SKILLET BEEF AND MACARONI
I found this simple skillet recipe many years ago on a can label. I made some tweaks, and my family loved it. Because it's so easy to put together, it's a real timesaver for people with super busy schedules. -Maxine Neuhauser, Arcadia, California

Steps:
- In a large skillet over medium-high heat, cook beef and onion until the meat is no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until macaroni is tender, stirring occasionally, 20-25 minutes. Add more water if needed.

CHEESY SKILLET TACO MAC
You may be familiar with that one-skillet macaroni dish that comes in a box where all you have to add is ground beef? Well, this is my version, with a little Tex-Mex twist. The whole family will eat it up, and it's so easy to put together.

Steps:
- Heat the oil in a large cast-iron skillet over medium heat. Add the onion, garlic, ground beef and House Seasoning. Cook until the veggies begin to soften and the beef is slightly browned and no longer pink, about 7 minutes. Stir in the tomato paste, chili powder, cumin and beef stock.
- Increase the heat to medium-high and bring the mixture to a rolling boil. Reduce the heat to low and cook until the sauce reduces, 5 to 10 minutes. Add the pasta and continue to cook, stirring constantly, until the liquid starts to slightly absorb. Add the cheese and remove from the heat. Season with salt and pepper.
- To serve, top with the sour cream and sprinkle with the green onions, if using.
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
BONNIE'S MACARONI SKILLET
This is one of those meals I have made so many times with no recipe, and it has just sort of evolved over the years. It is made in a huge skillet, so there will be plenty of leftovers to freeze for another day. Add crunchy French bread or garlic bread, and a tossed green salad, and dinner is served. Don't forget the wine!...

- 1. THE SAUCE Dump the prepared sauce in a large sauce pan and turn the burner on low. Add the drained mushrooms.
- 2. COOK THE MACARONI Put a large pan of water on to boil the macaroni. When it is boiled drain and set aside.
- 3. THE TURKEY Place the ground turkey in a medium sauce pan. Add 1 teaspoon garlic powder, 1/4 teaspoon oregano, 1/2 teaspoon basil, 2 tablespoon onion flakes, salt and pepper to taste. Cook the turkey, mixing the spices in until it is light brown and done. Dump the meat in the sauce. Use this pan to saute the vegetables.
- 4. THE VEGETABLES Using the same skillet you fried the turkey in, place it over medium heat and add the olive oil Slice the vegetables and add them to the skillet. Saute until vegetables are tender, then deglaze the pan with 1/3 cup of white wine.
- 5. PUTTING IT TOGETHER Use a super large and deep enough skillet to hold everything. Dump the sauce and turkey mixture in it, then add the vegetables and macaroni, mix well. cover and simmer about 20 minutes. Garnish with green onions and parsley. Serve with fresh grated parmesan at the table, some crushed red pepper for a kick, crunchy French bread, or garlic bread, tossed green salad and a glass of wine! Enjoy!
- 6. COOK'S TIP It is even better the next day when flavors blend over night.

- In a large oven-safe skillet, bring the water to a boil. Add in the macaroni and cook over medium heat on a low simmer until al dente, around 8-9 minutes, making sure to stir it often so the macaroni doesn't stick to the pan.
- When the macaroni is done ( the water should be gone as well except for perhaps a couple tablespoons) turn the heat down to low and stir in the cream. Mix through the macaroni.
- Add in 2 cups of the sharp cheese, the Velveeta and the Parm/Reg cheese. Stir in gently then remove from the heat and let sit for 1-2 minutes to melt so you don't overwork the noodles. Stir again gently, mixing it throughout the pasta.
- Turn your oven on broil. Top the skillet with the remaining sharp cheese. Broil in the oven until it reaches your desired cheese doneness - we like ours slightly browned with crispy bits of cheese!
