BOOZY STEAK WITH CREAMY MUSHROOM SAUCE
Peppered steaks seared in cast iron, with a quick, creamy pan mushroom sauce. Simple, elegant dinner for 2. This recipe works with most steaks, but I prefer a nice fillet or chuck eye. A small, thick cut of steak is best.

Steps:
- Coat steaks with ground peppercorns, olive oil, and soy sauce. Let stand at room temperature for 30 minutes.
- Preheat the oven to 425 degrees F (220 degrees C).
- Heat a cast iron skillet over medium-high heat. Place 2 tablespoons butter in the skillet and allow it to melt completely and begin to foam. Cook steaks in the hot skillet until browned, 2 to 3 minutes per side. Place mushrooms around steaks and stir to coat with pan drippings.
- Transfer skillet to the preheated oven and cook until steaks are firm and reddish-pink and juicy in the center, 6 to 8 minutes. An instant-read thermometer inserted into the center should read 135 degrees F (57 degrees C). Remove steaks from the skillet and allow to rest.
- Return skillet to medium heat and add remaining 1 tablespoon butter and garlic. Cook, stirring constantly, until garlic is fragrant, about 2 minutes. Pour in bourbon carefully, away from any heat source, and cream. Allow to simmer until slightly reduced, about 2 minutes. Serve sauce over steaks.

BOOZY BEEF STEAKS
I used to use this recipe in the gastro pub I ran, it used to sell like hot cakes! Use a good quality steak-it makes a difference. I also do this as kebabs if I'm serving it at a large gathering, it works a treat. This is perfect on the barbecue, but equally good just grilled or griddled inside.

Steps:
- Make a few cuts into the edge of the fat on each steak-it stops the meat curling up as it cooks.
- Place the meat in a shallow, on metallic dish. Mix together the remaining ingredients, stirring until the sugar dissolves. Pour mixture over steaks, cover and marinate for at least 2 hours.
- Barbecue meat until cooked to your liking.

My hubbies two favorite things! Tender steak in a creamy mushroom sauce! Can use any cut of beef- even cheap ones will come out tender. So yummy and easy!

- Sautee onions and mushrooms until softened.
- Dust meat with flour and brown in a little oil added to the onions and mushrooms.
- Pour beer over all when meat has browned.
- Reduce heat. season with salt and pepper and simmer until meat is tender.
- Stir in sour cream just before serving and allow to heat through.
- Great served with mashed potatoes or rice.

- Remove the stalk and leaves of the cauliflower. Slice it into two halves, right through the centre and the stalk. Cut two thick slices (steaks) from the 2 halves and use the rest of the florets in another recipe.
- Wash these two slices well under running water. Soak in heavily salted water for 15 minutes, rinse again. Bring a pot of water to boil. Place the two slices in the boiling water gently and allow to simmer for 3-4 minutes. Refresh in a bowl of cold water and dry thoroughly using a kitchen towel.
- Preheat the oven at 190xb0C. Coat the cauliflower steaks with olive oil, season with salt and pepper and roast / bake for 10 minutes. This can also be done in the air fryer, which will be quicker than baking in an oven. Remove when you see browning around the edges.
- To prepare sauce, heat the butter in a saucepan. Add the finely chopped onions and sauce for 4-5 minutes on medium flame. Switch off the flame, add the whisky. (Ideally, you'd want to flambe this but it is risky for newbies or in home kitchens to try this out.)

- In a wide, deep pan, on medium heat, fry onions and garlic in 3 tablespoons of oil until soft (about 8 minutes). Add bay leaf, thyme, butter and mushrooms, mix well and simmer gently for 5 minutes before adding stock and alcohol. Allow to simmer uncovered for 12-15 minutes.
- While the sauce is cooking season your beef (pounded to ½ inch thickness) with salt and pepper and coat in flour.
- In another pan (wide enough, so it can fit all your meat), heat up remaining 3 tablespoons of oil. Now place your meat in the pan and flash fry it for no more than about 40 seconds on each side (to medium rare at the most!). Remove the meat onto a chopping board and let it cool and rest for about 5 minutes. There should still be a bit of blood running out of the meat – that is fine, it will cook further in the sauce. When rested, slice the meat into ¾ inch wide slivers.
- Turn the heat down to very low under the pan with with onions, mushrooms and the stock and add the sliced beef. Mix it all together and leave on very low heat for the duration of preparing the sour cream as follows:
