix the dry ingredients into the wet ingredients just until moistened.
- You may keep this in the refrigerator for several days or make immediately.
- Fry on griddle until brown. These are thick and take a little longer to cook than regular pancakes.
- Serve warm with your favorite toppings.

- 1. Stir together flour, baking powder, soda, salt and sugar. Set aside.2. Combine Kellogg's® All-Bran® cereal and hot water. Let stand about 2 minutes or until cereal softens.3. In large mixing bowl, beat egg and milk. Stir in cereal mixture. Add flour mixture, stirring only until combined.4. Bake on preheated griddle at 375°F until browned on both sides, turning only once. Serve with brown sugar, syrup, honey or jelly, if desired.
