BRAISED SAUERKRAUT
Sauerkraut braised with onions, wine, caraway seeds, and fresh thyme. Recipe adapted from one by Julia Child.

Steps:
- Drain the sauerkraut. Squeeze it by handfuls to remove excess liquid. Fluff up the strands and set aside.
- In a heavy 5-quart or larger covered saucepan, add the onions and the wine. Bring to a simmer and cook for 8 to 10 minutes, or until onions are tender.
- Add the sauerkraut, broth, caraway seeds, thyme, bay leaves, a little salt and pepper, and stir to combine. Bring the mixture back to a simmer, cover the pan, and simmer over low heat for about 30 minutes, stirring occasionally.
- Uncover the pan and boil rapidly until the liquid has reduced to nothing (or almost nothing if you perfer it with some of the liquid and not dry-like). Correct seasoning with additional salt and pepper if needed. Remove and discard the bay leaves. Serve hot.

- Place cloves, peppercorns and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. In a large bowl, combine the water, vinegar, sugar, salt and ginger. Add beef and spice bag; let stand at room temperature for 30 minutes., Transfer all to a 6-qt. electric pressure cooker. Add carrots, celery and onion. Lock the lid and close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Quick-release pressure. Select saute setting and adjust for medium heat; bring liquid to a boil. Discard the spice bag. Stir in gingersnaps; cook and stir until thickened, about 3 minutes. Serve with egg noodles. If desired, top with parsley and pepper., Freeze option: Freeze cooled sauerbraten in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

BRAISED PORK AND SAUERKRAUT
Pork ribs braised in a low, slow oven with sauerkraut and brown sugar. Serve with mashed potatoes for Sunday dinner on a cold winter night.

- Preheat oven to 300º. Trim any excess fat from the ribs.
- In a large dutch oven, put 1 can of sauerkraut, with juices, into the pot and spread along the bottom. Place one layer of pork ribs on top of sauerkraut. Season with salt and pepper. Add another can of sauerkraut over the ribs. Sprinkle generously with brown sugar. Repeat with another layer of pork ribs, salt and pepper, another can of sauerkraut. Top with brown sugar. (So I did two layers of pork and 3 cans of kraut. You may want or need another can of sauerkraut. Just adjust to your amount and size of ribs and pot.)
- Add water to the side of the ribs, enough so liquid comes ¾ of the way up the pork and kraut, I added about ½ can of water. Cover pot with lid.
- Place in middle of oven and braise for 2½ - 3 hours, until pork is very tender when pierced. You can remove the lid the last 15 - 30 minutes if you want the top more brown.
- Remove from oven and skim any fat from the top. Serve with mashed potatoes, and maybe apple sauce (not baked beans!).

SLOW-COOKER BAVARIAN-STYLE BEEF AND SAUERKRAUT

- Heat oil in 12-inch skillet over medium-high heat. Cook beef in oil about 5 minutes or until brown on all sides. Sprinkle with caraway seed and salt.
- Place beef in 5- to 6-quart slow cooker. Place onions, sauerkraut and 1/4 cup of the beer around beef.
- Cover and cook on Low heat setting 6 to 8 hours.
- Remove beef from cooker; cover to keep warm. Mix flour, remaining 1/4 cup beer and the mustard in small bowl; gradually stir into juices in cooker. Increase heat setting to High. Cover and cook 15 to 30 minutes or until slightly thickened. Serve beef with juices.

PRESSURE COOKER BRAISED PORK HOCK 萬巒豬腳

- Optional Cleaning Step: Bring 3.5L of water to a boil. Then, boil the pork hock for 3 minutes to clean and remove the excess fat. Remove and rinse in cold tap water. We take this step whenever we make Chinese soups or cook in master stock with pork hock or any other bones and meat.
- Pressure Cook Pork Hock: Add the pork hock and 1.5 cup of master stock (see above tips section for simplified version) into the pressure cooker. Close the lid and pressure cook at High Pressure for 20 minutes (For more tender results: use High Pressure for 30 minutes), and full Natural Release (roughly 15 - 20 minutes). Turn off the heat. Open the lid carefully.
- Marinate Pork Hock: place the pork hock pieces in a smaller bowl, pour the master stock through a strainer and fully submerge the pork hock pieces in the master stock for at least 1 hour.
- Make Garlic Sauce: Mix 2 tablespoons of minced garlic, 60 ml of master stock and ¼ teaspoon of sugar together. Taste and add more sugar if necessary.
- Serve: This dish is best served at room temperature. Slice the pork hock into thin slices and serve with the garlic sauce. Enjoy~

PRESSURE COOKER SPARE RIBS AND SAUERKRAUT
Spareribs are browned in oil, seasoned, then finished in the pressure cooker with brown sugar and sauerkraut. Delicious fall flavors.

- Set the pressure cooker to "saute" mode and add the oil. When hot, add the spareribs and cook, turning frequently, to brown on all sides. Season the ribs with salt and pepper as desired and then top with the sauerkraut. Add the water and sprinkle the brown sugar over everything. Close the cover and set it to pressure cook for 15 minutes. Use the quick release method when the time is up. Serve the spareribs with the sauerkraut.

- Set the pressure cooker over medium heat.
- Add butter and bacon. Cook bacon for 2-3 minutes.
- Add caraway seeds and onions. Cook until onions have softened, do not brown them.
- Add drained sauerkraut. Stir to coat with the fat. Cook for 2-3 minutes.
- Add white wine.
- Put on lid, bring up to high pressure, then adjust to just maintain high pressure. Cook for 15 minutes.
- Remove from heat. Let stand until cooker has depressurized naturally.
- Serve immediately or let cool down, refrigerate and reheat before serving. Steffen says it is even better reheated.

- Sprinkle the pork ribs with 2 teaspoons kosher salt and 1 teaspoon brown sugar, then set aside to rest. Rinse the sauerkraut in a large colander, then press down on the sauerkraut to squeeze out the excess water.
- Heat the 2 tablespoons of lard in the pressure cooker pot over medium high heat until it melts. Add the onions, garlic, juniper berries, and bay leaves. Sprinkle with the pepper, coriander, and salt, then stir to coat with the fat. Saute until the onion is softened, about 5 minutes.
- Add the Riesling to the pot, and bring to a boil. Stir in the sauerkraut, apples, and chicken stock. Submerge the ham hock and the ribs as much as you can in the sauerkraut.
- Lock the lid on the pressure cooker, bring it to high pressure, and pressure cook for 25 minutes. (30 minutes in an electric pressure cooker). Quick release the pressure. Carefully remove the lid from the pressure cooker, tilting away from you to avoid the hot steam.
