BOOTLEGGER BEANS
This delicious side dish is very easy to make. It practically cooks itself! Because these beans are so good, I usually make a double batch. The recipe comes from household advice columnist, Heloise. Her mother also had a newspaper column where this recipe was first published over forty years ago.

Steps:
- Dice bacon and onion.
- Fry bacon; when nearly done, add onion to pan and saute until bacon is cooked; pour off most of the fat.
- Combine all ingredients in a saucepan; cover and simmer, stirring every once in awhile, on low heat for 1 to 2 hours ~ The beans will thicken as they cook.

I got this recipe from a Heloise column back in the 70's! I make it so often. My husband loves these and so do I.

- 1. Fry bacon till crisp, remove from pan and crumble.
- 2. Add onion and fry till slightly browned
- 3. Add pork and beans and other ingredients. Cook till somewhat thickened.

- 1. dice 3 strips of bacon and fry until half done. add chopped onions,brown all this.pour off grease. add; 1 (16 oz.) can of pork'n beans.add; 1 tablespoon brown sugar,1 tablespoon vinegar and 2 tablespoons catsup.
- 2. simmer slowly 30 minutes or longer.
BOOTLEGGER'S BEANS
This spicy favorite for backyard parties and picnics can be doubled easily. Great for alongside hamburgers, hot dogs or anything from the grill. Cut from the newspaper in 1962.

Steps:
- Fry the bacon until halfway done.
- Add the onion.
- When the onion is slightly browned, pour off almost all of the grease (or all of it if you're watching fat content), Add pork and beans, sugar, vinegar and catsup.
- Stir well, season with a pinch of chili powder.
- Pour mixture into ceramic bean pot or covered dish.
- Bake at 350 degrees one hour or until mixture is cooked down so that it's not too runny. You can also cook this mixture slowly on the stove, careful to stir occasionally so the beans won't burn. They'll cook down.

BOOTLEG BAKED BEANS
I found this recipe in a newspaper several years ago. I never cared for baked beans until I tried this recipe. Now it's a regular at our house.

Steps:
- Fry bacon till crisp, then crumble and set aside.
- Remove all of the bacon grease from the pan except for 1 tablespoon.
- Sauté chopped onion in the bacon grease till tender.
- Add 2 cans of Pork & beans, brown sugar, catsup, and crumbled bacon.
- Stir and cook till heated through.
OLD SETTLERS' BAKED BEANS
My husband likes spicy dishes, and this is one of his favorites. He usually takes what's left to work for lunch the next day. We have a 4-year-old son, and this is the only way we can get him to even touch beans!

- In a large skillet, cook beef, bacon and onion until meat is done and onion is tender. Drain any fat. Combine all remaining ingredients except beans. Add to meat mixture; mix well. Stir in beans. , Preheat oven to 350°; place bean mixture in a greased 2-1/2-qt. baking dish. Cover and bake for 1 hour or until heated through.
