Bourbon-Glazed Ham image

This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

1 (5 pound) boneless ham
⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

Bourbon, Pineapple and Orange Glazed Holiday Ham image

One of my family's favorite holiday ham recipes --perfect for Easter or New Year's celebrations. The glaze is really wonderful-- half gets brushed onto the ham and baked, the remainder gets passed at the table. Enjoy!

10 lbs bone-in ham, rind removed
whole cloves
1 cup brown sugar
1/2 cup Bourbon (or orange juice)
1 (12 ounce) jar orange marmalade (best with a slightly bitter marmalade such as Hero)
1 cup crushed pineapple
3 teaspoons prepared mustard (French's yellow mustard)
1 (14 ounce) can pineapple rings, drained
10 -12 maraschino cherries

Steps:

  • Preheat oven to 325°F.
  • Using a sharp knife, score the ham into a diamond pattern about 1/4-inch deep and 1-inch apart.
  • Stud the ham with whole cloves in the center of each diamond.
  • Place ham fat side up in a shallow roasting pan (for easy clean-up line pan with aluminum foil, or use a heavy-duty disposable aluminum pan).
  • Bake ham for 2 1/2 hours.
  • Meanwhile, stir together the brown sugar, bourbon, orange marmalade, crushed pineapple, and prepared mustard. Heat to boiling over medium-high heat, stirring until sugar has dissolved.
  • Remove ham from the oven.
  • Spoon half of the glaze/sauce over the ham.
  • Decorate ham with pineapple rings, using a few toothpicks to hold ring in place. Place a cherry in the center of each ring, and attach it with a toothpick.
  • Return ham to the oven and bake for another 20 to 30 minutes.
  • Transfer ham to a platter and allow to rest for 10 minutes before carving (be sure to remove all toothpicks).
  • Pass the remaining sauce at the table.

When you're looking for a holiday ham or family celebration ham recipe, look no further than this one! This orange pineapple ham is so juicy and moist thanks to a dry spice rub made with brown sugar and citrus and then the most delectable orange pineapple glaze! It caramelizes to sweet perfection making this ham a family favorite that pairs well with any side dish!

2 teaspoons light brown sugar, packed
1 teaspoon ground thyme
1/2 teaspoon allspice
1/2 teaspoon cinnamon
Zest from 1 orange
1/4 cup crushed pineapple with juice
5 to 6 pound bone-in previously cooked spiral ham
1 cup light brown sugar, packed
Juice from 1 orange, about 1/2 cup
3/4 cup crushed pineapple with juice
1/3 cup bourbon* or pineapple juice (See Notes)

Steps:

  • Preheat oven to 350F and set out a large roasting pan.
  • To a small bowl, add the brown sugar, thyme, allspice, cinnamon, orange zest, and stir to combine.
  • Rub this all over the ham.
  • Tightly wrap the ham in heavy duty nonstick foil and place it in the roasting pan. Bake for 30 minutes covered. While the ham bakes, make the glaze.
  • Combine all ingredients in a small saucepan on the stove. Bring to a boil, and then reduce the heat to a low and allow the mixture to simmer on low for about 15 minutes, or until glaze has reduced in volume and thickened some; set aside off the heat.
  • After the ham has been baking 30 minutes, remove it from the oven, carefully peel back the foil, evenly sprinkle the 1/4 cup crushed pineapple and juice associated, reseal the foil, return it to the oven, and bake it covered for 10 minutes. When done, the internal temp should be at 140F. Tips - Don't overbake so your ham doesn't dry out. Also remember that the internal temp will continue to rise even out of the oven, so I feel safe pulling mine out at about 135F.
  • After this second baking of 10 minutes, remove it from the oven and turn the broiler to 500F.
  • Peel back the foil, and carefully drizzle the orange pineapple glaze all over the ham.
  • Place it uncovered under the broiler for just 3 to 4 minutes. Tip - Don't leave the kitchen and keep a very watchful eye on it so it doesn't burn! You want the glaze to caramelize but it can burn easily, in just one minute, and will taste terrible so be extremely careful and vigilant!
  • Allow ham to rest for about 15 minutes before slicing and serving. Extra ham will keep airtight in the fridge for up to 5 days and in the freezer for up to 4 months.

2/3 cup bourbon or whiskey
1 cup clover honey
1/3 cup molasses
1/2 cup 100 percent fruit orange marmalade
Nonstick cooking spray
1 (5-pound) whole bone-in smoked ham, fully cooked, unsliced
1/8 cup whole cloves

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside.
  • With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where lines cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.

3/4 cup bourbon, divided
2 cups packed brown sugar
1 tablespoon ground mustard

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Brush with 2 tablespoons bourbon. Bake, uncovered, at 325° for 2 hours. , In a small bowl, combine the brown sugar, mustard, marmalade, coriander and remaining bourbon; spoon over ham. One 10-lb bone-in, fully cooked, spiral-sliced ham
1 cup brown sugar
¼ cup bourbon or other whiskey
2 Tbsp. apple cider vinegar
2 Tbsp. Dijon mustard
1 orange, zested and juiced
1 Tbsp. chopped fresh rosemary
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cinnamon
Freshly ground black pepper

Steps:

  • Remove ham from packaging and bring to room temperature for up to 2 hours before baking.
  • Preheat oven to 325ºF. Arrange a rack in the lower third of the oven and remove upper racks.
  • In a small pot over medium heat, whisk together brown sugar, bourbon, apple cider vinegar, Dijon mustard, orange zest and juice, rosemary, garlic powder, onion powder, cinnamon, and a few turns of the pepper mill. Bring to a low simmer and cook for 5-6 minutes, stirring frequently, until the sugar has dissolved. Remove from heat and set aside.
  • Place ham in a large roasting pan, face down. Brush half the glaze over the surface of the ham. Loosely cover ham with foil and bake for 1 hour and 30 minutes. During cooking, brush with remaining glaze mixture every 30 minutes. For the last 15 minutes of cooking, remove foil. Let stand up to 30 minutes before transferring to a serving platter.
