Sherry vinegar, paprika, green olives,and jarred piquillo peppers provide Spanish flair for this deeply flavorful braise. It starts with a whole chicken cut into pieces.

1 whole chicken (3 1/2 to 4 pounds), cut into 10 pieces
Coarse salt
1/2 teaspoon sweet paprika
1 tablespoon extra-virgin olive oil, plus more as needed
6 cloves garlic, minced (about 2 tablespoons)
1 heaping tablespoon tomato paste
1/3 cup sherry vinegar
2 cups chicken broth
6 jarred marinated piquillo peppers, cut into strips (about 2/3 cup)
1/2 cup green olives
2 tablespoons chopped fresh flat-leaf parsley leaves, for garnish

Steps:

  • Preheat oven to 400 degrees. Season chicken on both sides with salt and paprika. Heat an ovenproof 12-inch skillet or shallow braising pan over medium-high heat. Swirl in oil. Working in 2 batches, add chicken to pan and cook until well browned, about 2 minutes on each side, adding more oil as needed. Transfer chicken as it is browned to a plate.
  • Reduce heat to low and stir in garlic, then tomato paste, scraping up browned bits in pan with a wooden spoon. Return chicken to skillet, increase heat to high, and pour in vinegar. Boil, stirring, until reduced to a glaze.
  • Stir in broth and bring to a boil. Add peppers and olives. Transfer to oven and braise until a thermometer inserted into thickest part of breast (do not touch bone) reaches 160 degrees and liquid is reduced by half, 20 to 25 minutes. Garnish with parsley.

1 tablespoon |15 ml olive oil
225 g chorizo, sliced
1 large white, yellow or brown onion, diced
2 red peppers, deseeded and sliced
1 tablespoon tomato paste
3 cloves, about 1 tablespoon garlic minced
1 teaspoon paprika
8 bone-in and skin on chicken thighs
1 1/4 cup |300 ml rioja (or another Spanish red wine of your choosing)
1 1/4 cup | 300 ml chicken stock
1 bay leaf
thyme sprigs

Steps:

  • Preheat your oven to 400°F/200°C.
  • Add the olive oil to a large, oven-safe skillet/pan and warm over a medium heat. Add the sliced chorizo and cook 2 minutes, then transfer to another dish using a slotted spoon.
  • Add the onions and red peppers to the skillet/pan and cook for about 8 minutes stirring every so often. Stir in the tomato paste, garlic and paprika to the onion mixture and cook another 2 minutes, then transfer the onion mixture to the dish with the chorizo.
  • Season the chicken pieces with salt and pepper then add the chicken thighs to the skillet/pan, skin side down and cook 7-10 minutes to sear the skin. Once the skin has turned golden brown, flip over and cook another 7 minutes on the other side. Remove the chicken from the skillet/pan and set aside.
  • Pour the oil remaining in the pan out then return it to the heat. Add the red wine, stock and bay leaf. Stir and scrape the bottom of the pan to remove any sticky bits.
  • Add the chorizo and onion mixture back to the pan along with thyme, turn the heat up high and bring the mixture to a light boil then reduce the temperature to maintain a simmer. Let simmer 10 minutes to reduce the liquids.
  • Add the chicken back to the pan, skin-side up. Transfer to the oven and let cook uncovered for 12-15 minutes until the chicken has fully cooked through (internal temperature should be at least 165°F/74°C).
  • Remove from the oven, season with additional salt, pepper and thyme if needed and enjoy.

Braised Chicken Thighs With Bell Peppers, Olives and Tomatoes image

This used what I have on hand, it has been tweaked a bit from the original recipe in Martha Stewart Living, March 2004. Although this uses 10 cloves of garlic, crushed whole garlic isn't as strong as chopped or minced garlic. Supposedly the tomatoes in canned whole tomatoes are of better quality than those used for canned crushed tomatoes, but sometimes every minute counts. You may use fresh tomatoes, but you may want to add more salt to suit your taste preference. Serve over pasta or rice. (Served over whole wheat pasta.)

1 tablespoon extra virgin olive oil
1 1/2 lbs boneless skinless chicken thighs
kosher salt, to taste
fresh ground black pepper, to taste
2 yellow bell peppers, seeds and ribs removed, thinly sliced lengthwise julienne-style
2 red bell peppers, seeds and ribs removed, thinly sliced lengthwise julienne-style
1 medium onion, thinly sliced (about 3/4 cup)
10 garlic cloves, crushed with the flat side of a knife blade
28 ounces canned whole tomatoes or 28 ounces crushed tomatoes
1/4 cup Spanish olives, pitted and quartered
1 dried bay leaf
1 teaspoon paprika
1/4 teaspoon dried thyme
1/2 cup water
salt, to taste
black pepper, to taste

Steps:

  • In a Dutch oven (5-quart pot with a tight-fitting lid), warm oil over medium heat.
  • Season chicken with salt and pepper, and cook until browned, about 3 minutes per side. Transfer to a plate.
  • Add bell peppers, onion, and garlic to pot; cook, stirring occasionally, until softened, about 5-7 minutes.
  • If using whole tomatoes, gently crush tomatoes with your hands; add them to the pot along with their juice. If using canned crushed tomatoes, empty can into pot.
  • Add the pitted and quartered olives, the bay leaf, paprika, thyme, and water to the pot. Bring to a boil. Season with salt and pepper to taste.
  • Return chicken to pot; reduce heat. Simmer, partially covered, until chicken is falling-apart tender, about 30-45 minutes.
  • Discard bay leaf, serve hot over cooked pasta or rice.

¾ teaspoon adobo
½ teaspoon ground black pepper
1 teaspoon oregano
1 pack sazón
1 tablespoon lime juice, (freshly squeezed)
2 tablespoons sofrito
2 tablespoons vegetable oil
1 teaspoon brown sugar
1 cup of water
1 small red onion, (chopped into fine strips)
½ green bell pepper, (cut into thin slices)
½ red bell pepper, (cut into thin slices)
½ cup tomato sauce
1 tablespoon cilantro, (roughly chopped)

Steps:

  • Season the chicken with adobo, ground black pepper, oregano, sazón, lime juice and about two tablespoons of sofrito.
  • Heat up vegetable oil in a large saute pan. Make sure to use a pan with a lid because you are going to cover it later.
  • Sprinkle brown sugar in the pan and let the sugar brown slightly. When the sugar starts to turn brown, carefully, add the chicken. Saute the chicken until the meat is light brown.
  • Add 1/4 cup of water. Cover and simmer over medium heat for 15 minutes, stirring and adding a bit of water as it becomes necessary.
  • Add onion, and pepper, cover and simmer until the vegetables are slightly cooked through.
  • Then, add the tomato sauce and half a cup of water, simmer over low heat to produce a light sauce. Add fresh cilantro.
  • Serve with a side of white rice, beans stew and maduros.

Steps:

  • 1. In a small bowl, combine salt & pepper, paprika, and oregano. 2. Season both sides of the chicken. 3. Heat a large, nonstick sauté pan over medium heat; add in oil, once hot, add in the chicken. Lightly brown on both sides, about 3 minutes per side - remove the chicken from the pan and set aside. 4. Add in sliced onions and bell peppers to the pan, sauté for 2‐3 minutes or until the peppers become soft. 5. Add in garlic, wine, vinegar, broth, thyme, and salt & pepper - stir to combine 6. Place the chicken on top of the peppers, cover with a lid, reduce heat to a low simmer and cook for 20 minutes.
