PORK SHOULDER ROAST WITH TOMATOES
Not only is pork shoulder roast more budget-friendly than pork chops or a pork loin, but it also has rich flavor and is very versatile. Braising, roasting, or stewing all result in moist, tender meat.

- Preheat oven to 350 degrees. Season pork with salt and pepper. In a large Dutch oven or other heavy pot, heat 1 tablespoon oil over medium-high. Add pork, fat side down, and cook, turning until browned on all sides, 8 minutes. Transfer pork to a plate. Pour off fat, return pot to medium-high, and add remaining tablespoon oil. Add onion; cook until translucent, 5 minutes. Add garlic; cook until fragrant, 30 seconds. Add tomatoes; season with salt and pepper. Add broth and vinegar and cook, stirring and scraping up browned bits. Return pork to pot with juices; sprinkle with paprika.
- Bring mixture to a boil over high. Cover, transfer to oven, and cook 1 hour. Remove from oven; with tongs, flip pork. Return to oven and cook, uncovered, until tender, 1 hour, basting pork with juices every 15 minutes. Transfer pork to a cutting board; let rest 15 minutes. Slice pork and serve with sauce.

BRAISED PORK ROAST
An amazingly tender and delicious pork that is perfect for tacos, sandwiches, or simply as the solitary star it is.

- Mix all dry ingredients to make dry rub, set aside
- Pat dry pork roast
- Massage dry rub into roast and set aside to rest
- In a dutch oven, add enough olive oil to coat the bottom about 1/2 an inch. Bring to medium heat
- Once hot, sear roast on all sides until golden brown
- Drain excess oil
- Add 1 cup of chicken stock and scrap bottom to incorporate any seasoning that adhered while searing
- Cover and reduce heat to medium low
- In 45 min flip roast over and use meat thermometer to check temp and continue cooking if necessary
- Pork roast is done when it reaches an internal temperature of 170 degrees
- Once cooked, allow roast to rest and then shred or "pull" pork for sandwiches, tacos, nachos, etc. Be sure to reserve the drippings to use in your dish. The sky is the limit with this super flavorful and tender pork.
BRAISED PORK ROAST WITH GARLIC AND ROSEMARY
This is a wonderfully flavorful and moist roast that is browned briefly on top of the stove and finishes cooking in the oven. As it cooks there is time to prepare side dishes and have dinner on the table in only one hour. It is from Jeff and Jodie Morgan's "Working Parents' Cookbook." My family loves coming home to the fragrance of this dish as it cooks - and loves eating it even more! (Cooking time includes thickening the sauce.)

- Preheat the oven to 400F.
- In a small bowl combine garlic, rosemary, sea salt, pepper and 3 Tablespoons of the olive oil into a paste; set aside.
- In a dutch oven or other oven-proof pot, heat remaining olive oil over medium heat.
- Brown the pork roast on all sides, about 2 minutes per side.
- Remove the pot from the heat and stir the milk into the pan juices.
- Spread the garlic-rosemary paste over the top of the roast and cover the pot.
- Place the pot in the oven and cook, basting occasionally with the pan juices, for 45 minutes. (If the pan juices evaporate you may add more milk, about 1/2 cup at a time.).
- Check the temperature of the roast. It is ready when the thermometer regesters 155°F.
- Transfer the roast to a cutting board and let rest for 5-10 minutes before carving.
- Meanwhile, whisk the pan juices to break up any solids (the milk will curdle during the cooking.) If the sauce seems too thin, simmer on top of the stove over high heat for a few minutes to thicken.
- Slice the roast and serve with the sauce spooned over.
- Especially good with mashed potatoes, rice or egg noodles.

CIDER-BRAISED PORK ROAST

- Preheat the oven to 325 degrees F (165 degrees C).
- Heat oil in a skillet over medium-high heat. Season pork with salt and pepper and brown in the hot oil, 5 to 7 minutes per side. Transfer to a roasting pan just large enough to hold it.
- Combine apple cider, onions, garlic, and sage in a bowl; pour over pork and cover.
- Roast in the preheated oven until pork is very tender, about 2 1/2 hours.

- Place oil over medium-high heat in a 4- to 5-quart Dutch oven or stovetop casserole. Add pork and sear on all sides until lightly browned, about 20 minutes. Remove meat.
- Add garlic and onions; sauté over medium-low heat until soft. Add bay leaves; deglaze pan with vinegar. Add port and stock. Season meat with salt and pepper; return to pot.
- Place over very low heat and cook, basting occasionally, 40 to 45 minutes, until an instant-read thermometer reads 140 degrees. Add a little more stock if liquid cooks down too fast. Remove meat to a platter to rest 15 to 20 minutes; temperature will rise to 150 to 155 degrees.
- Reheat sauce and add olives and parsley. Adjust seasoning as needed.
- Slice meat and cut ribs apart. Arrange all on a platter, spoon sauce over and serve.

Steps:
- Combine all the marinade ingredients in a large Ziploc bag and put in the meat. Let it marinate in the refrigerator several hours or overnight, turning it occasionally. Remove from fridge and bring to room temperature before proceeding.
- Remove meat from the marinade and pat it dry with paper towels. Reserve the marinade.
- For the glaze, combine all ingredients in a saucepan and bring to simmering. Cover and reduce heat to low and cook until apples are very soft, about 15 minutes. Strain, reserving liquid.
- Pulse apple mixture in food processor until thick but blended. Set aside.
- For the stuffing:.
- Pound the garlic to a puree with some salt and pepper. Combine the remaining stuffing ingredients, except the fruit puree, until the mixture is the consistency of a paste.
- If the meat does not have a deep enough pocket for the stuffing, cut so that there is a thick top flap (that will be covering stuffing when tied). Smear the herb paste on the inner surface of the meat, leaving a ½ inch border. Then layer the fruit paste on top of the herb paste. Tie up the meat to enclose the stuffing.
- Rub the meat with olive oil and season generously with salt and pepper.
- Place the meat in a large roasting pan and sear it in a pre-heated 425' oven for 30 minutes or until the surface is golden brown.
- Remove the meat to a Dutch oven just large enough to contain it.
- Strain the marinade into the roasting pan and heat, stirring to deglaze the pan juices. While deglazing, heat up beef stock to a boil.
- Pour the heated marinade over the meat and add enough boiling stock to come one-half or two-thirds the way up the side of the meat. Cover the pot and place it in a 325' oven for about 1 ½ hours, basting the meat occasionally. During the last ½ hour, remove the lid, brush on ½ of the glaze and increase the temperature to 375'.
- Transfer meat to a warmed platter and tent with foil to rest for 10 minutes. Strain the liquid from the pot into a small saucepan and simmer, until the sauce is reduced.
- Remove strings from the meat, slice it or cut it into wedges and serve with the sauce. Excellent served with mashed potatoes.

ITALIAN BRAISED PORK SHOULDER
This is a tasty, quick prep meal of braised pork that can be used in versatile ways. It can be assembled quickly in the morning or the night before for a slow cooker meal. - Preheat the oven to 350 degrees F (175 degrees C).
- Rinse and dry pork roast. Season all sides with salt and pepper.
- Heat olive oil in a cast iron skillet over medium-high heat. Add roast to the hot skillet; turn and sear until browned and crisp, about 3 minutes per side. Transfer roast to a large lidded baking dish, leaving pan drippings in the skillet.

CIDER-BRAISED PORK BUTT ROAST WITH APPLES

Steps:
- Eighteen to 24 hours before cooking, combine brown sugar and kosher salt and set aside. Trim fat cap, if necessary, leaving about 1/8". Using a sharp knife, cut 1" crosshatch pattern, 1/16" deep, in the fat cap. Place roast on a large sheet of plastic wrap. Rub the sugar/salt mixture over the entire roast and into slits. Wrap tightly in double layer of plastic wrap, place on a plate and refrigerate for 18-24 hours.
- Heat the oven to 275° convection. Unwrap the roast and pat dry with paper towels, brushing away any excess sugar/salt mixture. Season with black pepper.
- Heat olive oil in a Dutch oven (or other oven proof pot with lid) over medium high heat. Sear roast until browned on all sides.
- Remove roast and add onion, fennel, and garlic to pot. Cook over medium heat for 5 minutes or more until onion becomes translucent.
- Add mustard, cider, chicken stock, vinegar, thyme, bay leaves and cinnamon stick and bring to a boil.
- Return meat to pan and return to simmering. Cover, transfer to oven and braise until meat is very tender, about 3 hours. Meat should register 195 to 200° and the bone is loose and can be easily removed.
- Transfer meat to a platter and tent with foil.
- Strain the solids from the braising liquid, pressing on the solids to extract as much flavor as possible. Discard the solids.
- Remove as much fat as possible from the top of the liquid using a fat separator or large spoon. Reserve ¼ cup of liquid in a small bowl for the slurry. Bring braising liquid to a boil on the stove top.
- Remove core from apples, but do not peel them. Cut apples into eighths. Add to the simmering liquid and cook until tender but still holding their shape.
- Make a slurry with 1½ tablespoons of cornstarch and reserved ¼ cup braising liquid. Add to simmering liquid and cook until slightly thickened, about 5 minutes. Taste and adjust seasoning (salt, pepper).
- Slice the meat as best you can. It is so tender you might end of with pieces and not perfect slices. But it will be delicious. Spoon some sauce over the meat and top with the apples. Serve extra sauce on the side to spoon over mashed potatoes for the ultimate fall meal.
BRAISED PORK LOIN WITH PRUNES
Steps:
- Heat 2 tablespoons oil in 5-quart pot over moderate heat until hot but not smoking, then cook onions, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper, stirring occasionally, until onions are soft and golden, about 20 minutes. Transfer onions to a bowl and reserve pot.
- Simmer prunes and Armagnac in a 1- to 2-quart saucepan 5 minutes. Remove from heat and set aside.
- Make a hole for stuffing: Insert a long thin sharp knife into middle of one end toward center of loin, then repeat at opposite end to make an incision that runs lengthwise through roast. Enlarge incision with your fingers, working from both ends, to create a 3/4-inch-wide opening.
- Pack about 20 prunes into pork, pushing from both ends toward center (reserve remaining Armagnac and prunes). Pat pork dry and season with 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.
- Put oven rack in middle position and preheat oven to 375°F.
- Wrap parsley, thyme, sage, bay leaf, peppercorns, and cloves in cheesecloth and tie into a bundle with kitchen string.
- Brush pork with mustard, then evenly coat with brown sugar. Heat remaining 2 tablespoons oil in reserved pot over high heat until hot but not smoking, then brown meat on all sides (not ends), reducing heat if necessary to keep from burning, about 6 minutes total.
- Transfer pork with tongs to a plate, then add white wine and reserved Armagnac (but not prunes) to pot. Bring to a boil, then remove from heat.
- Add broth, onions, and cheesecloth bundle to pot with Armagnac mixture, then add pork with any juices accumulated on plate and turn pork fat side up. Bring to a boil over high heat, covered, then transfer to oven and braise 30 minutes.
- Add remaining prunes and braise until thermometer inserted diagonally 2 inches into meat (avoid stuffing) registers 150°F, about 15 minutes.
- Transfer pork to a cutting board and cut off and discard string, then cover with heavy-duty foil (temperature of pork will rise as it stands).
- While pork stands, skim fat from surface of sauce (if necessary) and remove and discard cheesecloth bundle, then stir in vinegar and remaining 1/4 teaspoon salt and pepper to taste.

- Preheat the oven to 300°. In a large cast-iron casserole, heat the canola oil. Season the pork generously with salt and pepper, add it to the casserole and cook over moderately high heat, turning occasionally, until browned on all sides, about 12 minutes. Transfer the pork to a plate.
