SALMON WITH BOW TIE PASTA LEMON AND ONION

Salmon With Bow Tie Pasta Lemon and Onion image

I saw Emeril make this recipe on the Food Network a while back. So I quickly jotted down the ingredients as he cooked. I use this recipe as a quick, easy and nice dinner, on nights I do not have a lot of time. It looks like you make a lot of effort and it has eye appeal. The salmon turns out so moist and flavorful. The results are wonderful and seems to always please everyone. I use Emeril's recipe for his creole seasonings.

BOW-TIE PASTA WITH SMOKED SALMON (FARFALLE AL SALMONE AFFUNICATO

Bow-Tie Pasta With Smoked Salmon (Farfalle Al Salmone Affunicato image

Fabulous, quick and tasty pasta dish. I make this often and my husband inhales this (it is a sight to behold, let me tell you). Serve with a big loaf of garlic bread and your guests will be in heaven. It serves 4 people (well, normal people- my husband can eat more than half of this himself) but you can easily double for a larger crowd.

Categories     < 30 Mins

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb bow tie pasta (farfalle)
3 tablespoons butter
3 tablespoons purple onions, diced
2 teaspoons garlic, minced (or more)
8 ounces smoked salmon, flaked into chunks
4 -6 ounces vodka (start with 4 the first time and adjust up if you like more next time)
3 cups heavy cream
3/4 cup tomato sauce
1 teaspoon dried basil
salt and pepper

Steps:

  • Boil water and cook pasta according to package directions. DO NOT ever add oil to the water! It will make the sauce slide off the pasta later.
  • In a medium saucepan, melt butter and add onion and garlic. Cook over medium heat until onion starts to sweat and soften. Add salmon and cook until it starts to cook a little, about 2-3 minutes. Add vodka and flame off alcohol.
  • Add the cream, tomato sauce, basil, salt and pepper. Bring sauce to a boil and simmer, reducing until it is thick, about 8 minutes or so.
  • Serve over pasta and enjoy! Pass the grated cheese on the side.

  • Prepare pasta according to directions. Drain and set aside. You can use the pasta pot that has been lightly sprayed with oil to keep the pasta warm.
  • Preheat broiler on high. Rinse the salmon fillet and pat dry with a paper towel. Dot with butter, sprinkle with dill and chopped onion. Place on baking pan lined with aluminum foil and lightly sprayed with oil. Broil for 5-7 minutes, depending on thickness, until salmon is lightly browned and crisped on top and flakes with a fork. Do not overcook – it’s better to be underdone – the fish continues to cook after its removed from the oven, plus it will be cooked again when mixed with the pasta. Allow the fish to cool and use a fork to flake off bite size pieces.
  • Meanwhile, in a small saucepan over med-high heat, mix the pesto and milk, bring to a gentle boil, whisk in the cream cheese or neufchatel to thicken. Feel free to increase these quantities if you prefer lots of sauce. Microwave the frozen peas for 2½ minutes, drain. Combine all the ingredients with the pasta in the large pot. Mix well to coat with sauce. I topped with caramelized onions (half an onion, sliced onions and sautéed in a little butter until browned) but this is optional.
