GRILLED BOUDIN WITH ONIONS, PEPPERS, AND MUSHROOMS
Once you grill boudin, you'll never boil it again. Grilling gives it a slightly smoky flavor and really brings out the flavor inside. The seasoned veggies are cooked alongside it and done at the exact same time.

Steps:
- Combine bell peppers, onion, mushrooms, olive oil, and seafood seasoning in a large bowl. Stir until evenly combined. Set aside while you preheat the grill.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Place boudin directly on the grate. Place vegetable mixture in a grill basket. Grill for 5 minutes. Turn boudin over, stir the vegetables, and cook until an instant-read thermometer inserted into the sausage reads 160 degrees F (71 degrees C), about 5 minutes more.
- Place boudin in hot dog buns, top with mustard, and serve with vegetables.

- Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
- Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
- Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and cook until lightly browned, 3 to 4 minutes. Flip the sandwich, and continue cooking until browned and the cheese is melted, 3 to 4 minutes more.
- Great combos:
- 1. Pepper jack and sourdough, brushed with chili oil
- 2. American and white bread, brushed with butter
- 3. Swiss and rye, brushed with mayo
- 4. Cheddar and brioche, brushed with butter
BOUDIN GRILLED CHEESE SANDWICH
I know not all people can get Boudin, but for those that can this sandwich is crunchy , cheesy and Boudin Good! !Not much to it , you just need Boudin which we get here in East Texas next to Louisiana border at the grocery stores. I myself use DJ's brand mild, any Boudin will do though. All you Boudin lovers know your favorite kind. . If you can smoke it first its even better , yet it as tasty just out of the skin. Which is the recipe that I am offering. So easy too! If you like Boudin balls you will love this.I came up with the recipe and hope you like it! It is my most requested sandwich.

Steps:
- Take one link of boudin sausage and peel the skin off. Cut it into about 1 inch pieces and put in bowl or other vessel.
- Microwave for about 1 1/2 minute.
- Heat skillet on low medium, I use non stick skillet.
- Butter one side of piece of bread lay in heated skillet buttered side down, top it with boudin link you heated in microwave.Take the inch pieces one at a time and place on the piece of bread in skillet ,press Boudin around with a fork until it fits on the piece of bread. Be careful to keep the boudin in the center working outwards not falling off the edge.
- Top boudin with a slice of kraft cheese.If you really like it cheesy use 2 but one is just right for me.
- Then add the other piece of bread that you have buttered, put the buttered side top up, just like making a grilled cheese sandwich.
- Keep flipping with spatula until desired brown color is reached. I smash it down a little with patula each time I flip.
- Cut in half and serve.
