Steps:
- Pre-cook the sausage (Pan-fry,bake,etc.) cut into circles or semi-circles.
- Chop garlic; put into a large measuring cup.
- Chop basil and add to garlic.
- Add a little salt and pepper before covering the garlic and basil with olive oil.
- Put measuring cup in refrigertor.
- Boil pasta, rinse and drain.
- Toss with sausage and oil mixture.
- Salt and pepper to taste.
- If pasta is too dry, add more olive oil.
- Stir in Parmesan Cheese and enjoy.
BOW TIES WITH SAUSAGE, TOMATOES AND CREAM
A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
- Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

- Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add sausage and onion; cook, breaking up sausage as it cooks, until sausage is lightly browned, about 5 minutes.
- Add garlic, escarole and broth to skillet; cook, stirring often, until escarole is tender, about 5 minutes. Stir in tomatoes and red pepper flakes; cook until heated through, about 1 minute.
- Spoon sauce over pasta; toss to coat. Sprinkle with cheese; sprinkle with red pepper flakes (if desired). Yields about 375 ml (1 1/2 cups) pasta-vegetable mixture and 10 ml (2 teaspoons) cheese per serving.
