HONEY BOURBON HORSERADISH GLAZED HAM
I posted this recipe for the glaze. It will work on any size ham, but cooking times will vary depending on the size and how you like to cook your ham. It is a thick, rich glaze. I only use the water packaged with the ham when I make it.

BOURBON HONEY HAM GLAZE
This glaze is going to add so much flavor to your holiday ham. The apple juice helps to bring out the sweet, smoky flavor in the bourbon. But, the bourbon flavor isn't overpowering. Honey and brown sugar raise the sweetness factor and caramelize beautifully on the baked ham.

Steps:
- 1. Place ham on a baking pan, fat side up. Bake in a 350 degree oven for 15 minutes per pound or follow package directions.
- 2. While ham is baking, in a saucepan combine the bourbon and apple juice and bring to a boil. Cook over medium to medium-high heat until reduced to about ½ cup.
- 3. Remove from heat and add brown sugar, honey, and cayenne pepper. Stir to form a paste.
- 4. Remove the ham from the oven about 30 minutes before it is finished cooking.
- 5. Score the ham, if it is not already scored. You just want to slice through the very outer layer of the ham to help the glaze soak in.
- 6. Rub paste all over the top and sides of the ham.
- 7. Bake 20-30 minutes more or until the glaze is glossy and darkened.
- 8. Let ham sit a few minutes before slicing.

BOURBON HONEY GLAZED HAM
We love cooking with bourbon when it's combined with something sweet and savory. The glaze becomes thick as it cooks. As it cooled a bit, it becomes even thicker. Bourbon adds a little something to the glaze but does not have a harsh alcohol taste. The flavors of the orange marmalade, bourbon, and honey are perfect in this...

BAKED HAM WITH BOURBON GLAZE
This is a classic Southern recipe for Easter or Christmas. The sweetness of the honey and molasses is cut by the bourbon and orange juice, making for a perfect glaze. Once the ham is cool and chilled, be sure to remove the fat from the drippings to save and serve with the leftovers...that is one of the best parts of the recipe!

- One hour before cooking, remove the ham from its wrapper and pat dry with paper towels. Cut the rind of the ham in a 1 inch diamond pattern, cutting about 1/4 inch deep. Set the ham in the aluminum foil pan.
- Set the grill up for indirect medium-low heat, 300°F, with the heat on the sides of the grill and no heat in the middle. For my Weber Summit, I preheat the grill with all burners on high for 15 minutes, then turn off all but the outside burners (burner #1 and #6), leaving the middle of the grill with no lit burners.
- While the grill is heating: Simmer the glaze ingredients in a small saucepan over medium heat, whisking to break up the honey and mustard, until the honey melts, about 5 minutes.
- Put the pan with the ham in the center of the grill, so the lit burners are not directly below it. Close the lid and cook the ham until it reaches 135°F in its thickest part, about 3 hours for a 10 pound ham. (It should take about 18 minutes per pound of ham, but thickness matters more than weight. If you have a probe thermometer, now is the time to use it; if you don’t, check the temperature every hour.) During the last half hour of cooking, brush the ham with the reheated glaze every ten minutes.

- Combine all glaze ingredients in a small saucepan on medium heat. Bring to a gentle simmer, whisking occasionally, until sugar is melted, about 3-4 minutes. Remove from heat and set aside.
- Score the ham in a diagonal crosshatch pattern. Starting from one end close to the bottom, cut about 1/2 inch into the ham in a diagonal straight line across the ham. Repeat making lines 1″ apart on the entire ham. Rotate the ham and repeat diagonally from one side to the other.
- Place the ham in a large oven-safe dish or high rimmed metal pan. Fill with 1/2 inch of water and pour 1/4 cup of glaze over the ham. Cover ham/pan with foil, sealing the ham in entirely.

- Preheat the oven to 325°. Place the ham in a large roasting pan and add 1 cup of water. Cover the pan with foil and bake the ham for about 2 hours and 45 minutes, basting occasionally with any accumulated juices, until an instant-read thermometer inserted in the thickest part registers 120°.
- Meanwhile, in a medium saucepan, combine the sugar with 2 tablespoons of water and cook over moderately high heat, swirling the pan occasionally, until a lightly golden caramel forms, 8 to 10 minutes. Remove from the heat and quickly add the fennel seeds, coriander seeds, star anise, bay leaves, cinnamon, garlic, ginger, chile and orange zest; let sit for about 20 seconds, until fragrant. Carefully add the bourbon, soy sauce and honey. Return the glaze to a simmer and cook over moderate heat, stirring occasionally, until slightly thickened, about 10 minutes.
- Remove the foil and brush the ham with the glaze. Roast for 30 minutes longer, glazing every 10 minutes, until the top is lightly caramelized. Transfer the ham to a platter and let rest for 15 minutes. Skim the fat from the pan juices and transfer them to a bowl. Serve the ham with the pan juices.
