- Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir until slightly thickened, about 2 minutes., Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Saute onion, garlic, zucchini, yellow squash, mushrooms, bell pepper, and 1/2 the chopped tomatoes until tender. Season with basil, oregano, salt and pepper. Add pasta and 1/4 cup olive oil. Mix well, and heat through. Sprinkle top with Parmesan and remaining chopped tomatoes.

- Mix Brie cheese, plum tomatoes, basil, 1/2 cup olive oil, garlic, 1/2 teaspoon salt, and pepper in a bowl; cover bowl with plastic wrap and marinate for 2 hours.
- Bring a large pot of water to a boil; add 1 tablespoon olive oil and 2 teaspoons salt. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain. Add pasta to cheese-tomato mixture; toss. Sprinkle pasta with Parmesan cheese.

PASTA AND MEATBALLS
This is my version of pasta and meatballs. It has so much flavor and is more fun than what people are used to. Use a fattier minced meat so that your meatballs are not dry. If you want to save time, don't make meatballs! Make this pasta and meat sauce. To do so, just skip the step of forming the meatballs. Add the olive oil to the pan, sear the ground meat, add the rest of the ingredients and follow the rest of the directions from when you would have added the meatballs back into the pot. And done

- Fill a large pot with water and add 3 tablespoons of salt. Place on high heat and bring to a boil. Add ½ bag of pasta and cook 13 minutes. Strain and save ¾ cups of the pasta water. Drizzle the pasta with olive oil and a sprinkle of salt and set aside.
- In a large bowl, add the ground meat, spices and eggs. Mix well and create small meatballs using the palms of your hands.
- Prepare a large nonstick skillet on high heat. Add 2 tablespoons of olive oil and heat. Add the meatballs in batches and sear for three minutes per side. Remove from pan and set aside.
- Add 2 more tablespoons of olive oil to the pan as well as the onions, garlic, chili peppers, spinach, tomatoes, basil and olives. Add 3/4 cups of pasta water. Cover and cook for ten minutes on medium heat, stirring often.
- Add the meatballs back in and gently cover with tomato mixture. Cover and cook 5 more minutes. Add to pasta and add 1 teaspoon of salt and serve.
BOWTIE PASTA AND BRIE CHEESE MEDLEY
This would be a perfect dish to take to a picnic or any outdoor function. The brie adds a wonderfully nutty flavor that the Crew and I couldn't get enough of.

- 1. Cook pasta per package directions. In a large skillet, warm olive oil on low heat. Add diced tomatoes and basil.
- 2. Allow to warm. Add brie in chunks.
- 3. Do not melt totally. Add garlic, almonds, salt and pepper.
