2 cups grape tomatoes, halved
1 cup green seedless grape, halved
1/3 cup thinly sliced fresh basil leaf
2 tablespoons white balsamic vinegar
2 tablespoons chopped shallots
2 teaspoons capers (or 2 teaspoons chopped green olives)
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 teaspoons extra virgin olive oil
1 (4 ounce) package crumbled reduced-fat feta cheese

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain. Combine cooked pasta, tomatoes, grapes, and basil in a large bowl.
  • While pasta cooks, combine vinegar and next 6 ingredients (through pepper) in a small bowl, stirring with a whisk. Gradually add oil to vinegar mixture, stirring constantly with a whisk. Drizzle vinaigrette over pasta mixture; toss well to coat. Add cheese; toss to combine.
  • (Pan-grilled asparagus: Combine 1 teaspoon extra-virgin olive oil, 1/4 teaspoon salt, 1/8 teaspoon freshly ground black pepper, and 1 pound trimmed asparagus. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add asparagus to pan; cook 5 minutes or until tender, turning once.).

Dash dried basil
Dash crushed red pepper flakes
3 tablespoons 2% milk
2 tablespoons chicken broth
1 tablespoon water
2 tablespoons shredded Parmesan cheese
1 tablespoon sour cream

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir until slightly thickened, about 2 minutes., Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce.

1 envelope Italian salad dressing mix

Steps:

  • Preheat oven to 400°. Cook pasta according to package directions; drain. In a large bowl, combine spaghetti sauce and salad dressing mix. Add pasta; toss to coat. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, 15-20 minutes or until heated through.

This is like homemade macaroni and cheese but with the fun bow tie pasta and hearty ham. While this makes perfect use of leftover ham, there usually aren't any leftovers when I serve this! My family gobbles it right up.

8 ounces farfalle (bow tie) pasta
¼ cup butter
1 clove garlic, minced
¼ cup all-purpose flour
½ teaspoon salt
⅛ teaspoon ground black pepper
2 cups milk
½ teaspoon prepared mustard
2 ½ cups shredded Colby cheese
4 ounces cooked ham, julienned
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan over medium heat, melt butter. Saute garlic 30 seconds. Whisk in flour, salt and pepper. Cook and stir until smooth. Pour in milk, a little at a time, stirring constantly. Bring to a boil for 1 minute. Stir in mustard and Colby. Continue to cook, stirring occasionally, until cheese is melted. Remove from heat and stir in pasta and ham.
  • Pour into a 2 quart baking dish. Sprinkle with Parmesan.
  • Bake 20 to 25 minutes, until bubbly and golden.
