BLISTERED GRAPE AND GOAT CHEESE BRUSCHETTA



Blistered Grape and Goat Cheese Bruschetta image

1/2 small sourdough loaf, cut into six 1/2-inch-thick slices
1/4 cup olive oil, plus more if needed
1 clove garlic, cut in half
1 1/2 cups red seedless grapes, cut in half lengthwise
1/2 cup green seedless grapes, cut in half lengthwise
6 fresh sage leaves
3/4 cup soft chevre, at room temperature
Sea salt and freshly ground black pepper
1 lemon

Steps:

  • Brush both sides of all bread slices with 1 tablespoon of the oil. Toast on a grill pan over medium-high heat for 1 minute. Turn each slice 90 degrees on the same side and cook for another minute so your bread chars with beautiful crisscross grill marks. Flip over and repeat. Rub each slice of hot bread with the cut garlic clove as it comes off the grill.
  • Meanwhile, add the remaining 3 tablespoons oil to a medium skillet over medium heat. Add the red grapes and saute until warm and softened, about 3 minutes. Add the green grapes and toss just to warm. Remove to a bowl.
  • Add the sage leaves to the hot oil and fry until crisp, 15 to 20 seconds. Remove to a paper towel-lined plate.
  • Spread 2 tablespoons of the chevre over one side of each piece of toast, covering completely. Top with a mound of warm grapes on top. Sprinkle a bit of sea salt and a few grinds of pepper over the grapes. Top with a sage leaf. Zest the lemon generously over the top of each slice.

1 baguette
1/3 cup olive oil
1 teaspoon dried basil
3 medium tomatoes, chopped into 1/2 inch cubes
2 tablespoons basil chiffonade
1/4 teaspoon black pepper, fresh ground
1 teaspoon sea salt
3 garlic cloves
3 tablespoons balsamic vinaigrette
1 (5 ounce) package black pepper boursin cheese

Steps:

  • Cut Tomatoes into 1/2 inch cubes and put into medium size bowl.
  • Roll up fresh basil leaves together, slice into very thin strips and add these to the bowl. Should be 2 Tbsp, more or less, of shredded basil.
  • Place garlic cloves on cutting board. Top with the sea salt. Use side of knife to smear the salt into the garlic. Smear the garlic until it is well pulverized, then use the blade to chop very fine. Scrape up with the back of the knife, and add to the bowl.
  • Grind in ~1/4 tsp black pepper.
  • Add 1/4 cup of Basalmic Vinagrette dressing. Newmans or Kens brand work well for this, or make your own.
  • Mix everything together with a spoon, cover and put the mixture in the fridge for later.
  • Preheat oven to 350 degrees farenheit.
  • Slice bread on the bias, into 3/4 inch slices. Pour extra virgin olive oil onto a dipping plate. Dip both sides of each slice in olive oil and place on baking sheet. sprinkle top of each slice lightly with dried basil, and fresh ground pepper.
  • Bake bread slices for ~10 minutes, or until golden brown on the bottom. Remove from oven and let cool slightly.
  • Spread each warm bread slice with Black pepper Boursin Cheese. and arrange around on the serving platter. Top each slice with some of the tomato mixture.
  • Serve.

2 pints cherry tomatoes, halved
3 tablespoons olive oil, divided
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 cup balsamic vinegar
6 slices sourdough bread
2 garlic cloves, peeled
1 1/2 cups ricotta cheese
1 tablespoon fresh thyme leave

Steps:

  • Heat the oven to 400 degrees.
  • In a medium bowl, combine the tomatoes, 2 tablespoons of the olive oil, salt and pepper. Toss to coat evenly.
  • Transfer the tomatoes, along with any oil in the bowl, to a rimmed baking sheet. Roast for 35 minutes, or until the tomatoes are lightly browned and wrinkled.
  • While the tomatoes roast, in a small saucepan over medium heat, bring the balsamic vinegar to a simmer and let reduce by half. Set aside.
  • During the final 10 minutes of roasting, place the bread on one of the oven racks and toast until just lightly browned.
  • Remove the tomatoes and bread from the oven and let the tomatoes cool slightly. While the tomatoes cool, rub the toasted bread with the garlic.
  • Slather a generous layer of ricotta on each slice of bread, then arrange the slices on a serving platter. Top each with some of the tomatoes. Sprinkle with fresh thyme, then finish with a drizzle of the reduced balsamic vinegar and remaining olive oil.

1/4 cup(s) red grapes (seedless), sliced in half
4 tablespoon(s) diced tomato
2 tablespoon(s) diced red onion

1 tablespoon(s) diced red pepper
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/8 teaspoon(s) garlic
1 teaspoon(s) olive oil
- dash of dried parsley flakes

Steps:

  • Spread 2 tbs boursin cheese on each baguette slice. Toast in toaster oven for 3-4 minutes, until bread is crispy on sides.
  • In the meantime, mix the rest of the ingredients (except grapes and parsley) in bowl.

1 garlic clove
extra virgin olive oil
4 tablespoons boursin garlic and cream cheese with herbs
8 cherry tomatoes, halved
fresh basil leaf (to garnish)

Steps:

  • Rub the garlic clove over the toasted baguette slices then drizzle over a little olive oil.
  • Spread each slice with the Boursin cheese, then cut the slices in half. Season to taste with salt and freshly ground black pepper.
  • Place a cherry tomato onto each piece of Boursin toast then garnish with a little fresh basil.
  • Serve within an hour of preparing.
  • As an alternative to the tomatoes, top with olives, pieces of mixed peppers or artichokes in oil, drained and thinly sliced, with an extra twist of black pepper.

2 tablespoons sherry vinegar or rice vinegar
2 tablespoons olive oil

24 slices French bread baguette (cut diagonally 1/2 inch thick)
1/2 cup shaved Manchego or Romano cheese

Steps:

  • Preheat oven to 400°. Toss first five ingredients; spread in a greased 15x10x1-in. pan. Roast until grapes are lightly browned and softened, 30-35 minutes. Stir in orange zest., Preheat broiler.
