CREAMY ASPARAGUS & SALMON PASTA
Leftover salmon gets a recipe remake with bowtie pasta, fresh asparagus, and dill in this super simple Parmesan cream sauce that makes meal prep a breeze.

Steps:
- Bring a large pot of water to boil and cook the bow tie pasta according to package directions until al denté.
- When noodles are done cooking, use a slotted spoon to transfer the pasta to a colander, reserving the pasta cooking water in the pot. Reheat the pot of water over medium heat and add the chopped asparagus spears, cooking until they turn bright green, about 1-2 minutes, then transfer to the same colander as the pasta. You want the asparagus to still have a snap to but not taste raw.
- While the pasta and asparagus are cooking, pour the cream into a 12-inch skillet and bring to a boil, then reduce to simmer and cook until reduced by half and the cream easily coats the back of a spoon.
- Add the lemon zest, Parmesan cheese, fresh dill and cooked salmon to the cream and stir until the Parmesan is melted into the cream and the salmon is warmed through. Season with kosher salt and freshly ground pepper.
- Add the cooked bow tie pasta to the skillet and toss to coat. Add more salt and pepper if desired, and top with more Parmesan cheese and dill if desired. Serve immediately.

- In a large pot of boiling salted water, cook pasta until al dente. Drain.
- Meanwhile, in a large skillet, combine cream and wine. Bring to a boil, add peas, and return to a boil.
- Reduce heat to medium and cook uncovered until sauce is slightly reduce and peas are tender, 2-3 minutes.
- Add scallions and dill to sauce and whisk in mustard. Add salmon and cook until fish is opaque, about 1 minute.
- Season with salt and pepper.
- Spoon sauce over bow ties and serve.

PAN SEARED SALMON WITH CREAMY PEAS
Steps:
- Pat salmon fillets dry with paper towels. If you're using frozen salmon, allow to thaw in the fridge overnight.
- Drizzle with a few teaspoons of olive oil and season with salt.
- Place a large skillet or frying pan over medium-high heat and allow to preheat for a minute or two.
- Place the salmon into the pan, skin-side down, and allow to sear for 2-3 minutes until the skin is crisp and golden.
- Carefully flip over and allow to sear for another 2-3 minutes or until cooked to your preference.
- The salmon is cooked when the flesh easily flakes apart. Remove the salmon from the pan and set aside.
- In the same pan, add another tablespoon of oil then add the finely chopped shallot and garlic.
- Sauté for a minute or two then add the peas and dill. Pour in the cream and add the sour cream.
- Season with salt and pepper then bring to a simmer.
- Cook for 5 minutes or until the peas are cooked. Add a squeeze of lemon juice and stir into the sauce.
- Place the salmon back into the pan and allow to reheat.
- Serve the salmon and peas with lemon wedges.

BOW TIE PASTA WITH SMOKED SALMON LEMON SAUCE
Steps:
- HEAT oil in a skillet over low heat; add garlic and onion. Cook until soft. Set aside.
- COOK pasta according to package directions; drain well. Put pasta back in the pot it was cooked in. Add garlic and onion mixture; mix well. Add lemon juice, green onions, parsley and salmon; mix well again.
- SEASON with salt and pepper to taste. Garnish with Italian parsley and lemon slices, if desired.

- Cook onion in oil in a 3-quart heavy saucepan over moderate heat, stirring occasionally, until softened (but not browned), about 6 minutes. Add broth, cream, vodka, and salt and boil over moderately high heat, stirring occasionally, until sauce is reduced to 2 cups, 40 to 50 minutes. Remove from heat and stir in dill, lemon zest and juice, and pepper. Reserve 1/2 cup sauce, then add salmon to saucepan and cook over moderately low heat until fish is just heated through, 2 to 3 minutes.
- While fish is heating, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1/2 cup pasta-cooking water, then drain pasta in a colander. Return pasta to pot, then toss with reserved sauce and cooking water. Serve pasta immediately with fish and sauce spooned over the top.

- In a saucepan cook shallot in butter over moderate heat, stirring, until softened. Add lemon juice and wine or vermouth and boil liquid until reduced to about 2 tablespoons. - If your salmon is not cooked, place it in a saucepan and almost cover with cold water. Bring to a boil, then cover tightly and remove from the heat. Let it poach for 10 minutes. Drain and remove the skin, then gently pull the fish into large flakes with clean hands. Set aside.
- Cook the pasta to just al dente. I usually cook it a couple of minutes LESS than the package tells me to, this way the pasta retains some bite. Drain, but reserve a cup of the water.
- While the pasta is cooking, heat the cream in a large saute pan. Add the frozen peas, the flaked salmon, the lemon juice, zest, and the salt and pepper to taste and heat everything through. Add the cooked pasta and a good sprinkle of Parmesan cheese. Mix everything well and make sure the sauce is good and hot. Take the time to give it a taste, and adjust the salt and pepper, and maybe add more lemon or cheese if it needs it. Note: use a bit of the reserved pasta water if the sauce seems too thick.
