BUTTERSCOTCH CHEESECAKE BARS
My Mom, who lives with me, can no longer cook but she still likes to look at her receipe box from time to time. She asked me to make this one for her and it was yummy! I don't know where the recipe came from as it was hand written. Easy peasy to make. Enjoy!

Steps:
- 1. Preheat oven to 350. In medium saucepan, melt morsels and butter; stir in crumbs and nuts. Press half of the mixture firmly into the bottom of a greased 13x9 baking pan.
- 2. In a large mixing bowl, beat cream cheese until fluffy; beat in condensed milk, vanilla, and egg. Mix well. Pour into prepared pan, top with remaining crumb mixture.
- 3. Bake for 25 to 30 minutes or until toothpick comes out clean from the center of pan. Cool to room temperature; chill before cutting. Refrigerate leftovers.
- 4. NOTE: I just made these and decided I would change it a bit. I think the next time I make these I will lessen the crust on top by adding it back into the crust and to the cheesecake part I will add 1/2 again as much as the recipe calls for. Just a suggestion. :)

Steps:
- Preheat oven to 350 degrees F(175 degrees C).
- To make Pastry: Cream together the butter and brown sugar until light and fluffy. Add in the flour and chopped nuts and stir until mixture becomes crumbly. Set aside 1/4 cup to use as a topping.
- Press pastry mixture into 8-inch square pan and bake for 12 to 15 minutes. Let cool on rack.
- To make Filling: Beat together the white sugar, and cream cheese until smooth. Stir in the egg, milk, lemon juice, and vanilla and mix well. Spread filling mixture over baked crust. Sprinkle reserved mixture on as a topping.
- Bake for 25 to 30 minutes. Let cool on wire rack and refrigerate. Serve with fruit.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Heat butterscotch chips and butter together in a saucepan, stirring frequently, over low heat until melted, about 5 minutes. Remove saucepan from heat and stir graham cracker crumbs into butterscotch mixture. Measure 2/3 cup graham cracker-butterscotch mixture and set aside; press remaining mixture into the prepared baking dish to form a crust.
- Beat cream cheese in a bowl using an electric mixer until light and fluffy. Add sweetened condensed milk, egg, and vanilla extract; mix well. Pour cream cheese mixture over crust. Sprinkle reserved graham cracker-butterscotch mixture over cream cheese mixture layer.
- Bake in the preheated oven until a knife inserted in the center comes out clean, 25 to 30 minutes.

- In medium saucepan, melt morsels and maragarine; stir in crumbs and nuts.
- Press half of mixture firmly into bottom of greased 13 x 9" pan.
- In large bowl, beat cheese until fluffy; beat in Eagle Brand Milk, vanilla and egg.
- Mix well.
- Pour on top of crumb and nut mixture in pan.
- Top with remaining crumb mixture.
- Bake 25-30 minutes at 350 degrees, until toothpick inserted near center comes out clean.
- Cool to room temperature.
- Chill before cutting into bars.
- Refrigerate bars.

We took these to a potluck and they were a hit. They can easily be cut smaller to make a whole bunch of tasty little morsels. My husband wants to try them made with chocolate chips instead.

- Preheat the oven to 325°.
- Grease or butter a 9 x 13 baking dish.
- In a medium saucepan melt the chips and butter over low heat, stirring often. When melted and smooth remove from the heat and mix in the graham cracker crumbs. Set aside about 2/3 cup of the crumb mixture, press the rest into the bottom of the prepared pan to form the crust.
- In a bowl beat the cream cheese until light and fluffy. Add the condensed milk, vanilla and egg, beat until smooth. Fold in the pecans. Pour cream cheese mixture on top of the crust then sprinkle with reserved crumb mixture.
- Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool to room temperature and then serve chilled.

- 3. Press 1/2 mixture firmly into the bottom of a greased 9x13 baking dish (glass works best).
- 4. In a large bowl, beat the cream cheese until fluffy; mix in sweetened condensed milk, vanilla and egg. Mix well.
- 5. Pour mixture over crust in the baking dish. Sprinkle remaining crumb mixture over the top.
