BOURBON-MARINATED STEAKS



Bourbon-Marinated Steaks image

Delicious marinated steaks you can use either flank steaks or top round steaks. Enjoy. Prep time does not include marinating time.

1/2 cup packed brown sugar
1/2 cup Bourbon
1/3 cup soy sauce
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon fresh coarse ground black pepper
1/4 teaspoon hot pepper sauce
1 cup water
2 flank steaks, well trimmed (about 1 1/2 pounds each) or 2 beef top round steak, about 1 1/2 inches thick (about 1 1/2 pounds each)

Steps:

  • Prepare marinade; In large plastic bag, Mix 1 cup water with all the ingredients except steaks.
  • Add steaks, turning to coat, seal bag, pressing out excess air.
  • Place bag in shallow glass baking dish and refrigerate at least 4 hours or over night, turning bag occasionally.
  • Remove steaks from marinade.
  • Discard marinade.
  • Put steaks on grill over medium heat and cook 15 to 20 minutes for medium-rare or until desired doneness, turning once.
  • (Or preheat broiler and place steaks on rack in broiling pan. Broil steaks at closet position to source of heat for 15 to 20 minutes for medium-rare) If using top round grill or broil for 25 to 30 minutes.

  • Gather the ingredients.
  • Combine all the ingredients-bourbon, brown sugar, oil, mustard, and Worcestershire sauce-and mix until the sugar is completely dissolved. Use it right away.
  • Marinate meat for four to 12 hours.

4 pounds apples, preferably a combination of Granny Smith and Rome, peeled, cored, and cut into eighths
1 cup sugar
2 tablespoons fresh lemon juice
3/4 teaspoon coarse salt
1/2 teaspoon ground allspice
6 tablespoons unsalted butter
1/3 cup bourbon
2 tablespoons all-purpose flour, plus more for dusting
1 pound thawed frozen all-butter puff pastry
1 large egg, beaten
Vanilla ice cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. In a large bowl, toss together apples, sugar, lemon juice, salt, and allspice. In a large straight-sided skillet, melt 3 tablespoons butter over high heat. Add half of fruit mixture and cook, stirring, 5 minutes. Reduce heat to medium-high and cook until fruit is softened, about 5 minutes more. Transfer to a bowl. Repeat with remaining 3 tablespoons butter and remaining fruit mixture, then return first batch of fruit mixture to pan. Stir in bourbon, then add flour and cook, stirring, 1 minute. Remove from heat.
  • Divide fruit mixture among six 8-ounce round baking dishes (each 5 inches). Place on a rimmed baking sheet; let cool completely.
  • On a lightly floured surface, roll out puff pastry to a 12-by-8-inch rectangle, about 1/8 inch thick. Cut out six 4-inch squares; place one over filling in each dish. Cut X-shaped vents in tops. Brush pastry with beaten egg. Bake until fillings are bubbling and crusts are golden, 25 to 30 minutes. Let cool 10 minutes, then serve with ice cream.

This is a version of the classic with a sweet Southern twist to a great rib-eye steak, which deserves special treatment.

1 cup bourbon (such as Maker's Mark®)
¼ cup soy sauce
¼ cup packed brown sugar
¼ cup Dijon mustard
¼ cup olive oil
¼ cup pineapple juice
3 tablespoons Worcestershire sauce
1 tablespoon minced garlic
¼ teaspoon ground ginger
4 (8 ounce) rib-eye steaks

Steps:

  • Whisk bourbon, soy sauce, brown sugar, Dijon, olive oil, pineapple juice, Worcestershire, garlic, and ginger together in a medium mixing bowl until thoroughly combined and mustard is well broken down in the mix.
  • Place steaks in a large resealable plastic bag. Pour marinade into the bag and squeeze out excess air. Seal the bag and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove steaks from the marinade and shake off excess. Discard the remaining marinade.
  • Place steaks on the preheated grill and cook until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium. Turn steaks once during cooking and shift twice to mark the steaks with diamond patterns.

Kentucky is famous for it's bourbon/whiskey (it is two different things) and we use it for everything from curing a cough (it is GREAT and I promise I'll post the recipe)to making someone's mood a little happier. This recipe is delicious and works well on grilled beef.

1/4 cup pineapple juice
2 tablespoons soy sauce
1 teaspoon Bourbon (I use more)
2 tablespoons brown sugar
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/2 cup oil

Steps:

  • Combine all the ingredients in a bowl. Place your meat in a zip top bag and pour into the bag. Zip up and refrigerate overnight, turning the bag every so often.
  • Heat the grill to med-high heat and grill as usual. Remove the meat and discard the marinade. Cook as usual.

After eating this style of steak in a restaurant a few times, I worked on making my own marinade. The results are tender and do not have an overbearing bourbon taste. This marinade is very different from the only other one I have seen on this site.

1 cup water
⅔ cup bourbon whiskey
½ cup soy sauce
¼ cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
4 (6 ounce) beef rib-eye steaks

Steps:

  • Whisk together the water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a bowl, and pour into a plastic zipper bag. Add the rib-eye steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the rib-eye steaks from the marinade, and shake off excess. Discard the remaining marinade. Grill the steaks on high, 1 to 2 minutes per side, to sear the meat. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side, if desired.
