BRAN MUFFINS
Steps:
- Preheat oven 375 degrees F. Line a standard muffin tin with paper liners or grease with cooking spray.
- Add raisins to a small bowl and soak them in hot water for 10 minutes, to allow them to plump. Meanwhile mix together bran and buttermilk, let stand 5 minutes.
- Grate the carrots and chop walnuts (if using) and set aside.
- Add egg, egg white, oil, sugar and vanilla to a mixing bowl and mix by hand until combined. Stir in bran mixture. Stir in carrots, nuts, raisins.
- Stir together flour, salt, soda, and baking powder, then add to the batter, stirring just until combined (don't over mix!).
- Divide batter among muffin tins, filling them full. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes in the pan before removing to a wire cooling rack to cool completely.

- Combine the cereal, flour, brown sugar, baking soda, salt, and cinnamon into a large bowl and whisk together. Set aside.
- In a separate bowl whisk together the buttermilk, oil, egg, and vanilla. Pour the wet ingredients into the dry and stir to blend well. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours or up to 12 hours. The batter will become very thick.
- Preheat oven to 400°F. Line your muffin tin with 10 paper liners and set aside.
- Divide the batter evenly among the liners, filling them completely. Sprinkle with the turbinado sugar.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in tin for 2 minutes and then transfer to a wire rack to cool completely.

- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

BRAN GRAHAM MUFFINS
My mother-in-law makes these muffins, and they are delicious. She adds 1/4 cup flax seeds, and then increase buttermilk to 1 cup. She has also decreases the oil to about 1 tsp, and adds apple sauce (the ones that come in a cup. The recipe as posted is from Company's Coming Muffins and More cookbook.

- Measure all dry ingredients into bowl. Mix in raisins.
- in another bowl beat egg until frothy.
- Add oil, molasses, buttermilk and vanilla, and beat to mix.
- pour wet ingredients over dry ingredients, and stir just enough to moisten.
- Spoon onto greased muffin tins, filling 3/4 full.
- Bake in 375 F oven for 20 minutes.

- Preheat the oven to 350F. Line a 12-cup muffin tin with paper liners or grease with butter or oil or use these free-standing paper liners, which are fun and pretty.
- Spread the wheat bran on a baking sheet and toast in the oven for six to eight minutes, stirring a few times so it cooks evenly. Let cool.
- While the bran is toasting, heat 1 cup of the raisins with 1/2 cup of the water. (Note: I simmered all of the raisins (1.5 cups) at once with 3/4 cups water, then added the remaining 3/4 cup water to the batter (step 4) afterwards.) Simmer for ten minutes, or until the water is all absorbed (I simmered for 10 minutes and all of the water was not absorbed, but I figured it was OK, and it was). Puree the raisins in a food processor or blender until smooth.
- In a large bowl, mix together the toasted bran, buttermilk or yogurt, 1 cup water (or 3/4 cup water if you have simmered all of the raisins with 3/4 cup water), then mix in the raisin puree, orange zest, and brown sugar.
