Braised cabbage with bacon makes a delicious side dish. Cabbage braised with bacon and onion is perfect for a weeknight supper.

4 slices bacon (diced)
1 medium onion (diced)
1 head of cabbage (chopped)
1/4 cup water
salt and pepper to taste

Steps:

  • Core and clean cabbage. Chop into 1 1/2" to 2" pieces.
  • Add diced bacon to a large, heavy-bottomed skillet or Dutch oven. Cook over low to medium heat until bacon has lightly crisped. Remove bacon to a bowl while cooking cabbage and drain off bacon drippings, leaving 3 tablespoons in the skillet or Dutch oven for cooking.
  • Add diced onion to skillet or Dutch oven with bacon drippings and cook until tender, about 3 minutes. Add chopped cabbage to onions and add water. Cook for about 12-15 minutes until cabbage is tender, stirring occasionally.
  • Add the bacon back to the cabbage and stir gently to combine. Season with salt and pepper to taste.

1 onion, sliced
50g butter
200g smoked lardon, or diced bacon
1 Savoy cabbage
150ml boiling water

Steps:

  • Fry the onion in butter for 2 mins, then add the bacon and cook for a few mins more until golden.
  • Stir in the cabbage and boiling water. Cook for 2 mins over a medium heat until wilted, then cover, turn the heat to low and cook for another 5 mins.
  • Uncover and stir well; the cabbage should have a little colour. If not, increase the heat and cook for a few moments more. Season to taste.

565 ml organic chicken or vegetable stock
6 rashers of higher-welfare smoked streaky bacon
a few sprigs of fresh thyme
1 white cabbage
1 small knob of unsalted butter
extra virgin olive oil

Steps:

  • Pour the stock into a large pan, then add bacon and pick in the thyme leaves. Place over a medium heat and bring to the boil.
  • Meanwhile, discard the tatty outer leaves from the cabbage, then halve and very finely slice the rest, discarding the tough core.
  • Once boiling, add the cabbage to the stock, mix well, pop the lid on and boil furiously for 5 minutes.
  • Turn the heat down to a simmer and continue to cook until the cabbage is a pleasure to eat, topping up with a little extra stock or water, if needed.
  • Add the butter and a good lug of extra virgin olive oil, season to taste with sea salt and black pepper, then serve immediately.

4 ounces bacon (about 4 slices), cut crosswise into 1/2-inch pieces
1 medium onion, thinly sliced
1 head red cabbage (2 1/4 pounds), halved, cored, and cut lengthwise into 1/2-inch-thick slices
1/2 cup cider vinegar
1/2 cup dry red wine
3/4 cup water
2 tablespoons dark-brown sugar
Coarse salt and freshly ground pepper
1 Golden Delicious apple, peeled, cored, and cut into 1/2-inch pieces

Steps:

  • Cook bacon in a large pot over medium heat, stirring occasionally, until fat renders and bacon is crisp, about 8 minutes. Add onion, and cook, stirring occasionally, until translucent, about 3 minutes. Add cabbage, vinegar, wine, water, sugar, and 1 1/2 teaspoons salt; stir to combine. Raise heat to medium-high, cover, and cook 5 minutes.
  • Reduce heat to medium-low, and continue to cook, covered, stirring occasionally, 30 minutes. Stir apple into cabbage, and cook, covered, until cabbage and apples are tender, 25 to 35 minutes. Season with pepper.
