BOW-TIE SKILLET ALFREDO

12 ounces bow-tie pasta (farfalle)
2 boneless, skinless chicken breasts
Salt and freshly ground black pepper
1 tablespoon butter
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup low-sodium chicken broth, plus more if needed for thinning
1/2 cup half-and-half
1/4 cup heavy cream
1 cup good-quality grated Parmesan
1 cup halved grape tomatoes
4 ounces baby spinach
2 tablespoons fresh parsley, minced

Steps:

  • Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
  • Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
  • Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
  • When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!

2 cups all-purpose flour or 1 cup all-purpose flour and 1 cup durum flour, plus more for dusting
2 large eggs
2 large egg yolks

Steps:

  • Put the flour into a food processor and put the eggs and yolks on top. Pulse until mixed, then slowly add 2 to 4 tablespoons water until the dough thickens. Remove and form into a ball. Wrap in plastic and let rest at room temperature for 1 hour.
  • Roll out the dough as thin as possible on a well-floured surface. Cut into 2 1/2-inch squares. Form into bow ties by gently folding the squares and pinching them in the middle. Let the noodles dry on a floured board or sheet pan for 3 hours, then keep in the refrigerator, between layers of waxed paper in sealable plastic bags, until ready to use, up to 3 days. (Or store in freezer for up to 3 months.)
  • Bring a pot of salted water to a boil. Cook the noodles until tender, about 3 minutes. Drain and serve with kasha varnishkes (see recipe).

1 cup uncooked bow tie pasta
1-1/2 teaspoons butter
2-1/4 teaspoons olive oil
1-1/2 teaspoons all-purpose flour
1/2 teaspoon minced garlic
Dash salt
Dash dried basil
Dash crushed red pepper flakes
3 tablespoons 2% milk
2 tablespoons chicken broth
1 tablespoon water
2 tablespoons shredded Parmesan cheese
1 tablespoon sour cream

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir until slightly thickened, about 2 minutes., Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce.

1 pound bow tie pasta
1 tablespoon olive oil
2 cloves garlic (minced)
15 oz petite diced tomatoes
1/2 teaspoon sugar
salt & pepper (to taste)
3/4 cup heavy cream
2/3 cup parmesan cheese (hand grated )
.5 oz fresh basil leaves (chopped)

Steps:

  • Bring large pot of salted water to boil. Cook bowtie pasta until al dente and drain. Set aside.
  • While pasta is cooking heat olive oil over medium heat. Cook garlic for 30 seconds to 1 minute until fragrant.
  • Pour in can of diced tomatoes with sugar, salt and pepper. Simmer gently for 2 minutes.
  • Pour in heavy cream and reduce heat to low.
  • Sprinkle in parmesan cheese and stir to melt. Taste and adjust seasonings. It may need more sugar and/or salt, depending how acidic your tomatoes were.
  • Add hot pasta and stir to coat in sauce. Add chopped basil and stir.
  • Serve immediately.

8 oz Bow Tie Pasta | Farfalle pasta
1 cup mushrooms (chopped | I used baby Portabella's any type will work)
2 tablespoons butter or olive oil | either works great!
1/4 cup sundried tomatoes | in oil or dry (julienne cut)
1 3/4 cups chicken broth or water
1/2 cup heavy cream | sub with half and half (not fat free)
1/4 cup Prosecco | dry sparkling wine (replace with dry white wine or additional broth.)
1 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/3-1/2 cup Parmesan cheese (grated or shredded)

Steps:

  • Turn Instant Pot (IP) to the "Saute" mode and allow it to heat until it reads "HOT"!
  • Add butter or olive oil to IP and allow to melt, then toss in chopped mushrooms and saute until soft, a few minutes. Turn off IP.
  • Pour in broth (or water), scraping the bottom of the pan to release any bits, this is called deglazing the pan.
  • Add garlic, pepper, onion powder, heavy cream and Prosecco, give it all a quick stir.
  • Pour in bow tie pasta, pressing down lightly with wooden spoon until evenly distributed and most of it is under liquid.
  • Close IP lid, lock and secure (close vent) and set to Manual/Pressure Cook for 4 minutes. It takes about 5 minutes to come to pressure, allow for a 4-5 minute natural release (longer if at altitude), then release the rest of the steam, carefully.
  • Stir in sundried tomatoes and Parmesan cheese, the sauce will thicken as it cools. If desired, sprinkle with some chopped Italian parsley or fresh basil.
  • I do not recommend freezing a cream based recipe like this, but this does store well in the fridge up to 7 days. See below for reheating instructions.
  • This recipe may be doubled, if making in the instant pot, if too watery when you release the pressure, simply turn IP to simmer and stir until desired thickness.

8 ounces bow tie pasta, farfalle
1 tablespoon oil
1 small onion, chopped
8 ounces lean ground beef or 8 ounces turkey
1 (14 ounce) jar spaghetti sauce, your choice
1 cup ricotta cheese or 1 cup low fat cottage cheese
1 egg
2 tablespoons grated parmesan cheese
1 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 425.
  • Grease 8x8 square baking dish.
  • In large pot boil 4 qts water and partially cook pasta for half of the directed time.
  • In large skillet heat oil over medium heat.
  • Add onion and saute 1 minute.
  • Stir in beef or turkey and cook until lightly browned about 3 minutes.
  • Add spaghetti sauce and bring to a boil.
  • Reduce heat to low and partially cover the skillet.
  • Simmer for 5 minutes.
  • In small bowl mix ricotta or cottage cheese with egg and Parmesan.
  • Drain the pasta throughly.
  • Layer half the pasta in the pan.
  • Spoon cheese mixture over the pasta.
  • Spoon half the meat mixture over the cheese.
  • Sprinkle with half the mozzarella.
  • Make another layer with the remaining pasta, then the meat then the mozzarela.
  • Cover pan with foil, spraying the inside facing the cheese with pam.
  • Bake for 15 minutes.
  • Uncover and bake for another 8-10 minutes or until heated through.

1 can (28 ounces) whole peeled tomatoes, in puree
1/4 teaspoon dried oregano
1/8 teaspoon sugar
Coarse salt
2 precooked chicken sausages, about 3 ounces each, cut crosswise into 1/4-inch-thick rounds
8 ounces mozzarella cheese, cut into small cubes (1 3/4 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Cook pasta according to package instructions. Drain; set aside.
  • Meanwhile, in a large saucepan, heat oil over medium. Add garlic; cook until fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to a boil, reduce to a simmer; cook, stirring and breaking up tomatoes until slightly thickened, 5 to 8 minutes. Season with salt.
