A spruced up version of a bowl of oatmeal that tastes more like an oatmeal cookie! I make mine in the microwave for a quick and easy breakfast.

- Beat egg in a microwave-safe bowl; add 1 cup plus 3 tablespoons milk, oats, raisins, brown sugar, vanilla extract, butter, cinnamon, and salt and mix well.
- Microwave on high for 1 minute; stir and microwave for 1 minute more. Stir oatmeal and microwave until cooked, about 1 minute more.

- In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, salt and cinnamon. Add to creamed mixture, stirring just until combined. Stir in the oats, raisins and pecans if desired., Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a greased glass bottom. , Bake at 350° until golden brown, 10-11 minutes. Do not overbake. Remove to a wire rack to cool.

- Preheat oven to 375 degrees F (190 degrees C).
- In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

- 1. In a small bowl, add the raisins and cover with boiling water. Let stand 5 minutes. Once plumped, drain the raisins and set aside to cool completely.
- 2. Preheat the oven to 350 degrees F, and arrange racks in the lower and upper thirds.
- 3. Whisk together the flour, cinnamon, baking powder, baking soda and salt in a medium bowl.

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

- Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Everyone needs a good Oatmeal Raisin cookie recipe and this is my version. Soft, chewy, packed with oats, juicy raisins and made with three types of flour, these cookies stay perfectly soft for days!

Steps:
- No need to preheat oven yet, the dough needs to chill!
- Place the flours, oats, raisins, salt, baking soda, baking powder and cinnamon into a medium sized bowl and stir to combine, make sure the raisins are coated in flour. Leave to one side.
- Place the butter and sugars into a large bowl, or the bowl of your stand mixer, and beat until light and fluffy - about 2 mins on med-high speed.
- Add the eggs and vanilla extract, scraping sides as necessary, and mix on medium speed until well combined and smooth.
- Tip in the flour mix and mix on low until a dough forms.
- Tip the dough into the bowl you measured the flour in and cover with cling film. Place in the fridge for 2 hours.
- Once chilled, preheat oven to 350F and line 2-3 baking trays and, using 1.5tbsp cookie scoop, place dough balls 2 inches apart. Flatten them ever so slightly so they don't roll away!
- Place in the oven for 10-12 minutes, until risen and slightly puffy. They should be slightly golden around the edges and soft in the middle.
- Leave to cool on the trays completely.
- Once cool, cookies will keep in an airtight container, at room temperature, for a week.
