Sauteed red cabbage is at once colorful and comforting as the weather cools.

2 tablespoons extra-virgin olive oil
1 small red cabbage (about 1 3/4 pounds), halved, cored, and thinly sliced crosswise
2 small shallots, quartered and separated into layers (about 4 ounces)
2 teaspoons coarse salt
2 tablespoons freshly squeezed lemon juice
2 1/2 teaspoons cider vinegar
Freshly ground pepper
1/3 cup raisins

Steps:

  • Heat oil in a large nonstick saute pan over medium-high heat until hot but not smoking. Add cabbage and shallots, and cook, stirring occasionally, until cabbage has softened slightly, about 15 minutes. Stir in salt, lemon juice, and vinegar. Season with pepper. Cook until cabbage has wilted and shallots have softened, 10 to 12 minutes more. Stir in raisins; serve.

  • Cook 2 strips chopped bacon in olive oil in a pot over medium heat until crisp. Add 1 chopped onion; cook until softened, 4 minutes. Add 1 cup chicken broth, 1/2 head sliced red cabbage, 3 tablespoons white wine vinegar, 2 tablespoons sugar and 1 bay leaf; season with salt and pepper. Cover and cook, stirring occasionally, until tender, 30 minutes. Stir in 1/3 cup golden raisins and 2 tablespoons chopped parsley.

4 slices bacon, thinly sliced
2 medium yellow onions, thinly sliced
1 cinnamon stick
2 bay leaves
4 teaspoons kosher salt
1 large or 2 small heads red cabbage (about 3 pounds), cored and thinly sliced
1 Granny Smith apple, cored and cut into bite size pieces
2 to 3 cups low-sodium chicken broth
1/2 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the bacon until crisp, over medium heat in a large Dutch, that has a lid, about 4 minutes. Add the onions, cinnamon, bay leaves, and 1 teaspoon of the salt. Cover, and cook, stirring occasionally, until the onion is tender, about 8 minutes.
  • Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, broth, vinegar, sugar, the remaining salt, and pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
  • Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Transfer to a serving dish and serve.

2 tablespoons butter
1/2 medium head red cabbage, core removed and leaves finely shredded, about 7 cups
1 cup finely chopped onion
1/2 cup raisins
5 black peppercorns, crushed
2 juniper berries, crushed
1/2 cup red wine
1/4 cup red wine vinegar
2 tablespoons grenadine
orange zest
2 tablespoons blackberry jam

Steps:

  • Melt butter in a large, deep skillet over moderately high heat. Add shredded cabbage, onion, raisins, black peppercorns, and juniper berries and cook and stir until cabbage is wilted, about 15 minutes. Add red wine, red wine vinegar, grenadine, orange zest and blackberry jam. Bring to a boil, then reduce heat and simmer until liquid is reduced and cabbage is tender and glazed, stirring frequently. Remove the orange peel. Season cabbage with salt and black pepper to taste.
