Braised Chicken Thighs With Chile, Cinnamon, Cardamom and Coriander image

If you're looking to boost flavor, spices are a natural. There are perhaps no cuisines that use spices more deftly than those of India. Borrowing a technique commonly used there, I sweat a trio of aromatic spices before adding the liquid to a braised chicken-thigh dish. The final flavor of the dish, earthy but somehow still delicate, is wholly satisfying.

Number Of Ingredients 16

Scant 2 tablespoons vegetable oil
2 medium onions, halved and thinly sliced
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
1 tablespoon minced serrano or other fresh chili pepper
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground coriander
8 small or 6 large (about 2 1/2 pounds total) bone-in chicken thighs, skin removed
1 1/2 teaspoons kosher salt, more to taste
1 teaspoon black pepper
2 large white potatoes, peeled and cut into large chunks
3/4 cup coconut milk
About 1 cup chicken stock
2 tablespoons fresh lime juice
1/2 cup chopped fresh cilantro

Steps:

  • Heat oven to 350 degrees. In a Dutch oven or other large, heavy-bottomed ovenproof pan, heat the oil over medium heat until hot but not smoking. Add the onions and cook, stirring occasionally, until translucent, 5 to 7 minutes. Add the garlic, ginger and chili, and cook, stirring often, until slightly softened, about 1 minute. Add cinnamon, cardamom and coriander, and cook, stirring constantly, for about 30 seconds.
  • Add chicken to the pot along with the salt, pepper, potatoes, coconut milk and just enough chicken stock to half-cover the thighs and potatoes. Turn heat to high, bring just to a simmer, then cover and put in the oven. Cook until potatoes are tender and chicken thighs are cooked through, 45 minutes to one hour.
  • Use a slotted spoon to transfer the chicken and potatoes to a serving dish. Tent loosely with foil and let rest. Skim as much fat as possible from the surface of the sauce, then return to a simmer over medium-high heat and simmer until slightly thickened, 5 to 6 minutes. Remove from heat, stir in the lime juice and cilantro, and adjust seasoning as necessary. Pour the sauce over the chicken and potatoes, and serve.

6 chicken thighs (about 2 pounds), trimmed of any excess skin or fat
1 tablespoon Emeril's Original Essence or Creole Seasoning
1 teaspoon salt
1/2 cup plus 1 tablespoon all-purpose flour
2 teaspoons olive oil
3 tablespoons unsalted butter
2 cups thinly sliced yellow onions
1 tablespoon minced garlic
6 sprigs fresh thyme, tied in a bundle, or 2 sprigs fresh rosemary
1/4 teaspoon freshly ground black pepper
3 cups chicken stock or canned, low-sodium chicken broth
1/4 cup chopped fresh parsley
Steamed white rice, for serving

Steps:

  • Season the chicken all over with the Essence and 1/2 teaspoon of the salt. Place the 1/2 cup flour in a small bowl, and quickly dredge both sides of each thigh in the flour, shaking to remove any excess. Set aside.
  • Heat 1 teaspoon of the olive oil in a 10- to 12-inch flameproof casserole or saute pan over medium-high heat. Add 2 tablespoons of the butter, and when it has melted, place the chicken, skin side down, in the pan. Brown for 2 minutes on each side. Remove the chicken from the pan and set aside.
  • Add the remaining 1 tablespoon butter to the pan, and when it has melted, add the onions, garlic, thyme bundle or rosemary sprigs, remaining 1/2 teaspoon then whisk in the chicken stock and increase the heat to high. Return the chicken, skin side down, to the pan, and bring the stock to a boil. Reduce the heat to medium-low, cover the pan with a heavy, tight-fitting lid, and simmer for 15 minutes.
  • Uncover the pan, stir the bottom of the pan to prevent scorching, and turn the chicken skin side up. Cover the pan, and simmer for 20 minutes longer.
  • Stir the bottom of the pan a final time, re-cover, and simmer for 20 more minutes.
  • Remove the pan from the heat and discard the herb bundle or rosemary sprigs. Transfer the chicken to a serving platter. Add the parsley to the sauce, stir to combine, and then spoon the sauce over the chicken. Serve with steamed white rice.

Braised Chicken Thighs With Coriander, White Wine, and Garlic image

1 1/2 teaspoons whole coriander seeds
3 cloves garlic
2 tablespoons extra-virgin olive oil
4 bone-in, skin-on chicken thighs (about 1 3/4 pounds)
Coarse salt and freshly ground pepper
1/2 cup dry white wine
Fresh cilantro sprigs, for serving

Steps:

  • In a large skillet over medium heat, toast coriander seeds until fragrant, about 2 minutes. Transfer seeds to a mortar and pestle and lightly crush.
  • Smash two of the garlic cloves and remove peel. Peel remaining clove of garlic and finely chop. Add oil to skillet and increase heat to medium-high. Add smashed garlic and cook until pale golden, 1 to 2 minutes. Season chicken with salt and pepper and add to skillet; let brown on all sides, about 5 minutes per side.
  • Remove all but about 2 tablespoons fat from skillet. Reduce heat to medium-low. Return coriander seeds to skillet along with wine; cover and cook until chicken is cooked through, 15 to 18 minutes. During the last 5 minutes of cooking, stir in chopped garlic.
  • Transfer chicken to a serving platter. Increase heat to high and simmer liquid in skillet until thickened, 4 to 6 minutes. Season with salt and pepper. Pour cooking liquid over chicken and serve garnished with fresh cilantro.

QUICK CORIANDER CHICKEN WITH BRAISED GREEN BEANS



Quick Coriander Chicken with Braised Green Beans image

3 tablespoons extra-virgin olive oil, divided
2 pounds boneless, skinless chicken breasts (3 to 4), patted dry
2 teaspoons ground coriander
Kosher salt and freshly ground pepper
12 ounces cherry tomatoes, halved, or left whole if small (2 cups)
1 tablespoon minced garlic (from 3 cloves)
1 pound green beans, trimmed
1/3 cup pitted Kalamata olives, halved
Fresh cilantro leaves, for serving
Buttered crusty bread, for serving

Steps:

  • Heat 2 tablespoons oil in a large straight-sided skillet over medium-high. Season both sides of chicken with coriander, salt, and pepper. Add to skillet and cook, flipping once, until browned on both sides, about 8 minutes. Transfer to a plate.
  • Swirl remaining 1 tablespoon oil into skillet. Add tomatoes, season, and cook, stirring occasionally, until they burst, about 4 minutes. Add garlic; cook 30 seconds. Stir in green beans and 1/2 cup water; bring to a simmer, then cover and cook, stirring occasionally, 8 minutes.
  • Nestle chicken and any accumulated juices into skillet; add olives. Cover and cook until beans are tender and a thermometer inserted into thickest parts of chicken registers 160°, about 5 minutes. Season to taste, sprinkle with cilantro, and serve with buttered bread.

2 tablespoons oil
1 large onion, sliced finely
1 garlic clove, crushed
1 1/4 lbs chicken breasts or 1 1/4 lbs chicken thighs, cut into bite sized pieces
3 tablespoons black soy sauce
2 teaspoons coriander powder
2 tablespoons sugar
1/2 teaspoon pepper, to taste
2 cups water

Steps:

  • In a plastic container with lid or Ziplock bag, combine soy sauce, coriander, sugar, salt, and pepper to make marinade.
  • Add chicken pieces, cover or close, shake, and marinade for for 20 minutes in refrigerator, turning occasionally.
  • In a heavy skillet over medium temperature, heat oil and fry onion and garlic until soft but not brown, about 7 minutes.
  • Add chicken together with marinade and stirfry until chicken is well coated and brown, about 7 minutes.
  • Add water and simmer for 20 minutes, turning occasionally.
  • Adjust seasoning and serve with French bread or rice. Garnish with chopped green onions.

3/4 cup chopped cilantro
Equipment: a 5- to 6-quart slow cooker
Accompaniment: white rice

Steps:

  • Put onion and garlic in slow cooker. Top with chicken and season with 1 teaspoon salt and 1/2 teaspoon pepper. Layer poblanos and corn over chicken and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover and cook according to manufacturer's instructions (chicken should be falling off the bone).
  • Lift chicken from cooking liquid and transfer to serving bowls. Whisk sour cream and cilantro into cooking liquid, then spoon over chicken. Season with salt and pepper.
