CLASSIC CHICKEN A LA KING
Classic Chicken a la King is rich and creamy and made from scratch. This easy dinner recipe is great served over rice, pasta, toast, or biscuits!

Steps:
- In a large saucepan, melt butter over medium-high heat. Add in mushrooms and cook until mushrooms are soft, about 5 minutes.
- Add in flour and stir until there are no more specks of flour left. Pour in chicken broth and milk and bring to a boil. Reduce heat to low and simmer until sauce is thickened, about 3 minutes.
- For a richer sauce: in a small mixing bowl, whisk together egg yolks with heavy cream. Working quickly, slowly pour in 1/2 cup of the hot mixture into the egg mixture while whisking vigorously. Immediately pour this mixture back into the saucepan, whisking the entire time. Cook 2 minutes more.
- Stir in frozen peas, drained pimientos, and cooked chicken and let heat through, 2 to 3 minutes.
- Serve hot over cooked rice, pasta, toast, or biscuits.

- In the bottom of a large skillet, melt the butter. Add the red pepper, onion, and mushrooms. Saute until al dente or 5 minutes on medium-high.
- Stir in flour. Continue stirring until smooth. Add the chicken stock.
- Slowly drizzle in the cream, and stir using a spatula until the mixture starts to thicken.
- Add the cooked turkey. Stir to combine. Add salt and pepper to taste.
- Serve immediately.

- Melt butter in a medium saucepan over medium heat; stir in flour, then pour in broth and let thicken, stirring. Add chicken, peas, mushrooms, carrots, onion and bell pepper. Mix together and bring to a boil.

- Heat the milk and cream over low heat and set aside keeping hot.
- In a deep skillet, melt the butter. Saute the mushrooms, onions and peppers until softened. Put the garlic in the pan with the vegetables and saute for another minute.
- Sprinkle in the flour while stirring the vegetables and cook for 2-3 minutes until the flour turns golden.
- Add the sherry and allow the alcohol to evaporate for about a minute.
- Pour in the milk and cream and mix well.
- Add the chicken stock, mix well again.
- Bring the pot to a gentle boil, and then reduce heat and stir until the sauce becomes thicker. Blend in the tarragon, salt and pepper. Take off the heat and keep warm.
- Beat the egg yolks until they look foamy. Spoon out a small amount of the white sauce and mix in with the egg yolks. With a whisk, stir in this egg mixture to the pot of white sauce. Add the chicken, parsley, and lemon juice and simmer the whole pot over low heat until heated through.
- Place warm biscuits halved on a plate and spoon the chicken sauce over them.

- For sauce, melt butter or margarine in a large saucepan.
- Stir in flour, salt, and pepper.
- Add the milk, water and bouillon all at once.
- Cook and stir over medium heat until thick and bubbly.
- Stir in the chicken or turkey, mushrooms, peas and pimiento.
- Continue to stir and cook until sauce bubbles again.
- Serve over toast points, English muffins or biscuits.
CHICKEN A LA KING WITH BUTTERMILK BISCUITS
Steps:
- Preheat the oven 450 degrees F.
- Add the dry ingredients to a large bowl and stir to combine. Cut the cold butter into chunks and cut it into the flour until the dough resembles coarse crumbs. Pour in the buttermilk and mix until combined.
- Turn the dough onto a floured board and gently roll it out until it's about 1/2-inch thick. Using a round cutter, cut the dough into 12 biscuits and arrange them on a cookie sheet. Bake until the biscuits are golden brown, about 10 to 12 minutes.
- Chicken:
- In a medium-sized pot, add the chicken pieces and enough water to cover. Boil over high heat until the chicken is cooked through, then remove them from the water to a plate.
- In a large pot, over medium heat, add the melted margarine or butter along with the celery, carrots, onions, green peppers, poultry seasoning, and black pepper. Saute until the vegetables become soft. Add the flour and stir continuously to prepare a roux.
- To a large saucepan, add the 4 cups water and the bouillon cubes. Bring to a boil over medium heat. Once the mixture comes to a boil, turn off the heat. Add the vegetable mixture and stir to combine. In another saucepan over low heat, add the milk and condensed cream of mushroom soup and simmer until heated through. Add the milk mixture, the frozen peas and the chicken to the vegetable mixture and simmer for about 5 minutes.
- Arrange the biscuits on serving plates, then spoon the chicken mixture over the biscuits and serve.
BONNIE'S CHICKEN OR TURKEY ALA KING OVER BISCUITS
This is an easy meal to prepare as it can be made in just a few minutes. It is total comfort food! The ingredients are probably right in your pantry! And who doesn't love a decadent chicken gravy over biscuits, topped with some delicious, tender turkey or chicken meat? This is a great solution for leftover chicken or turkey...

- 1. Place prepared biscuits in the oven while you make the chicken mixture, or you can make your own from scratch.
- 2. Make a roux. Melt equal parts of 2 tablespoons of butter in a large skillet over medium high heat, add 2 tablespoons of flour, a cup of broth stir until thickened. Add chicken, heat through and turn heat to low and add the pimientos, mushrooms, parsley, marjoram and onion powder. Add the cream, can of soup and parmesan cheese. Stir gently, heat but don't boil. Add salt and pepper. Add the sherry, stir gently to combine. Split the biscuits and spoon mixture over them and serve. Enjoy!
- 3. Cooks tip: You can add other ingredients to this, sometimes I add frozen peas I have steamed in a steamer bag. This can also be made in the microwave.
