BRAIDED EGG BREAD (CHALLAH)
Did you know Challah is a very special bread? Used in Jewish cuisine, it is typically eaten on major Jewish holidays. For the Challah to be ready for ceremony, a small portion of the dough is set aside as an offering before baking the bread. Also it's delicious and beautiful!

- Place refrigerated dough on a lightly floured surface. Lightly flour top of dough; roll into a 19- x 12-inch rectangle. Using a pizza cutter, trim edges to form an 18- x 11-inch rectangle; discard scraps. Cut dough crosswise into 9 (11- x 1 1/4-inch) strips; reserve scraps for croissants (see Note). Place dough strips in a single layer on a parchment paper–lined baking sheet; cover with plastic wrap, and refrigerate 15 minutes.
- Line an 8 1/2- x 4 1/2-inch loaf pan with parchment paper, leaving a 2-inch overhang on both long sides. Braid 3 dough strips, and roll braid into a ball. Repeat with remaining 6 dough strips for a total of 3 braided dough balls. Place dough balls in an evenly spaced line, seam sides down, in prepared pan. Proceed with recipe, or cover with plastic wrap and refrigerate up to 8 hours or overnight for deeper flavor.
- Whisk together egg and milk in a small bowl. Brush top of loaf lightly with egg mixture. Reserve remaining egg mixture in refrigerator. To proof loaf, add 2 cups hot water to a small bowl, and place in a cold oven. Place loaf pan, uncovered, in oven with hot water. Close door, and let proof until loaf doubles in size, 2 hours and 30 minutes to 3 hours and 30 minutes. Remove loaf pan and water from oven, and let loaf stand at room temperature 30 minutes. Preheat oven to 425°F.
- Lightly brush loaf with a second coat of egg mixture. Place loaf pan in preheated oven, and immediately decrease temperature to 375°F. Bake until a thermometer inserted in center of loaf registers 210°F, 45 to 55 minutes, tenting with aluminum foil after 35 minutes if needed to prevent excessive browning. Let loaf cool in pan 10 minutes. Using parchment paper as handles, lift loaf from pan, and transfer to a wire rack. Let cool completely, about 1 hour, before slicing.

- Warm the milk in a bowl in the microwave for just about 1 to 1 1/2 minutes until it is warm. Add in the sugar and salt, then stir the mixture. Allow it to sit until it is warm, but not too hot (if you have a thermometer, it should measure about 105-110 degrees in order to proof active dry yeast). Add 1 package of yeast right to this milk. Allow the yeast to proof for about 5 minutes. It should get nice and frothy.
- Gradually add in the flour,1 cup at a time. Add in the last 1/2 a cup and start to knead the dough with your hands until the last 1/2 cup of flour is incorporated in. Turn the dough out onto a floured surface and continue to knead the bread for about 7 minutes until it is smooth and elastic. Add a bit more flour as you need to during kneading. The dough should still feel sticky, but it will not stick to your hands. During needing, I added less than 1/4 cup of additional flour. If you add too much flour, your bread will be dry.
- Place this dough in a greased bowl and cover it. Allow the dough to rise in a warm place until it has doubled, about 1 hour.

- Combine the water, yeast and sugar in the bowl of an electric mixer fitted with either the paddle or dough hook. Stir with a spoon and let sit for 5 minutes.
- Turn the mixer to low and slowly add half the flour and salt. Mix until combined, approximately 2 minutes.
- Increase speed to medium and add softened butter one tablespoon at a time. Do not rush this step. This can take several minutes until all the butter is incorporated. The mixture will be very sticky. Add the remaining flour. Continue to mix for another 3 minutes until dough is shiny and smooth and starts to ‘slap’ around the mixer.

- Roll Amish Dough into a 10- x 12-inch rectangle on a floured work surface. Place rectangle on a piece of parchment paper.
- Stir together cream cheese, sugar, and zest in a bowl until smooth. Spread the cream cheese mixture down the center of the dough lenthwise, not more than 1 1/2 inches wide. Top the cream cheese filling with raspberry jam.
- Use a pastry wheel to cut 1/2-inch-thick strips of dough down each side of filling. Try to get an even amount on both sides, but it's okay if it doesn't happen. Lightly pull and twist the top 2 strips of dough, then cross them over the top of the filling. Do not pull the dough too thin or it may break as it rises and bakes. Continue that same routine of twisting the pieces and crossing them over each other on top of the filling, until you are at the bottom. If you find an odd piece of the dough, that doesn't have a mate, just twist it and place it over the filling. Tuck loose ends under the loaf, so they are secure and won't pop out when baking.
- Place the braid and parchment onto a baking sheet, cover loosely with plastic and allow to rest for about 1 1/2 hours. Preheat the oven to 350°F.
