It is not so much about a recipe as it is a cooking technique, but this could be a valuable time-saver for a lot of people. Especially if you have your oven on anyway. - 1. HOW TO MAKE PERFECT "BOILED" EGGS Eggs go in the oven for 30 minutes, then in a bowl of ice water to cool. That's IT! Here is what you do. Preheat your oven to 325. Some of the posts I found said between 325-350. My eggs turned out perfect at 325. If you know your oven runs cooler, try out a higher temp. PLEASE DO A TEST RUN with a couple eggs until you figure out the correct cooking temp for your oven. Place eggs in a mini-muffin tin to prevent them from rolling around. Cook for 30 minutes. No, they won't explode! They peel easy, too. After the 30 minutes, remove eggs from the oven and place in a bowl of ice water to stop the cooking process. I left them in there for about 10 minutes. For breakfast or brunch, EGGS BENNY is pure delight to the taste buds & easy to prepare! Since I seem to unable to make a proper hollandaise sauce and love Eggs Benedict, I've come up with this scrumptios creation that I've become totally addicted to! (And the sauce, so simple, can be used in a zillion ways!!)

- Sauce (while sauce is cooking, prepare/heat the other ingredients):.
- In a sauce pot, over medium heat, melt the butter and stir in all the flour, blending well.
- Mix the milk and cream, slowly add to the sauce pot, whisking to totally blend (time to poach those eggs!).
- Add the lemon juice and cayenne pepper.
- Add the grated cheese, blending well. (more cheese can be added for a 'cheesier' flavor if desired. Keep in mind that the cheese will further thicken the sauce.).
- Do not allow the mixture to boil or even come close. Lower the temperature as necessary.
- Cook to thicken sauce to desired consistency. Sauce will further thicken as it sits.
- Heat the ham slices (fry lightly, steam or nuke).
- Add the chopped shallot to the spinach & mix well, heating through.
- Place 1/2 English muffin on each plate, topping it 1st with a ham slice, then 1/4 c spinach mixture, topping that with a poached egg and finally with sauce, then sprinkle with fresh ground pepper.
- Serve hot!
- Keeping a well warmed oven will give you a place to keep things hot 'til you are ready to serve.

- 1. Preheat Oven to 350 degrees. Spray bundt pan with bakers choice (preferrably).
- 2. In med. bowl mix eggs, oil, cinnamon, apples and walnuts. Make sure apples get coated good. In large bowl mix flour and sugar till well blended. Then add your wet ingredients. Will become very thick. I smash the mixture with a cake spatula. To ensure it all mixes in.
- 3. Pour mixture into bundt pan. Bake at 350 for 55 to 60 minutes. When butter knife comes out clean cake is done. Let cake cool for 5 to 10 minutes and release from pan while cake is still warm. Each oven varies.
- 4. I like a glaze over my cake.I add it when the cake has cooled down to when it is just warm So i use the following ingredients. Put ingredients in zip- loc bag, cut small tip of bag, squeeze over cake 1/4 -cup milk 2- cups powdered sugar 1/2 tsp. vanilla
FLUFFY OVEN SCRAMBLED EGGS
