PORK BUTT ROAST/BOSTON BUTT ROAST WITH MUSHROOM GRAVY
How to cook a pork butt roast, also known as a Boston butt roast, in your crock pot with a delicious mushroom gravy to enjoy as well.

Steps:
- Pat the pork butt roast dry with paper towels. Place in the bottom of your slow cooker.
- Take thyme, sage, minced garlic, salt and pepper and sprinkle onto the roast in an even layer.
- Arrange the mushrooms and onions around the roast in an even layer. Pour the chicken broth into the bottom of the slow cooker.
- Place the lid on top and cook the roast on low for 7-8 hours.
- To make the mushroom gravy, transfer the roast to a serving platter and cover with foil to keep hot. Remove the bay leaves and if wanted, the large pieces of onion ( I leave them in though.)
- Whisk together 2 tbsp of cornstarch with 1/3 cup of water. Slowly whisk into the mushroom mixture in the bottom of the crock pot until it's smooth and creamy. You may not have to use all of the mixture, just add enough to bring it to the desired consistency.
- Slice the roast and serve with the gravy on top.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large frying pan over medium high heat. Sprinkle pork on all sides with salt, pepper and garlic powder; rub into meat. Sear the meat on all sides until lightly brown. Transfer to a roasting pan.
- Place onion slices over meat and in the roasting pan. Fill the pan 2/3 full of water. Cover and place in preheated oven for 3 hours. Add the potatoes and carrots; cover and cook 45 minutes. Add the mushrooms and cook another 15 minutes. Remove and let stand at least 10 minutes before serving.

BOSTON BUTT PORK ROAST
This Boston butt roast might take a few hours but it's oh so worth it! Pork roasted with potatoes, carrots, and apples is guaranteed to hit the spot.

- Place a roasting pan in the oven and preheat the oven to 350 degrees F. Season one side of the pork roast with salt and pepper. Place, seasoned side down, in the preheated roasting pan. Place in the oven and bake for 20 minutes. Season the top of the roast with salt and pepper and turn roast over. Lower the oven temperature to 325 degrees F. Return the roast to the oven and cook for 2 1/2 hours at 325 degrees F. Turn roast over again and add the potatoes to the pan. Top the potatoes with the carrots and apple. Add enough hot water to fill the bottom of the roasting pan to about 1-inch. Cover the pan with foil and return to the oven. Bake for 1 hour (or longer) until the vegetables are done and the meat falls apart easily. Add more water to the pan as needed.

A pork roast and a few seasonings, slow cooked and then served over mashed potatoes and gravy made from the drippings. What's not to like! Comfort food at best!! I didn't have dry onion soup mix so I made my own. Most cooks will have the needed ingredients in their pantry....

- 1. Place roast in crock pot.
- 2. Combine dry onion soup mix, water, beef stock, soy sauce and pepper; pour over roast. NOTE: If you don't have dry onion soup mix on hand, you may have the ingredients on hand to make your own. https://www.justapinch.com/recipes/soup/vegetable-soup/dry-onion-soup-mix.html
- 3. Spread mixed garlic over top of roast.

- 6. Add 2 or 3 tablespoons of cornstarch to drippings to thicken gravy. Slice or fork shred roast and serve over mashed potatoes and spoon gravy on top. Enjoy!

- Cut small slits in the roast all over, then stuff with garlic clove halves (as many as you wish).
- Place in a shallow glass pan cover with plastic wrap and refrigerate for 8-24 hours to allow garlic to infuse in the meat.
- Remove from the fridge and allow to sit for 1-1/2 hours or just until the meat is almost room temperature (this might take more than 1-1/2 hours).
- Set oven to 375 degrees.
- Place the roast in a small or medium-size oval roasting pan with a fitted lid.
- In a small cup or bowl mix together 4 tablespoons flour with 1-1-/2 tablespoons salt, 2 teaspoons Italian seasoning, garlic powder and 1 teaspoon black pepper.
- Sprinkle the flour/seasoning mix all over the roast.
- Pour 2 cups water and the vinegar into the bottom of the roasting pan.
- Add in the onion and whole garlic cloves.
- Drizzle the pork evenly with hot sauce.
- Cover with the lid and cook for 3-1/2 hours or until very tender.
- Remove pork from the roasting pan and wrap tightly in foil.
- Pour 1 cup pan drippings into a 2-cup pyrex measuring cup; let stand 10 minutes, then skim off the fat from the top of the glass.
- Melt butter in a large skillet over medium-high; whisk in the remaining 2 tablespoons flour, the pan drippings, broth, red wine and 1/2 teaspoon Italian seasoning; bring to a boil, whisking constantly, then reduce heat to medium and simmer for about 10 minutes.
- Season gravy with black pepper.
- Serve the gravy with the roast.

- Mix together cream of mushroom soup and condensed French Onion Soup.
- Optional step: dredge thawed pork roast in 1/2 cup flour that has been seasoned with 1 teaspoon salt and 1/2 teaspoon pepper. Brown all sides of pork in a skillet of hot vegetable oil.
- If you do not brown the roast, season all sides with salt and pepper.
- Add pork roast to slow cooker insert. Pour soup mixture over top.

- Trim the fat cap on the roast, this will be a large white area of fat on one side of the roast. Trim it down to about 1/8th of an inch thick. It is ok if you trim through to the meat in some areas. Trim up any other large areas of fat.
- Tie the pork roast with kitchen twine. See the video below for a visual tutorial on tying a roast.
- Rub the roast completely with 1 tbsp of dijon mustard. Sprinkle the Italian dressing mix packet on all sides of the roast.
- Turn the Instant Pot onto saute mode, medium, and add 2 tbsp olive oil. Wait until it becomes hot (it will read hot on the Instant Pot display screen).NOTE: If you are using frozen pork roast, skip this step.
- Place the seasoned pork roast in the pot and brown on both sides, about 3 minutes per side.
- Remove the roast from the pot and set aside.
- YOU CANNOT SKIP THIS STEP OR YOU WILL GET A BURN WARNING DURING PRESSURE COOKING.
- Pour the 2 cups chicken broth into the pot, keeping the saute function on. Scrape the bottom of the pot until ALL the brown bits are scraped up.Tip- you can lift your pot with an oven mit (it will be hot) and tilt it to the side to see if you got all the browned bits up.
- Add the 3 crushed garlic cloves, 1 bay leaf, 1 rosemary sprig and 1 tbsp worcestershire sauce to the pot liquid. It will be very dark in color, that is ok, it is all flavor!
- Add the trivet to the pot and place the pork on the trivet.
- Pop the lid on the pot and lock the pressure valve in place. Set the pot to cook on meat/stew mode for 15 minutes per pound. Ex. For my 3 lb roast it was 45 minutes.NOTE: if you are using a frozen pork roast calculate 20 minutes per pound with a 15 minute natural pressure release.
- Do a 15 minute natural pressure release, then quick release any remaining pressure.
- Remove the roast from the pot and set aside to rest. Leave the liquid in the pot to cook the veggies.
- Add the veggies to the pot and set it to cook on pressure mode, high, for 5 minutes.
- Do a quick release of pressure.
- Remove the veggies, plate them with the roast for serving.
- Season the veggies with salt & pepper.
- Strain the solids from the pot liquid by putting a mesh colander over a bowl. Discard the solids.
- Turn the now empty pot on to saute mode. Melt the 2 tbsp butter in the pot. Sprinkle 1/4 cup all purpose flour into the melted butter and whisk together to make a roux.
- Pour 2 1/2 cups of the reserved and strained liquid into the roux. Whisk vigorously to get rid of any lumps. Let it simmer for 3-5 minutes until it is thickened to your liking. Taste for seasonings.
- Remove the string binding from the roast. Serve the roast cut into slices with the veggies and the gravy on the side.

CIDER BRAISED PORK ROAST
Pork Shoulder Roast (aka Boston Butt) is an inexpensive cut of meat. Rubbing the meat, 18-24 hours in advance, with a brown sugar-salt mixture and refrigerating it overnight seasons the meat and helps keep it juicy. The following day, the roast is seared and then braised with apple cider, onion, garlic, thyme and bay leaves for about 3 hours. While the roast is resting, the braising liquid is used to make an incredible gravy with a few additional ingredients. Apple wedges seared in flavorful pork fat is the perfect condiment to compliment this dish. The pork turned out super moist and fork tender. The gravy is liquid gold!

- Using sharp knife, trim fat cap on roast to 1/4 inch. Cut 1-inch crosshatch pattern, 1/16 inch deep, in fat cap. Place roast on large sheet of plastic wrap. Combine sugar and 1/4 cup salt in bowl and rub mixture over entire roast and into slits. Wrap roast tightly in double layer of plastic, place on plate, and refrigerate for 18 to 24 hours.
- Adjust oven rack to middle position and heat oven to 275 degrees. Unwrap roast and pat dry with paper towels, brushing away any excess salt mixture from surface. Season roast with pepper.
- Heat oil in Dutch oven over medium-high heat until just smoking. Sear roast until well browned on all sides, about 3 minutes per side. Turn roast fat side up. Scatter onion and garlic around roast and cook until fragrant and beginning to brown, about 2 minutes. Add 1 3/4 cups cider, thyme sprigs, bay leaves, and cinnamon stick and bring to simmer. Cover, transfer to oven, and braise until fork slips easily in and out of meat and meat registers 190 degrees, 2 1/4 to 2 3/4 hours.
- Transfer roast to carving board, tent with aluminum foil, and let rest for 30 minutes. Strain braising liquid through fine-mesh strainer into fat separator; discard solids and let liquid settle for at least 5 minutes.
- About 10 minutes before roast is done resting, wipe out pot with paper towels. Spoon 1 1/2 tablespoons of clear, separated fat from top of fat separator into now-empty pot and heat over medium-high heat until shimmering. Season apples with salt and pepper. Space apples evenly in pot, cut side down, and cook until well browned on both cut sides, about 3 minutes per side. Transfer to platter and tent with foil.
- Wipe out pot with paper towels. Return 2 cups defatted braising liquid to now-empty pot and bring to boil over high heat. Whisk in apple butter until incorporated. Whisk cornstarch and remaining 1/4 cup cider together in bowl and add to pot. Return to boil and cook until thickened, about 1 minute. Off heat, add vinegar and season with salt and pepper to taste. Cover sauce and keep warm.
- To carve roast, cut around inverted T-shaped bone until it can be pulled free from roast (use clean dish towel to grasp bone if necessary). Slice pork and transfer to serving platter with apples. Pour 1 cup sauce over pork and apples. Serve, passing remaining sauce at table.

- Preheat the oven to 450 degrees F.
- For the pork: Mix together the mustard and apple cider and brush all sides of the pork loin and ribs with the mixture. Liberally sprinkle the pork loin and ribs with the smoked paprika, 1 tablespoon salt and 2 tablespoons cracked black pepper. Add some oil to a cast-iron skillet or roasting pan, then place the rack of ribs, curved-side down, in the skillet and place the loin, fat-side up, on top of the ribs. Roast until the internal temperature of the loin reaches 145 degrees F, about 30 minutes.
- While the pork begins to roast, cut the carrots, parsnips, potatoes and turnips into wedges using an oblique cut: Place a vegetable on a cutting board and hold your knife at a 45-degree angle to the vegetable. Cutting roughly 1-inch slices on the diagonal, roll the vegetable a quarter turn toward you each time you make a cut so you're cutting point to point until the vegetable is completely cut. Add the carrots, parsnips, potatoes, turnips, garlic and thyme to the skillet with the pork roast. Drizzle with some olive oil and sprinkle with salt and pepper. Return the skillet to the oven and continue to cook until the loin reaches 145 degrees F.
- Transfer the pork loin to a cutting board to rest and tent with foil. Return the skillet to the oven and cook until the ribs and vegetables are cooked through, about 30 minutes.
- Remove the skillet from the oven, transfer the vegetables to a platter and transfer the ribs to a cutting board.
- For the pan gravy: Heat the same skillet over medium heat. Add the flour and whisk until it absorbs the fat in the skillet. Slowly whisk in the cider and 1 cup water and bring to a simmer, whisking constantly to smooth out any lumps, until the sauce thickens slightly, about 2 minutes. Stir in the parsley and set aside.
- Cut the rack of ribs into individual ribs and scatter over the roasted vegetables. Slice the pork loin and shingle onto the platter. Spoon the pan gravy over the top and serve.

- Preheat oven to 300. Liberally season all sides of roast with seasonings. Heat oil over medium-high heat, and brown all sides of roast. Put into a roasting pan and set aside.
- Brown onions in the same pan for 2-3 minutes. Add wine, juice, and vinegar, and simmer for 2 minutes. Pour entire mixture over roast.
- Cover the roast and bake until the roast is fork tender. It will take ~4-5 hours, depending on your particular roast and oven.
- When the roast is fully cooked, remove all drippings from the bottom of the pan. Strain the fat off the top of the drippings, and heat over medium to low heat in a small skillet. Simmer for 2-3 minutes, or until any residual non-fat drippings have cooked off. Next, stir in an almost equal amount of flour, and whisk until no lumps are left. Cook over low heat for 4-5 minutes, stirring constantly.
