All the familiar flavors of corned beef and cabbage are loaded into this hearty soup, which is rich with barley for extra warmth and comfort.

1 medium onion, quartered
3 stalks celery, quartered
3 medium carrots, quartered
3 tablespoons unsalted butter
Heaping 1/4 teaspoon ground allspice
1 pound plum tomatoes, halved
3 cups low-sodium beef broth
4 cups chopped green cabbage (about 1/4 medium head)
1/2 pound Yukon gold potatoes, chopped
3/4 cup quick-cooking barley
1/4 pound corned beef, cut into thin strips (use leftovers or deli meat)
Kosher salt and freshly ground pepper

Steps:

  • Pulse the onion, celery and carrots in a food processor until they are pea-size pieces.
  • Melt the butter in a large pot over medium-high heat. Add the chopped onion, celery and carrots and the allspice and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes.
  • Add the tomatoes to the food processor and pulse until finely chopped. Transfer the tomatoes to the pot and add the beef broth, cabbage, potatoes, barley and 4 cups water; cover and bring to a boil. Uncover, reduce the heat to medium low and simmer until the potatoes and barley are tender, about 20 minutes.
  • Stir in the corned beef and season with salt and pepper.

2 c leftover cooked and diced corned beef
2 c small diced leftover red potatoes
1 c diced chopped cabbage
1 c small diced cooked onion
2 c leftover diced carrots
1 can(s) chicken broth
2 can(s) cream of potato soup (10 3/4 oz. size)
1 c half and half
1 c milk. lighter version, use 2% milk.

Steps:

  • 1. MAKE THE SOUP: Add the 2 cans of potato soup to the crockpot. (don't add water to the soups!) Add the chicken broth and give it a stir until well mixed. Add red potatoes, cabbage, onions, carrots and stir. Cook for one hour on HIGH and then turn to LOW and cook for 3 hours. Stir halfway through.
  • 2. Add the cream and the milk (according to how thick you want the chowder, more if needed.) and season with salt and pepper to taste. Cover and cook on LOW for 20 to 30 minutes, and serve! Enjoy!

1 large onion (or 2 medium)
2 ribs celery (about 1 cup chopped)

4 medium carrots (about 1 1/2 cups diced or julienne)
2 quarts chicken broth
1/2 small head cabbage (coarsely chopped, about 4 to 5 cups)
1/4 cup pearled barley
1 small bay leaf
1 tablespoon fresh chopped parsley (or 1 teaspoon dried parsley flakes)

Steps:

  • Gather the ingredients.
  • Peel the onion and chop it coarsely. Cut the celery into 1/4-inch slices and then peel and mince the garlic . Peel the carrots and slice them into matchsticks or dice them into 1/4-inch pieces.

1 medium onion. diced
2 celery stalks, diced
1 fennel bulb, diced (reserve fronds)
2 cloves garlic, minced
6 tablespoons butter
1 ½ tablespoons mustard seed
3 pounds corned beef, diced or shredded
Bay leaf
2 tablespoons tomato paste
4 cups chopped cabbage
5 turnips, diced small in ¼" cubes (about 2 cups)
½ teaspoon pink salt
Freshly ground black pepper to taste
½ cup parsley, chopped
Fennel fronds
Juice of 1 fresh lemon

Steps:

  • Set the Instant Pot to sauté. It should read "30".
  • Add butter and onion. Saute for 10 minutes, stirring frequently.
  • Add celery stalks, fennel, and garlic. Saute 6 more minutes.
  • Push vegetables to the sides of the pot so there's a "hole" in the middle, exposing the metal bottom of the pan. Add the mustard seeds to the middle of the pan and stir, toasting the seeds for 2 minutes.
  • Add the allspice to the center with the mustard seeds and toast for 2 more minutes.
  • Turn off the sauté feature.
  • Add 2 cups water to the pot and stir.
  • Remove 1 cup of the broth and process in a blender till smooth. Return the processed stock to the pot. Stir.
  • Add the corned beef, bay leaf, tomato paste, cabbage, turnips, salt, and pepper. Fill the instant pot up with water till it nears the Max Fill line. Do NOT fill it higher than this line.
  • Place the lid on the Instant Pot, turn the vent to "sealing", and set the Instant Pot to cook for 30 minutes on high pressure.
  • While the cabbage soup cooks, dice the parsley and fennel fronds, being careful not to use any of the harder stems of the fennel.
  • When the soup is done cooking, allow the Instant Pot to sit and slow release pressure for 15 minutes. After 15 minutes, you may set the vent to "venting" to release the remainder of the pressure.
  • When the pressure cooker is done venting, open the pot. Add the parsley, fennel fronds, and lemon juice, and stir. Serve and enjoy!

Great Grandmother was known for this one. When she knew we were going to visit she made a big kettle of this mouth watering soup and extra homemade bread and sweet butter. Hillandale Sweet butter is the closest taste to Grammy's. I've been making this soup for 20+yrs. Having had first timers eat this recipe Grammy's way they raved compliments and always came back for 3rd's! I've never been able to eat just one bowl. My youngest daughter (9 yrs) will not eat cabbage, but she finally ate cabbage with this soup and she loved it.

2 -3 lbs cabbage, chopped
2 (12 ounce) cans corned beef
1 (15 ounce) can white corn (I like shoepeg in mine)
1 1/8 lbs baby carrots (faster version canned carrots is fine)
10 large russet potatoes, quartered (not canned potatoes please)
water

Steps:

  • Empty beef into large soup pot; cover with water and mush it a bit.
  • Let come to a boil and stir nicely to get the beef flavor going.
  • Add cabbage and fresh carrots.
  • add more water to cover and let simmer about 30 minutes.
  • Add Potatoes and corn and continue to add small amounts of water to keep enough broth for cooking and flavoring.
  • Simmer until potatoes and carrots are fork tender.
  • Stir occasionally to ensure equal tenderness.
  • Serve in large bowls and lots of cut homemade bread--you're going to need it!
  • Its usually a 2 hour prep and cook combined.

1/2 pound or more cooked and sliced corned beef (set aside)
3 cups good quality chicken broth
1 teaspoon thyme
salt and pepper to taste
2 tablespoons butter
SAUTE
1/2 small head cabbage, sliced
2 carrots sliced into rounds
1 rib celery, sliced
2 cloves garlic, sliced
1 medium size onion, diced

Steps:

  • 1. Knife cut the cabbage into pieces about 1 1/2 inches long, and slice the cooked corned beef into strips about ¼ inch thick and two inches long. Set aside. You will add the cooked corned beef to the soup last.
  • 2. Saute the prepped Vegetables in 2 tablespoons butter in a large soup pot over medium heat until vegetables start to get tender. Then add the 3 cups of chicken broth to the pot, and add the thyme, salt and pepper to taste. Then simmer the soup over medium low heat for about 15 to 20 minutes until vegetables are tender and flavors have blended. Add the cooked corned beef the last five minutes of cooking.
  • 3. Serve and Enjoy!
