These little cookies taste a lot like the popular candy bar.

2 (1 ounce) squares unsweetened chocolate
1 (14 ounce) can sweetened condensed milk
3 cups flaked coconut
1 teaspoon vanilla extract
1 pinch salt
1 cup whole almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • In the top half a double boiler melt the chocolate and condensed milk, stirring frequently.
  • Pour the melted chocolate mixture over the coconut. Stir in the vanilla and salt. Mix well until the coconut is completely coated. Drop dough by teaspoonfuls onto the prepared baking sheet. Press one whole almond into the top of each cookie.
  • Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Check at 8 minutes as the bottoms tend to burn easily. Remove from oven and cool.

2 cups desiccated coconut, unsweetened
½ cup icing sugar
1 teaspoon salt
1 teaspoon vanilla extract
⅔ cup sweetened condensed milk
dark chocolate
almond

Steps:

  • In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
  • Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
  • Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
  • Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).
  • Enjoy!

This is a wonderful after dinner treat when you don't want a big dessert. Just pass the plate around and serve with coffee or other beverage of choice. These delicious balls are easy to make, healthy, and no baking is necessary! This recipe is also Vegan if you use dark chocolate, and it is also gluten free. Enjoy!

1¾ cups unsweetened, flaked coconut
about 25 whole almonds, toasted
1 giant bar of dark chocolate - my choice is ghiradelli
2 tablespoons coconut milk
3 tablespoons coconut oil
3 tablespoons pure maple syrup
½ teaspoon pure vanilla extract
pinch of salt

Steps:

  • 1. TOAST ALMONDS IN A SKILLET: Heat nuts in a dry, heavy skillet over medium heat for 1 to 2 minutes or until they're golden brown and they give off a rich, toasty fragrance. Watch them closely when using this method as it's easy to burn them. Stir nuts frequently for even toasting. Remove from pan to cool.
  • 2. Melt the chocolate in the microwave at 30-second intervals until it is melted and smooth when stirred.
  • 3. In a medium bowl add the following ingredients:
  • 4. Measure 2 ¾ cups of flaked coconut
  • 5. Add 2 tablespoons coconut milk
  • 6. 3 tablespoons pure maple syrup
  • 7. ½ teaspoon pure vanilla extract
  • 8. a pinch of salt
  • 9. Stir to combine. I use a potato masher . Just a few mashes and the dough-like mixture is ready to form into balls.
  • 10. Make the balls by hand, about 1 inch in diameter. Roll the balls and insert an almond inside until it is hidden.
  • 11. Then roll the balls in the melted chocolate.
  • 12. Place the chocolate covered balls on a plate lined with parchment paper in the fridge until chilled, then transfer to an air-tight container to store. Separate layers with wax paper. Keep refrigerated.
  • 13. Enjoy!

1/2 cup(s) sweetened condensed milk
2 cup(s) semi-sweet chocolate chips
2 tablespoon(s) shortening

Steps:

  • In a large bowl, combine the confectioners sugar, coconut, almonds, milk. Shape into 1 inch balls. Refrigerate until firm, about 20 minutes.
  • In a microwave, melt chocolate chips and shorting on high for 1 minute; stir. Microwave at additional 10 to 20 second intervals, stirring until smooth.
  • Dip balls in chocolate; allow excsee to drip off. Coat or garnish with ingredients of your cooice. Place on wax paper; let stand until set.
  • Store in an airtight container.

2 1/2 cups unsweetened dried shredded coconut
1/3 cup raw honey
2 tablespoons coconut oil
1 teaspoon vanilla
1 pinch sea salt
13 1/2 ounces coconut milk, reduced to 5 ounces
10 ounces bittersweet chocolate chips
30 almonds, toasted (optional)

Steps:

  • In a food processor mix the first 5 ingredients.
  • Chill.
  • Over medium heat reduce the coconut milk stirring often until reduce to a 1/4 left. It`ll take about 30 minutes. It will separate. Remove 1 tablespoon of the oil and use as you wish. (body lotion, add to your coffee -- ).
  • Add chips to the coconut off heat and mix till melted.
  • Roll coconut mixture into 30 balls.
  • Chill.
  • Dip balls into melted chocolate. You will have leftover dip.
  • Top with toasted almond.
