BONNIE'S ROASTED CHICKEN WITH VEGETABLES
There's something comforting about a roasted chicken recipe and we really loved this flavorful dish. The lemon essence shines throughout the meal. We loved the taste so much, we may double the sauce next time just so there's more of it. The pops of sweetness from sweet potatoes and carrots add an extra layer of flavor. Definitely...

Steps:
- 1. Pre-heat the oven to 425 degrees. I use a large stainless steel pan with a shallow rim, big enough to hold all the ingredients in a single layer. Grease the pan with kitchen spray.
- 2. Zest the lemon and squeeze the juice. Place the lemon juice in a large bowl. Add the zest, garlic, Dijon mustard, olive oil, salt, and pepper. Whisk until well combined. Pat thighs dry and add to the mixture in the bowl. Coat the chicken thighs with the mixture and place them skin UP in the center of the baking pan.
- 3. Add the vegetables to the bowl with your hands and toss the vegetables until they are coated. Place the vegetables around the chicken in the pan in a single layer.
- 4. Roast in the oven at 425 degrees for about 45 minutes. Stir the vegetables halfway through the cooking process. Test the vegetables to see if they are done, if not, continue cooking. At this time, using tongs, flip the chicken thighs over to "baste" the top of the meat in the juices, and then flip it back over. (Sneaky way to baste.)
- 5. The meat and vegetables will be golden brown. It may take a few minutes less or a few minutes more, depending on how big the pieces of meat are, and how big you slice the vegetables. If you like them more brown, turn on the broiler for a few minutes, but watch them carefully.
- 6. Next time, after you have tried this dish, feel free to add anything else to it that you can't live without. Enjoy!

Steps:
- 1. Dissolve the yeast and the sugar in a small measuring cup, and let it stand 5 minutes, then stir in the biscuit mix.
- 2. I use Pioneer brand buttermilk biscuit mix. Make a dough and knead until it is smooth and elastic, about 8 minutes.
- 3. Roll out the dough and cut into round shapes. (You can make other shapes if you wish.) You will get around 20 rolls, less if you make them bigger.
- 4. I use an air baking sheet with parchment paper for best results. (The reason I like an air baking sheet is they don't overbrown baked goods) Place the cut rolls on the greased baking sheet and let them rise until double in size, about 30 minutes or so, and bake in a 400 degree oven for 10 to 15 minutes until golden brown. Here is what they look like! Enjoy!

- 2. Turn dough out on a well floured surface. Knead until smooth and elastic, {About 5 minutes}. Cover dough and let rest 10 minutes.
- 3. Divide dough in half and roll each half into a 15 x 14 rectangle and spread each half with 2 sticks of margarine and half of the cinnamon and sugar mixture (or to taste).
- 4. Roll up each rectangle jellyroll fashion, starting at long side, moisten edges with water and pinch to seal. Cut each roll into 1 inch slices. Place slices cut side down on two greased 13x9x2 inch pans.
- 5. Cover and let rise in a warm place, free from drafts, about 45 min. Rolls will not double in bulk. Bake at 350 degrees for 30 min.
- 6. Combine powdered sugar, milk and vanilla, stirring well. Drizzle over warm rolls. Yield about 30 large rolls. Enjoy!!!
- 7. THE CAKE MIX: You can use either a white or yellow cake mix. REMEMBER: Don't use a cake mix that has pudding in.
YEAST ROLLS
Steps:
- In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
- Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
- Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.
BONNIE'S BAKED FRENCH TOAST
This is a great recipe for just two people, or you can bake several pans of French Toast all at once, if you have a crowd. Add sausage and bacon on the side with a big bowl of mixed fruit and a fresh pitcher of orange juice. We serve ours with a shaker of powdered sugar and pure maple syrup and butter dripping off the plate! ...

Steps:
- 1. Spray a bread pan with kitchen spray and preheat the oven to 375 degrees.
- 2. Butter the tops of all four slices of bread with two slices of bread to a stack. Place bread stacks in the prepared pan, buttered side up.
- 3. Mix the milk, eggs, Mexican vanilla, cinnamon, nutmeg, sugar and a dash of salt with a whisk. Then pour over the bread stacks in the pan. There won't be enough liquid to totally submerge the top layer of bread, which is okay. Bake 35 to 40 minutes until nice and brown.

- Warm liquid ingredients: Combine the milk, water, 4 tablespoons butter, and sugar in a microwave-safe bowl. Microwave until temperature of the mixture reaches between 95°-115°F (about 1 minute). No cooler, no warmer. Use an instant read thermometer. Stir until butter is at least mostly melted.
- Combine with the yeast: Pour the heated mixture into the bowl of a stand mixer and add salt. Sprinkle the yeast over top.
- Stir in flour: Add 3 cups of the flour and mix on medium speed with the dough hook attachment. (I like to use the dough hook with my hand to get the ingredients combined then place dough hook onto the stand mixer to do the rest.) Continue to mix for 3 minutes while adding the remaining flour 1/4th cup at a time until dough is no longer sticking to the sides. I rarely use all 4 cups. You want it tacky, not too dry.
