½ onion, minced
4 cloves garlic, minced
¾ cup bourbon whiskey
½ teaspoon ground black pepper
½ tablespoon salt
2 cups ketchup
¼ cup tomato paste
⅓ cup cider vinegar
2 tablespoons liquid smoke flavoring
¼ cup Worcestershire sauce
½ cup packed brown sugar
⅓ teaspoon hot pepper sauce, or to taste

Steps:

  • In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
  • Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

This Bourbon Street Chicken recipe is bursting with flavor, without alcohol, prepared in a slow cooker or quickly on your stovetop, served on a bed of rice!

4 chicken breasts, boneless, skinless, cut into bite size chunks
6-8 chicken thighs, boneless, skinless, cut into bite sized chunks
3 tablespoons olive or another vegetable oil
2 tablespoons garlic, minced
1 teaspoon ginger, ground
1 teaspoon crushed red pepper flakes or 1/4-1/2 teaspoon cayenne pepper
1/4 cup apple or pineapple juice or BOURBON
1/3 cup brown sugar, packed
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup chicken broth
1/3 cup soy sauce
3 tablespoons cornstarch, if desired

Steps:

  • I use a large skillet but a good sized pot will work beautifully for this recipe. Remember whatever you use has to hold all of the chicken pieces and the liquid.
  • In a large skillet, over medium heat, place oil and wait until it shimmers or a drop of water flicked in it dances.
  • Cook your chicken pieces until browned and no longer pink inside. I usually make mine bite sized and find that the easiest to eat and serve. Exact timing will depend on the size of your chicken pieces.
  • While chicken is cooking grab a large mixing bowl and combine soy sauce, broth, cider vinegar, ketchup, brown sugar, juice, crushed red pepper flakes or cayenne, ginger and garlic. Stir until everything is dissolved together.
  • As soon as your chicken is cooked pour soy mixture into your skillet with your chicken.
  • Bring to a good boil.
  • Reduce heat and simmer for 20 minutes. You want to reduce the amount of liquid in the skillet or pot with your chicken. We use a lot and love to drizzle it all over rice or as dressing on a salad.
  • Usually, I serve the chicken pieces with a slotted spoon to control the amount of liquid that is served but more often than not I don't even need to.
  • Serve and enjoy!

After eating this style of steak in a restaurant a few times, I worked on making my own marinade. The results are tender and do not have an overbearing bourbon taste. This marinade is very different from the only other one I have seen on this site.

1 cup water
⅔ cup bourbon whiskey
½ cup soy sauce
¼ cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
4 (6 ounce) beef rib-eye steaks

Steps:

  • Whisk together the water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a bowl, and pour into a plastic zipper bag. Add the rib-eye steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the rib-eye steaks from the marinade, and shake off excess. Discard the remaining marinade. Grill the steaks on high, 1 to 2 minutes per side, to sear the meat. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side, if desired.

3 lbs chicken thighs or breast (boneless and cut into strips)
2 cloves garlic (minced)
1 inch fresh ginger (finely grated)
3 tsp bourbon seasoning
1 cup teriyaki sauce
½ cup water
1 cup soy sauce
1 cup brown sugar
¾ tsp crushed red pepper flakes
½ tsp ginger
2 cloves garlic (minced)
2 tbsp tomato ketchup
1 tbsp apple cider vinegar

Steps:

  • In a small bowl, whisk the bourbon seasoning and teriyaki sauce. Add chicken strips and cover. Seal with plastic wrap or in ziplock bags. Leave to marinate in refrigerator for at least 2 hours, or overnight.
  • In a pan over medium heat, add the marinated chicken pieces, garlic, and ginger. Cook until chicken starts to brown and is no longer pink in the middle. Remove from heat and set to one side.
  • To make the sauce, add some water to a large bowl, then vegetable oil and add soy sauce. Add the apple juice, brown sugar, crushed red pepper flakes, ginger, garlic, ketchup, and apple cider vinegar. Whisk to combine and set to one side.
  • In a fresh pan, add the sauce. Heat for 5-8 minutes.
  • Add chicken to sauce and stir. Simmer sauce to reduce for about 20 minutes, or until thick.
  • Serve on freshly cooked or steamed rice.
