Yield Makes 4 servings

Number Of Ingredients 38

For the tamarind-braised short ribs:
4 (8-ounce) boneless beef short ribs
Fine sea salt and freshly ground black pepper
1/4 cup olive oil
2 medium carrots, peeled and thinly sliced
2 celery stalks, thinly sliced
1/2 medium onion, thinly sliced
4 cloves garlic, crushed
1 (2-inch) piece fresh ginger, peeled and minced
1 jalapeño, sliced
2 dried bay leaves
1/8 teaspoon whole black peppercorns
1/8 teaspoon whole cloves
2 cups balsamic vinegar
1/4 cup tamarind paste
1/4 cup molasses
5 anchovy fillets
1 quart beef stock or low-sodium beef broth
2 cups veal demi-glace
For the truffle sunchoke purée:
1 pound sunchokes, peeled and thinly sliced
4 cups heavy cream
1/4 cup unsalted butter
2 tablespoons chopped black truffles
Fine sea salt and freshly ground black pepper
For the watercress purée:
1 bunch fresh watercress (thin stems and leaves only)
1/2 cup extra-virgin olive oil
Fine sea salt and freshly ground black pepper
Zest of 1 lemon
For the butter-glazed chanterelle mushrooms:
3 tablespoons olive oil
1 pound fresh chanterelle mushrooms, cleaned and trimmed (halved or quartered if large)
4 tablespoons unsalted butter
1/4 cup vegetable stock
Fine sea salt and freshly ground black pepper
Equipment:
Food processor or blender

Steps:

  • Braise the short ribs:
  • Season the short ribs generously on all sides with salt and pepper.
  • In a large skillet over moderately high heat, warm 2 tablespoons of the oil until hot but not smoking. Add the short ribs and sear until browned on all sides. Transfer short ribs to a plate and set aside.
  • In a large saucepan over moderate heat, warm the remaining 2 tablespoons oil until hot but not smoking. Add the carrots, celery, onion, garlic, ginger, jalapeño, bay leaves, peppercorns, and cloves and sauté, stirring occasionally, until caramelized, about 5 minutes.
  • Add the vinegar, tamarind paste, molasses, and anchovies and simmer, stirring occasionally, until reduced by about 1/3. Add the beef stock and demi-glace. Add the seared short ribs and bring to a boil. Lower the heat to a simmer, cover the pot, and simmer until the meat is fork-tender, about 3 hours. Transfer the short ribs to a plate. Pour the braising liquid through a fine-mesh sieve into a large bowl and discard the solids. Return the strained braising liquid and the short ribs to the large saucepan, cover, and keep warm until ready to serve.
  • Make the truffle sunchoke purée:
  • In a medium saucepan over moderate heat, combine the sunchokes, cream, and butter and bring to a boil. Lower the heat to a simmer and continue simmering until the sunchokes are tender. Transfer the sunchokes, reserving the cooking liquid, to a blender or food processor, and process, adding the liquid as necessary, until completely smooth. Transfer the to a bowl, stir in the truffles, and season with salt and pepper.
  • Make the watercress purée:
  • Reserve a couple of watercress leaves for garnish.
  • In a medium pot of boiling water, blanch the remaining watercress. Transfer to a blender or food processor, add 2 tablespoons of the olive oil, season with salt and pepper, and process until smooth. With the blender or food processor on low, slowly add the remaining 2 tablespoons olive oil and continue to process until smooth and fully incorporated. Transfer to a small bowl and stir in the lemon zest.
  • Make the butter-glazed chanterelle mushrooms:
  • In a large skillet over high heat, warm the oil until hot but not smoking. Add the mushrooms and sauté, stirring occasionally, until browned, about 6 minutes. Add the butter and let it melt, stirring occasionally. Add the vegetable stock and simmer, stirring occasionally, to glaze the mushrooms. Season with salt and pepper.
  • To serve:
  • Divide the sunchoke purée among 4 large plates. Top each with 1 short rib then divide the mushrooms among the plates, arranging them around the short ribs. Drizzle the plate with the braising liquid and the watercress purée and garnish with the reserved watercress leaves.

GINGER-GLAZED SHORT RIBS

Categories     dinner, main course

Time 5h

Yield 8 servings

Number Of Ingredients 15

3 cups dry red wine
7 to 8 pounds bone-in short ribs, separated into whole ribs
Kosher salt
2 whole heads garlic, papery outer skins removed, cut in half horizontally
5 large fresh shiitake mushroom caps, halved
2 carrots, peeled and chopped
2 medium yellow onions, peeled and quartered
1 celery stalk, chopped
1 4-inch piece fresh ginger, peeled and sliced crosswise 1/4-inch thick
About a dozen allspice berries, lightly crushed
1 cinnamon stick
1 sheet konbu, 5 inches by 6 inches available at Japanese or health-food stores
A dozen sprigs fresh thyme
6 to 8 cups chicken stock, homemade or low-sodium canned
6 tablespoons red wine vinegar

Steps:

  • Heat the oven to 325 degrees. In a saucepan, boil the wine over high heat until reduced to 1/2 cup.
  • Generously sprinkle the ribs on all sides with salt and transfer to a large roasting pan, bone side up. Scatter the garlic, mushrooms, carrots, onions, celery, ginger, allspice, cinnamon, konbu and thyme on the ribs. Mix 6 cups of the stock and vinegar with the reduced wine and add to the ribs. The liquid should come about 2/3 of the way up the sides of the meat. Add more stock if needed.
  • Cover the pan tightly with layers of foil. Transfer to the oven and cook until the meat is very tender, 3 1/2 to 4 hours.
  • Remove from the oven and carefully remove the foil. When the ribs are cool enough to handle, transfer them to a dish. Remove and discard the bones and any bits of vegetables and spice.
  • Strain the liquid in the pan through a sieve and discard the solids. Let the liquid settle, then spoon off the fat or use a fat separator. You should have about a quart of liquid. (At this point, you can refrigerate the meat and sauce, separately, for up to three days.)
  • To finish the dish, heat the oven to 375 degrees. Put the strained liquid back in the roasting pan and bring to a boil on the stove. Add the meat in a single layer. Transfer to the oven and baste frequently with the liquid, until shiny and thick but not sticky, and until the ribs are well glazed, 10 to 20 minutes. Serve the ribs with extra sauce.

RED WINE-BRAISED SHORT RIBS WITH LEMONGRASS AND SOY

Red Wine-Braised Short Ribs With Lemongrass and Soy image

This is the dish that the chef Marcus Samuelsson made for President Obama when he visited the restaurant Red Rooster Harlem. This is an easy braise with wonderful flavors - plum sauce, lemongrass, soy sauce - and as it is pointed out in "The Red Rooster Cookbook," short ribs taste more expensive than they actually are, making them ideal for guests. Make it earlier in the day, then simply reheat when you're ready to serve dinner. The book suggests freezing the extra braising liquid in ice cube trays, so you can slip it into pan sauces or pasta for oomph.

Time 3h

Yield 4 servings

Number Of Ingredients 17

8 (6-ounce) English-cut short ribs
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed oil
1 onion, chopped
1 carrot, trimmed and chopped
2 celery ribs, trimmed and chopped
1 lemongrass stalk, trimmed, smashed and minced
3 garlic cloves, chopped
1 (1-inch) piece ginger, peeled and minced
1/2 cup dry red wine
3 cups beef or chicken broth
1/2 cup plum sauce
1/4 cup soy sauce
2 sprigs thyme
2 sprigs flat-leaf parsley
2 bay leaves
Freshly grated horseradish, for serving (optional)

Steps:

  • Heat oven to 325 degrees. Pat meat dry with paper towels and season all over with salt and pepper.
  • Heat grapeseed oil in a large Dutch oven over medium-high heat. When oil shimmers, add short ribs and brown on all sides, about 2 minutes per side; transfer to a plate.
  • Add onion, carrot, celery, lemongrass, garlic and ginger to the pot. Season with salt and cook, stirring often, until onion softens, about 5 minutes. Pour in wine and cook, stirring to dissolve any of the brown bits that may still be on the bottom of the pot. Add broth, plum sauce, soy sauce, thyme, parsley and bay leaves and bring to a simmer.
  • Return short ribs to pot, along with any juices, cover and slide pot into oven. Braise until meat is fork-tender, about 2 hours.
  • Transfer meat to a plate. Strain braising liquid into a fat separator. If you don't have a fat separator, use a ladle to skim the fat off the top of the braising liquid; then strain through a fine mesh sieve.
  • Discard bay leaves and thyme stems and transfer vegetables to a food processor. Process vegetables until smooth, then add 1 1/2 cups of the defatted braising liquid to the processor and pulse to combine.
  • Return sauce to Dutch oven and season to taste with salt and pepper. Add short ribs and turn to coat in the sauce; set aside until you're ready to serve.
  • Reheat short ribs in the sauce. Divide short ribs between four shallow bowls and top each with a spoonful of sauce. Put remaining sauce in a bowl for passing at the table, along with a bowl of horseradish, if you'd like.
