CHAKALAKA (SOUTH AFRICAN VEGETABLE STIR-FRY)
This is a staple food in South Africa as well as other parts. My amaXhosa friend, Ntombizanele Sokupa, gave this recipe to me. She eats this with Pap -Recipe #309584, but says it can also be enjoyed as a side dish with meat or vegemeat or with bread. Thanks Zanele!

Steps:
- Fry the onion and pepper together with oil in a large skillet until the onion is clear.
- Add the grated carrots, tomatoes, water, and all the seasonings to your liking and cook for about 15-20 minutes.
BOOM CHAKALAKA(VEGETARIAN-SOUTH AFRICA)
Boom chakalaka! Born in the townships(probably Johannesburg) of South Africa(Sub-Saharan Africa), chakalaka is a simple, spicy dish of onions, tomatoes and often beans. It has been a staple for generations of black South Africans, and is a required condiment at South African braais, or barbecues. Chakalaka can be served hot or cold, over mealie pap, with slices of bread, or as a condiment for grilled meats. Adapted from whats4eats.

Steps:
- Heat the oil in a large saucepan over medium heat. Add the onions, bell peppers, chile peppers, garlic and curry powder(if using ginger and/or carrots, add now).
- Saute, stirring frequently, until the onions and peppers are cooked down and wilted, about 4 to 5 minutes.
- Stir in the tomatoes and bring to a boil(if using shredded cabbage and/or chopped cauliflower add now). Reduce heat to medium-low and simmer for about 5 minutes.
- Stir in the baked beans, salt and pepper and stir to heat through. (If using chopped cilantro add now).
- Serve hot or cold.

- Heat oil in a large saucepan & sauté onions until soft & transparent.
- Add garlic, ginger & chilli, cook for a minute or two before adding curry powder, then cook for another minute to develop flavour.
- Add vegetables, bring to the boil then turn down the heat & simmer gently for about 15-20 minutes or until vegetables are cooked, adding water if necessary. Season to taste.

CHAKALAKA
Recently enjoyed my first meal at a local South African restaurant here in Brooklyn. There we enjoyed this fabulous side dish - a spicy revamped rendition of baked beans. Of course, this sent me in search of a recipe to prepare at home. Found this one on the Internet and plan to try it soon. The original called for three times the amount of oil but I plan to make it as presented.

Steps:
- Fry ginger, garlic, chillis, onions in the oil.
- Add the leaf masala or curry powder of your choice.
- Add the tomatoes and cook for 10 minutes.
- Add peppers and carrots and cook for 10 minutes. Add baked beans and cook for 5 minutes.
- Remove from heat and add coriander. Check seasoning. Serve with whatever you want, hot or cold.
