Dynamite Bourbon Ribs image

These are best cooked on the grill, but you can remove them from the marinade and bake them in the oven at 350 degrees. This marinade is excellent on prime rib, fish or chicken. Serve with a crispy salad and garlic cheese potatoes for a great dinner!

1 cup dark brown sugar
⅔ cup bourbon
1 cup light soy sauce
4 cloves garlic
3 pounds country style pork ribs

Steps:

  • Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Place ribs on grate, and cover. Cook for 45 minutes to 1 hour depending on thickness of your ribs. When finished, the internal temperature of the ribs should be 160 degrees F (70 degrees C) when taken with a meat thermometer.

3-4 lbs your choice of pork roast, pork stew meat or pork short ribs
2 medium yellow onions, chopped
2 apples, cored and cut in 1/2-inch cubes
2 cloves garlic
1/2 cup brown sugar
1 tbsp. ground cinnamon
1 tbsp. ground allspice
1 tsp. ground cloves
1/2 cup sherry
1/4 cup bourbon whiskey
approximately 1 cup chicken stock
Salt and pepper to taste
2 tbsp. olive oil, for searing.
Additional sherry and bourbon if necessary, for sauce

Steps:

  • Preheat oven to 350 degrees.
  • Season pork liberally with salt and pepper. Sear all sides of pork well in a heavy dutch oven or other heavy oven-safe cooking vessel. Remove and set aside.
  • Add onions to same pan and cook until translucent, approximately 3 minutes. Add garlic and cook another 1 minute. Remove pan from heat and add sherry. Return to heat and stir with a long handled spoon, making sure to scrape off any bits on the bottom of the pan. Add apples and all spices. Stir well to combine.
  • Remove from heat, stir in bourbon and return pork to pan, nestling the meat down into the veggies and apples. Pour in chicken stock until pork is covered about half way. Cover and bake for approximately 35 minutes or until meat is tender and internal temp is at least 165 degrees.
  • Remove pork from pan and cover loosely with foil. If necessary, return pan to heat and add a bit more sherry and bourbon to achieve desired consistency for topping meat.
  • Slice, top with apple mixture and enjoy!

Pork rub (your favorite brand)
3-4 Tbs Bourbon (your favorite brand)
1 Tsp dark brown sugar
1/2 cup Chicken stock
Non-stick spray
Oven safe pan
Tin foil

Steps:

  • Mix brown sugar with bourbon. Set aside for 10-15 minutes until sugar is dissolved. Set oven to 375 Cut the pork loin into slices approximately 1.5-2 inches thick (a 2 lb pork loin should yield about 4 cuts) Cover both sides of each cut of pork with a liberal amount of your favorite pork rub Spray a pan (I recommend cast iron) with non-stick spray Over medium high heat, cook each side of the pork slices for approximately 3 minutes Once each side has been cooked, spoon the sugar-bourbon mix over the pork and continue cooking for one minute Pour chicken stock into pan and cover with tinfoil Place covered pan in oven and cook until pork is cooked through (about 35-45 minutes) When pork is cooked, remove cuts from pan Over medium heat, cook the remaining liquid in pan to reduce slightly Drizzle juice over the cooked pork or transfer to a dish for dipping (in my opinion the juice is one of the best parts) Serve (I served this with herbed long-grain wild rice and oven baked buttercup squash)

1/4 cup Kentucky bourbon
1/4 cup light soy sauce
1/4 cup brown sugar (packed)
2 large cloves garlic (chopped)
1/4 cup Dijon mustard
1/2 teaspoon ginger powder (or 1 teaspoon finely minced fresh ginger)
2 teaspoons Worcestershire sauce
1/4 cup vegetable oil
1 dash hot sauce
2 pork tenderloins (about 1 1/2 to 2 pounds)

Steps:

  • In blender or food processor, combine bourbon, soy sauce, brown sugar, garlic, mustard, ginger, Worcestershire sauce, hot sauce, and oil; pulse until smooth.
  • Place tenderloin and marinade in a food storage bag; refrigerator for 4 hours or overnight.
  • Cook 4 inches from a hot charcoal fire for 15 to 25 minutes or until the pork has reached 165° internally and is no longer pink in the center.
  • Baste occasionally while cooking. Slice in 1/2-inch thick slices to serve.

Cider-Braised Pork Loin With Sauteed Apples image

Wonderful comfort food. The kind of dinner I'd like to have on a lazy Sunday. Scalloped or Duchesse potatoes are especially good alongside.

2 teaspoons salt
1 teaspoon pepper
1 teaspoon crumbled dried sage
1 teaspoon crumbled dried thyme
3 lbs boneless pork loin, rolled and tied
2 tablespoons olive oil
2 cups chopped onions
4 garlic cloves, minced
1/2 cup apple cider
sauteed apple (this is in my recipe collection)

Steps:

  • Combine the salt, pepper, sage and thyme and rub into pork.
  • Wrap pork in plastic wrap and chill 2 hours or overnight.
  • Pat pork dry with paper towels.
  • In a large, ovenproof casserole heat oil over moderate-high heat until hot but not smoking and brown the pork.
  • Transfer to a plate, pour off all but 2 tblsps fat, and cook onion and garlic over moderate heat, stirring, for 1 minute.
  • Return pork to casserole, add cider and bring to boil.
  • Braise pork, covered, in a preheated 350F (165C) oven for 50 minutes to 1 hour.
  • Transfer to a heated platter, discard string and let stand 10 minutes.
  • Spoon off fat from pan juices and puree pan juices with a blender (or immersion blender).
  • Season to taste.
  • Serve in a sauceboat.
  • Arrange sautéed apples around sliced pork.

Heat over low heat for a few minutes, stirring often, until the brown sugar is dissolved – or do this in the microwave, working in 20-second bursts. Stir in the Worcestershire sauce, lemon juice, thyme and pepper. Allow to cool completely.
  • Place the marinade in a large sturdy zipper top bag or a container big enough to hold the meat. Add the marinade and turn the pork to coat well. Cover, and place in the fridge to marinate overnight, or at least 6 hours.
  • Preheat the oven to 425ºF. Cover a rimmed baking sheet or a baking pan with foil, wrapping it well to enclose the whole pan (see recipe intro). Place the pork on the baking sheet or pan, and roast for about 15 to 30 minutes (it really depends on the thickness of the pork loin), until a meat thermometer registers 145ºF. If you have the inclination, baste it after 10 minutes with any extra marinade. Let the pork sit on a cutting board for 10 minutes before slicing it.
