GRANDMA'S CHICKEN SOUP WITH HOMEMADE NOODLES



Grandma's Chicken Soup with Homemade Noodles image

This is my beloved Grandmother's recipe. I have made noodles from scratch mixing, rolling, and cutting by hand. Today I use a dough mixer and pasta cutter to save time.

1 gallon chicken stock
4 bone-in chicken breast halves
3 cups all-purpose flour
¼ teaspoon salt
3 eggs
2 tablespoons water, or as needed
½ teaspoon ground black pepper
1 pinch salt

Steps:

  • Bring chicken stock to a boil; cook chicken breasts at a boil until no longer pink in the center, 15 to 20 minutes. Remove chicken, cool, and cut meat from bone; keep chicken stock at a low simmer.
  • Mix flour and 1/4 teaspoon salt together using the dough hook attachment in the bowl of a stand mixer on Low; add eggs and water, 1 tablespoon at time, until dough holds together.
  • Split dough in half. Roll 1 dough half on a lightly floured surface to 1/8-inch thickness. Cut dough into noodles 2 to 3-inches long x 1/4-inch wide using a sharp knife dipped in flour or a fettuccine pasta cutter. Repeat with other dough half.
  • Return chicken to the simmering stock; add noodles. Season stock with black pepper and 1 pinch salt. Cook soup until noodles are cooked through, 15 to 25 minutes.

This is a recipe that was given to me by my grandmother. It is a very savory and tasty soup and I believe that all will like it. If you would like to add even more flavor, try using smoked chicken!!

2 ½ cups wide egg noodles
1 teaspoon vegetable oil
12 cups chicken broth
1 ½ tablespoons salt
1 teaspoon poultry seasoning
1 cup chopped celery
1 cup chopped onion
⅓ cup cornstarch
¼ cup water
3 cups diced, cooked chicken meat

Steps:

  • Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
  • In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
  • In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.

1 large chicken breast, or turkey, about 2 cups, cooked and diced
2 1/2 quarts of homemade chicken or turkey broth
2 teaspoons chicken granules
1 sweet onion chopped
1 cup celery, diced
1 cup carrots, diced
1 cup fine spaghetti, broken into 2 inch pieces
2 tablespoons olive oil or butter
1/4 teaspoon dried thyme
1 bay leaf
1/4 teaspoon dried marjoram
1/8 teaspoon black pepper
salt to taste

Steps:

  • 1. Saute the onions, carrots and celery in the olive oil or butter. Cook until tender. Add all the rest of the ingredients and simmer 20 minutes. Add spaghetti and cook until noodles are done. Adjust salt to taste. Enjoy!
  • 2. Cook's Tip: This soup is great with my Ranch Chicken Stuffed French Bread posted on this site.
  • 3. TURKEY SOUP? You can make great tasting turkey soup using this recipe. Make it with noodles or potatoes. Use dark or light meat as you prefer. If using potatoes, dice 2 medium size potatoes and saute with the rest of the vegetables and omit the noodles. You can boil the carcass in a stock pot to make a nice flavorful broth or use canned broth. Enjoy!

8 drumsticks boiled in 12 cups water until done. use any cut of chicken, thighs or breast meat, leave skin on.
1 large onion, chopped
2 tablespoons minced garlic from jar
2 tablespoons leaf marjoram (not ground)
2 tablespoons chicken granules
1/2 cup frozen peas
1 cup sliced baby carrots
1 cup chopped celery
1 16 ounce package of grandma's fresh frozen egg noodles, wide kind (don't substitute)
black pepper to taste
a little olive oil to saute vegetables

Steps:

  • 1. DAY BEFORE Boil the drumsticks in the water until done. Save the water to make the soup. Refrigerate.
  • 2. THE NEXT DAY... PREPARE GRANDMA'S NOODLES (These are NOT the regular wide curly kind) Follow the instructions on the package that say to slit the plastic and microwave 1 minute. Remove and separate the noodles and spread them out on a cookie sheet.
  • 3. MAKE THE SOUP Remove skin and bones from the drumsticks and discard. Save the chicken and the broth. Chop the onions, celery and carrots and saute in a large dutch oven in a little olive oil. When the vegetables are tender, add the minced garlic and stir a couple of times. Add the chicken stock, chicken granules, pepper, marjoram,and the chicken to the pot. Simmer covered over low heat until the vegetables are done. Add Grandma's noodles and bring soup to a low boil and cook until noodles are tender and to your preference. Add frozen peas. Check seasoning. Cook until peas are done.
  • 4. COOK'S TIP Do you like a lot of broth or a little broth in your soup? If you don't have enough broth to suit you, you can add a can of chicken broth,a teaspoon of chicken granules, a half can of water and a teaspoon of marjoram and add it to the broth to thin it.

A classic homemade chicken noodle soup recipe straight from my Italian grandmother's kitchen. This recipe makes a tasty, nourishing soup loaded with tender chunks of chicken, vegetables and wide noodles to catch all the delicious broth. Easy to cook on the stovetop or in a pressure cooker.

2 tablespoons butter
2 tablespoons olive oil
1 ½ cups chopped onion (1 large)
2 cloves garlic (sliced)
½ pound carrots (peeled and sliced into 2-inch chunks)
3 stalks celery (pick off and reserve the leaves for garnish) (sliced into 2-inch chunks (1 cup))
1 ½ pounds boneless, skinless chicken thighs or breasts (cut into 2-inch chunks)
5 cups low-sodium chicken broth
¼ teaspoon ground turmeric (optional, but makes a beautiful golden broth)
Kosher salt
Freshly ground black pepper (to taste)
3 round slices of fresh lemon (seeds removed)
1 small Parmesan rind (optional)
8 ounces dried fettuccine or egg noodles (broken into large pieces)
¼ cup chopped fresh dill or parsley
Freshly grated Parmesan cheese to taste

Steps:

  • Put the butter and oil in a large pot over medium heat. When the butter is melted, add the onion, garlic, carrots and celery. Cook 5 minutes, stirring, or until the onion is softened.
  • Add the chicken, broth, turmeric, 2 teaspoons salt, black pepper, lemon and Parmesan rind. Stir. Bring to a simmer, then lower the heat and partially cover the pan. Let the soup bubble gently for 45 minutes. The chicken should be very tender and shred easily with a fork. Remove the cheese rind and lemon slices and discard.
  • When the soup is almost done, bring a medium pot of water to a boil. Cook the pasta until al dente, according to package directions. Drain.
  • Add the noodles and dill to the soup. Serve warm in bowls, sprinkled with cheese and celery leaves.

1 lb dark chicken meat, skin on
1/2 lb chicken breast, skin on
5 cups water
1 small onion, quartered
1 carrot, peeled,cut in 5 pieces
1 stalk celery, cut in 5 pieces
1/8 cup parsley stems, reserve sprigs
2 whole peppercorns
2 whole cloves
1/2 tablespoon fresh thyme, minced or 1/2 teaspoon dried thyme leaves
1 1/2 cups flour
2 eggs
2 teaspoons olive oil
2 teaspoons water
2 tablespoons fresh oregano, minced or 1 teaspoon dried oregano
2 tablespoons parmesan cheese
1/2 teaspoon salt
2 cups canned best quality low sodium chicken broth or 2 cups homemade chicken stock
1 carrot, peeled,sliced very thinly
1/4 cup frozen peas, thawed
1 tablespoon parsley sprig, minced
2 tablespoons freshly grated parmesan cheese
generous grinding pepper
salt

Steps:

  • Stock: Cut away any obvious fat from chicken and place only dark meat chicken parts in Dutch oven or stockpot; add water, onion, carrot, celery, parsley stems, peppercorns and cloves.
  • Bring to boil, skim off foam at top and then add thyme; reduce heat to simmer; simmer 20 minutes and then add chicken breast; simmer another 25 minutes until chicken is tender.
  • Remove the chicken but continue to simmer broth; as soon as chicken is cool enough to handle, remove meat from bones and return bones to broth; simmer another 20 minutes.
  • Noodles: While the chicken and stock are simmering, make the noodles; in a food processor, process flour, eggs, oil, water, oregano, cheese and salt 45-60 seconds to mix and knead the pasta; (if making the pasta by hand, place flour on work surface and make a well in the center; add the other ingredients to the well and mix with hands to form dough; knead on floured surface for 10 minutes); cover dough and let rest 10-20 minutes.
  • Divide dough in half and roll each as thinly as possible to a 14" square; trim the edges to make somewhat straight; lightly flour the surface of the dough; roll each square loosely, as for a jelly roll; cut each roll with sharp knife into 1/4" slices; shake slices open.
  • Lay half of the noodles flat in a loose, overlapping mound; cut into 2" lengths and spread them out to dry for about 15 minutes; lay the other half of the noodles out flat to dry or drape on pasta dryer; when noodles are somewhat dry and do not stick together, roll in several loose circles of a few noodles each and seal in platic bag in a single layer; use in another dish of your choice within 2-3 days.
  • Soup: Strain broth and return to pot; add stock and bring to a boil; add carrots and cook 2 minutes; add peas and noodles and cook another 2 minutes; add chicken, parsley, parmesan and salt and pepper to taste.

2 teaspoons olive oil
4 bone-in chicken thighs
2 medium carrots, peeled, sliced into 1/2-inch pieces
1-1/2 celery ribs, sliced into 1/2-inch pieces
6 cups reduced-sodium chicken broth
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 package (8 ounces) uncooked fine egg noodles, cooked
Chopped fresh parsley, optional

Steps:

  • Select saute setting on a 3- or 6-qt. electric pressure cooker and adjust for medium heat; add oil. Brown the chicken thighs. Press cancel. Add carrots, celery and broth to pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Allow pressure to release naturally for 10 minutes, then quick-release any remaining pressure., Stir in salt and pepper. Evenly divide noodles among 4 serving bowls; top each bowl with 1 chicken thigh and top with broth. If desired, sprinkle with parsley.

  • Cut the chicken breasts into thirds or quarters as indicated above so that they are roughly equal size and similar in size to the chicken thighs. Sprinkle 1 teaspoon salt over all of the meat directly on your cutting board and let it hang out for a few minutes as you start the soup.
  • Meanwhile, melt the butter in a large stock pot or Dutch oven over medium heat. Add the onion and stir to coat. Reduce the heat to low/medium-low and let the onion pieces slowly soften and caramelize over the course of 15-20 minutes, stirring occasionally.
  • Once the onion pieces are soft and caramelized, add the carrots, celery, and garlic and let cook an additional 2-3 minutes. Then add the salted chicken pieces, water, and broth. Raise the temperature beneath the pot to high and bring to a boil. As waiting to boil, stir in 2.5 teaspoons salt (reserve remaining 1/2 teaspoon) and all of the dry seasonings (thyme, cumin, sweet curry powder, and black pepper). Once boiling, immediately reduce the heat to low, cover, and let simmer for 15-20 minutes or until the chicken pieces are cooked through.
  • After 15-20 minutes, remove the chicken pieces from the pot and set on a cutting board. Add the cut lasagna noodles and fresh sage to the pot (make sure that the noodles are nicely separated and not stuck together as you add them to the pot). Let the noodles and sage soften in the simmering soup for 8-10 minutes.
