LINGUINE WITH CHICKPEAS, BROCCOLI AND RICOTTA

Linguine With Chickpeas, Broccoli and Ricotta image

The broiler is an unsung kitchen hero because it imparts a flavorful char in half the time that grilling takes. In this 20-minute recipe, kale, broccoli and chickpeas crisp under the broiler while the pasta water boils. Make sure to spread out the vegetables and chickpeas so they have room to caramelize properly instead of steaming (the more crunchy bits, the better). Finish by tossing the pasta and vegetables with a quick sauce of butter, lemon zest and fresh ricotta, a rich and creamy complement to the charred vegetables. Enjoy with crusty bread, good wine and a sense of accomplishment - you just got dinner on the table in under a half hour.

Time 20m

Yield 4 servings

Number Of Ingredients 13

Kosher salt
12 ounces dried linguine or spaghetti
1 bunch broccoli or broccolini, trimmed and cut into thin florets (about 1 1/2 pounds), stems reserved for another use
1 (14-ounce) can chickpeas or other white beans, drained and rinsed
2 large garlic cloves, thinly sliced
1/2 teaspoon red-pepper flakes
1/3 cup extra-virgin olive oil, plus more for drizzling
Black pepper
1 bunch Tuscan kale (also known as cavolo nero or Lacinato kale), stemmed and cut into bite-size pieces
1 lemon
2 tablespoons unsalted butter
8 ounces ricotta, preferably room temperature
Flaky sea salt

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, and drain the pasta.
  • Meanwhile, heat the broiler and set a rack roughly 8 inches from the heat source. In a large bowl, toss the broccoli, chickpeas, garlic, red-pepper flakes and 1/3 cup oil until evenly coated. Season with salt and pepper. Spread out evenly on one sheet pan. Add the kale to the same bowl, and toss to coat in any residual oil. Drizzle with more oil as needed and toss to coat evenly. Spread out in an even layer on the second sheet pan.
  • Working with 1 sheet pan at a time, broil the broccoli and chickpeas, tossing halfway through cooking, until the chickpeas are toasty and the broccoli is tender and charred, 5 to 7 minutes. Broil the kale until just charred and crisp, about 5 minutes.
  • Zest the lemon, halve it, then cut 1 half into 4 wedges. Squeeze the juice from the lemon half over the roasted vegetables and season to taste with salt and pepper.
  • Return the pasta to the pot. Add the 1/4 cup reserved pasta cooking water, the ricotta, butter and lemon zest and toss until well combined. Add the roasted vegetables and toss, adding more pasta water as needed.
  • Divide among four bowls. Season with flaky sea salt and pepper, and serve with lemon wedges for squeezing on top. Drizzle with more oil, if desired.

OLIVE OIL-BRAISED CHICKPEAS AND BROCCOLI RABE

Olive Oil-Braised Chickpeas and Broccoli Rabe image

Braising in a pool of olive oil can turn tough ingredients creamy and luxurious without any of your attention. Canned chickpeas turn buttery-soft, and broccoli rabe's bitterness succumbs to an oil seasoned with garlic, rosemary, chile and fennel seeds. Speaking of that oil, it's as much a reason to braise as the silky chickpeas and rabe themselves. Soak it all up with crusty bread, or ladle it over pasta, yogurt, feta or mozzarella. The underpinnings of this recipe - chickpeas, vegetables, olive oil and seasonings - also make it great to riff on. Consider simmering chickpeas and olive oil with carrots, harissa and black olives; cherry tomatoes, thyme and lemon slices; or potatoes, shallots and cumin seeds.

Time 45m

Yield 4 servings

Number Of Ingredients 9

1 cup extra-virgin olive oil
6 garlic cloves, peeled and smashed
1 rosemary sprig
1 teaspoon fennel seeds
1/2 teaspoon dried chile flakes
1 bunch broccoli rabe (about 1 pound), woody stems trimmed
1 (15-ounce) can chickpeas, drained and rinsed
Kosher salt and black pepper
Crusty bread, for serving

Steps:

  • Heat the oven to 375 degrees. In a large ovenproof skillet or Dutch oven over medium heat, combine the oil, garlic, rosemary, fennel seeds and chile flakes. Cook until the mixture is fragrant and the garlic is golden, 3 to 5 minutes.
  • Turn off the heat, then add the rabe and toss until coated in oil. Scatter the chickpeas around the rabe and stir to coat in oil. Season generously with salt and pepper.
  • Cover with a lid or foil and bake for about 40 minutes, until the chickpeas are soft and crispy in parts and the broccoli rabe is tender, but the stems are not mushy.
  • Let cool slightly. Before serving, remove the rosemary and season to taste with salt and pepper. Serve with crusty bread for mopping up the seasoned oil.

25+ VEGAN CHICKPEA RECIPES: 7 SPICE CHICKPEA STEW

25+ Vegan Chickpea Recipes: 7 Spice Chickpea Stew image

Seven spice chickpea stew with tomato and coconut is an easy and healthy weeknight meal that's naturally vegan and gluten-free

Provided by Laura Wright

Categories     Main Course     Side Dish     Stew

Time 40m

Number Of Ingredients 18

2 teaspoons olive or coconut oil
1 medium yellow onion, small dice
seven spice blend (see below)
1 tablespoon tomato paste
2 cloves garlic, minced
2 cups cooked chickpeas, drained and rinsed
1 teaspoon balsamic vinegar
1 cup jarred/canned diced tomatoes
1 cup light coconut milk
sea salt and ground black pepper, to taste
⅓ cup chopped flat leaf parsley or cilantro (or a combination)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon ground turmeric
½ teaspoon dried oregano
½ teaspoon dried chili flakes
¼ teaspoon ground cinnamon

Steps:

  • In a deep skillet or a small soup pot, heat the olive oil over medium heat. Once the oil is lightly shimmering, add the onions to the pan. Cook and stir the onions until translucent and quite soft, about 5-6 minutes. You want the onions to be quietly sizzling while they cook, so lower the heat if necessary.
  • Add the spice blend to the skillet and stir. Once the spices are quite fragrant and fully integrated with the onions (about 1 minute), add the tomato paste, mashing it with the back of your spoon into the spices and oil. Add the garlic and chickpeas and stir the mixture for 30 seconds.
  • Add the balsamic vinegar and tomatoes to the pan and stir, using the back of your spoon to scrape up any brown bits that may have formed on the bottom of the pan. Add the coconut milk to the skillet and season the stew with salt and pepper.
  • Bring the seven spice chickpea stew to a boil, and then lower the heat to a light simmer. Cook the stew for about 10-15 minutes, or until the flavours have melded to your liking. Garnish the top of the stew with the chopped parsley/cilantro. Serve stew hot with polenta, brown rice or any other accompaniment you like.

OVEN-BRAISED CHICKEN THIGHS WITH FENNEL AND CASTELVETRANO OLIVES

Oven-Braised Chicken Thighs with Fennel and Castelvetrano Olives image

This recipe is infinitely variable. It can serve as a stand-alone stew with a side of crusty bread or a sauce over noodles, rice, or potatoes. I follow a paleo diet and serve it on zucchini noodles with a side of broccoli raab cooked with anchovy, garlic, and lemon. The sweetness of the onions and fennel counters the bitterness of the broccoli raab beautifully.

Time 1h35m

Yield 6

Number Of Ingredients 15

1 tablespoon olive oil
2 pounds skinless, boneless chicken thighs
salt and ground black pepper to taste
1 bulb fennel, cut into 1/4-inch thick slivers
1 yellow onion, cut into 1/4-inch thick slivers
½ teaspoon fennel seeds
4 cloves garlic, sliced
1 tablespoon chopped fresh thyme
1 dried chile de arbol pepper
½ cup white wine
1 (28 ounce) can whole peeled tomatoes in puree
½ cup pitted and halved Castelvetrano olives
2 tablespoons chopped fennel greens
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large, heavy cast-iron skillet or Dutch oven over medium-high heat. Season chicken thighs with salt and black pepper. Brown chicken in the hot oil, about 5 minutes per side. Meat will still be pink inside. Transfer chicken into a bowl, leaving drippings in skillet.
  • Turn heat down to medium; cook fennel, onion, and fennel seeds in the hot oil, stirring occasionally, until onion and fennel begin to caramelize, about 10 minutes. Stir garlic, thyme, and chile de arbol pepper into fennel mixture. Cook until garlic is fragrant, about 1 more minute. Stir white wine into fennel mixture, scraping up and dissolving any browned bits of food on the bottom of the skillet.
  • Pour tomatoes with puree into skillet and bring to a boil. Break tomatoes into large chunks with a wooden spoon; adjust salt and pepper. Add chicken thighs, any accumulated drippings from chicken, and olives to the skillet and stir to combine.
  • Bake uncovered in the preheated oven until the chicken thighs are no longer pink inside, about 45 minutes. Let cool 5 to 10 minutes before serving. Sprinkle with fennel greens, flat-leaf parsley, and lemon zest.

  • Coconut-Braised Chickpeas with Sweet Potatoes and Greens. We love chickpea recipes that bring in other pantry staples, too, like this comforting stew made with coconut milk, chickpeas, and sweet potatoes.
  • Roasted Cabbage Steaks With Crispy Chickpeas and Herby Croutons. This roasted cabbage dinner is a showstopper, thanks to a topper of roasted crispy chickpeas, which are seasoned with cumin and coriander.
  • Chickpea-Mushroom Burgers. You don't need to eat chickpeas in their original form. They're even better mashed with quinoa, mushrooms, tahini, miso, garlic, and paprika and shaped into these cook-from-frozen veggie burgers.
  • Spiced Quinoa and Chickpea Bites. These protein-packed chickpea bites are spiced with cumin, cinnamon, and garlic, and held together with an egg and bit of almond butter or sunflower seed butter.
  • Deconstructed Falafel Salad. Get all the flavors of falafel with crispy roasted chickpeas, crunchy crouton-like pita chips, crisp cucumber, and a lemon-tahini dressing.
  • Crispy Pita with Chickpeas and Yogurt (Fattet Hummus) This creamy, crunchy breakfast dish also pairs well with vegetables, fish, or lamb come dinnertime.
  • Spicy Creamy Chickpeas with Runny Eggs and Prosciutto. Chickpeas get the luxurious treatment here, bathing in cream, tomato paste, and smoked paprika with ribbons of prosciutto and just-set eggs.
  • Any Way Niçoise. You could use cooked chicken or salmon or oil-packed tuna in this endlessly riffable salad, but we also love it with chickpeas. Add olives, capers, peperoncini, and pickles to boost this recipe's briny, tangy character.
  • Chickpea Flatbreads with Burst Tomato Sauce. Turn chickpea flour into crispy-edged flatbreads; then use them to scoop up a saucy, sweet-tart mix of burst tomatoes, chickpeas, feta, and greens.
  • Brothy Pasta with Chickpeas. Chickpeas and pasta are better together. In this simple recipe, cooking the onion and garlic until they’re completely soft encourages them to give up all their goodness to the velvety-rich tomato broth.
