BROCCOLI CAULIFLOWER SALAD



Broccoli Cauliflower Salad image

Broccoli cauliflower salad is loaded with flavor. This salad is full of sweet, salty and tangy flavors. This salad is super easy and quick to make and is perfect for a side dish, light meal, picnic or potluck.

.75 lbs Broccoli florets (cut into bite sized pieces)
.75 lbs cauliflower florets (cut into bite sized pieces)
1/4 cup Red onion
1/4 cup Craisins
3 tbsp red wine vinegar
1 cup mayonnaise
1 tbsp Sugar (optional)
1 cup sunflower seeds
1/2 cup crumbled bacon

Steps:

  • Combine the mayonnaise, vinegar, and sugar in a bowl and whisk until smooth.
  • In a large bowl, add the broccoli, cauliflower, onion, craisins and dressing and toss to coat.
  • Add the sunflower seeds and bacon and toss again gently to distribute.
  • Serve chilled. Enjoy!

1 head fresh broccoli, diced
1 head cauliflower, chopped
¾ cup shredded sharp Cheddar cheese
¼ red onion, chopped
½ cup creamy salad dressing (such as Miracle Whip®)
½ cup white sugar
2 tablespoons white vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.
  • Stir broccoli, cauliflower, Cheddar cheese, and onion together in a large bowl.
  • Whisk creamy salad dressing, sugar, and vinegar together in a separate bowl until sugar is dissolved; pour over broccoli mixture and toss to coat. Refrigerate salad for at least 30 minutes. Stir crumbled bacon into salad just before serving.

This is my homemade twist on the traditional broccoli salad. Pepitas (pumpkin seeds) give this salad a nutty, chewy-crunch, and the light, bright-tasting dressing accents the hearty veggie mix. A favorite at picnics and potlucks!

3 cups coarsely diced broccoli
3 cups coarsely diced cauliflower
1 red bell pepper, diced
½ cup diced onion
½ cup shelled roasted pumpkin seeds (pepitas)
½ cup light mayonnaise
½ cup plain nonfat Greek yogurt
2 tablespoons red wine vinegar
2 tablespoons coconut palm sugar
1 teaspoon Dijon mustard
½ teaspoon salt

Steps:

  • Mix broccoli, cauliflower, red bell pepper, onion, and pumpkin seeds in a large bowl.
  • Whisk mayonnaise, yogurt, red wine vinegar, palm sugar, Dijon mustard, and salt together in a separate bowl; drizzle over the broccoli mixture and toss to coat.
  • Cover bowl with plastic wrap and refrigerate 1 to 2 hours before serving.
