Unprocessed wheat bran and currants make these muffins high in fiber; they're sweetened with fruit juice and molasses.

3 tablespoons canola or vegetable oil, plus more for oiling pans
1 cup unprocessed wheat bran
1/2 cup prune juice
1/2 cup plain nonfat yogurt
1/2 cup currants
3 tablespoons unsulfured molasses
1 large egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Heat oven to 400 degrees. Lightly oil nine standard-size muffin cups, or line them with paper liners.
  • Combine wheat bran, prune juice, yogurt, currants, molasses, oil, egg, and vanilla in a large mixing bowl. Let stand for 10 minutes.
  • Whisk together flour, baking powder, baking soda, and salt in a small bowl. Stir dry ingredients into the bran mixture just until dry ingredients are moistened. Do not overmix.
  • Spoon batter into muffin cups, filling each about three-quarters full. Bake in the center of the oven for 20 minutes.
  • Turn muffins out of the pan, and let them cool on a rack.

1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

Vegetable oil cooking spray
1 cup all-purpose flour
3/4 cup whole-wheat flour
3/4 cup sugar
2 1/2 teaspoons baking powder
Coarse salt
1/4 teaspoon ground cinnamon
1 cup plain low-fat yogurt
1/4 cup vegetable oil
2 large eggs, plus 2 large egg whites
2 cups grated carrots (from about 2 large carrots)
1/2 cup dried currants

Steps:

  • Preheat oven to 350 degrees. Line 14 cups of two 12-cup muffin tins with baking cups, and lightly coat each with cooking spray.
  • Whisk together flours, sugar, baking powder, 1/2 teaspoon salt, and the cinnamon in a large bowl. Whisk together yogurt, oil, eggs, and egg whites in a medium bowl. Fold yogurt mixture into flour mixture, then gently fold in carrots and currants until combined.
  • Spoon batter into baking cups until each is three-quarters full. Bake until a toothpick inserted into the center of each comes out clean, about 25 minutes. Transfer pans to wire racks, and let cool for 10 minutes. Turn out muffins onto racks, and let cool completely.

These are moist and flavorful, just pleasantly sweet. The recipe makes quite a lot of muffins, but the batter will keep in the fridge for up to 6 weeks. From the back of a box of Sun-Maid Zante Currants. I'm sure raisins or other dried fruits would work as well, but the currants are delightful.

3 cups whole all-bran cereal (I use All Bran)
2 cups buttermilk
1 cup water
1/2 cup vegetable oil
2 eggs, beaten
1 cup packed brown sugar
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups dried currants

Steps:

  • Place bran cereal in a large mixing bowl. Pour in buttermilk, water and oil - stir well and let sit for a few minutes for the bran to soften.
  • Mix in eggs and brown sugar.
  • Add dry ingredients all at once, stir in just enough to combine.
  • Fold in currants.
  • This will make about 30 muffins, so grease as many muffin tins as you need and fill the cups 2/3 full.
  • Bake at 375 for about 17-20 minutes (depending on how your oven behaves).
  • Store remaining batter in a tightly-covered container in the refrigerator for up to 6 weeks.

I picked lots of fresh red currants and then wondered what to do with them! I found this on tasteofhome.com but made some slight alterations. I can't stand orange peel so used a few drops of orange flower water instead. I also used self raising flour but, as they didn't rise a huge amount, I suggest you stick to plain flour and baking powder!

1/2 cup butter, softened
1/2 cup sugar
2 eggs
1 teaspoon grated orange peel (or a few drops of orange flower water)
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup fresh red currant
confectioners' sugar

Steps:

  • In a mixing bowl, cream the butter and sugar.
  • Add both eggs and orange peel, or flower water and beat well.
  • Sieve the flour, baking powder and salt into the creamed mixture and lightly blend.
  • Fold in the red currants.
  • Fill greased or paper-lined muffin cups two-thirds full and bake at 375° for 20-25 minutes or until muffins test done.

These are the most wonderful fruity summer muffins. I use red currants. Their more tart flavor make these muffins taste so fresh. The meringue topping melts in your mouth and the muffins are still moist. Serve them warm and the berries with all their juices will pop in your mouth.

2 cups flour
5 1/4 ounces red currants, fresh
2 teaspoons baking powder
1/2 teaspoon baking soda
1 egg
1/2 cup sugar
3/8 cup vegetable oil
1 cup buttermilk
3 egg whites
1 pinch salt
1 1/2 cups powdered sugar, sifted
3 1/2 ounces red currants

Steps:

  • Grease muffin cups and place the in the freezer until use.
  • Preheat oven (360°F, 180°C).
  • In a bowl mix flour, baking powder, baking soda and currants; set aside.
  • In a large bowl beat the egg slightly. Add sugar, vegetable oil and buttermilk and mix thoroughly.
  • Add flour-currant mixture and stir just until combined. Batter will be sticky.
  • Divide batter equally among the prepared muffin cups. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  • Meanwhile prepare the meringue topping. Beat egg whites and salt with a mixer on high speed until foamy and soft peaks are formed, then gradually add powdered sugar and beat until meringue is stiff. At last fold in the currants carefully.
  • When muffins are done, remove from oven. Spread the meringue topping on each muffin. Put the muffins back into the oven and let the meringue topping dry out for about 5 - 10 minutes. The meringue topping should be white or only slightly brown.
  • Remove muffins from oven and let cool down in muffin cups for 5 - 10 minutes. Then remove the muffins from the cups and serve warm or let cool down completely.
  • NOTE: You can replace red currants by black currants or other small berries.
