- Place meat in dutch oven.
- Add spices from pkg if desired.
- Add water to cover meat.
- Bring to a boil, reduce heat and simmer, covered 2 hours.
- Add all vegetables EXCEPT cabbage.
- Cover, return to boiling.
- Reduce heat and simmer 15 minutes.
- Add cabbage.
- Cover; cook for 20 minutes more.
- Season with salt and pepper.

- Place the corned beef and broth in a Dutch oven. Add the pickling spices and garlic and bring to a boil over high heat. Reduce heat to low, cover, and simmer until the beef is cooked, about 3 to 3 1/2 hours.
- Add the potatoes, carrots and turnips to the pot and cook until the meat and vegetables are tender, about 30 to 45 minutes. Meanwhile, cook the beets in a separate saucepan of boiling, salted water for 30 to 45 minutes (this prevents the beets from discoloring the other vegetables).

- 1. PREPARE HAMBONE: Use a leftover spiral hambone with meat. Trim any excess fat and discard it. Place the hambone in a extra large pot and cover with about a gallon of water.
- 2. ADDING THE INGREDIENTS:
- 3. Add the onions, garlic, chicken granules, McCormick seasoning, salt and pepper. Bring to a boil and slow simmer for about an hour.
- 4. Add the carrots, simmer for 1/2 hour, then add the potatoes. When the potatoes are just tender, add the green beans and simmer until tender. Avoid adding more seasoning until end of cooking time because flavors blend as it simmers.
- 5. TO SERVE: Using a slotted spoon, ladle potatoes, carrots, onions and green beans and the ham on a dinner plate or in a large bowl. Enjoy! Reserve the broth to be used for Hambone Bean Soup.

This is a robust, one pot meal (if you do not make the optional beets) . I like to make this in the fall and winter with the best looking root veggies of the season. I do not use the spice pack that sometimes comes with the meat. Serve with corn bread, prepared horseradish and your favorite mustard. Enjoy!

- Rinse the corned beef with cold water.
- Place the corned beef in a very large pot.
- Cover with cold water and bring to a boil.
- Skim off any surface scum once it reaches a boil.
- Add bay leaves, cover and simmer for two hours.
- Add the potatoes and onions and cook for 20 minutes.
- Add the carrots, turnips and parsnips and cook for 30 more minutes.
- Meanwhile, put beets in a large pot of cold water and bring to a boil.
- Add a large pinch of salt once boiling.
- Reduce heat to a low simmer, half cover and continue cooking for 35 minutes, then strain.
- When cool, remove the peels and put the beets in a gratin dish with some butter and/or vinegar in a 200 degree oven to keep warm.
- When assembling the dish, do not include the beets with the other veggies. Serve them as are in their own gratin dish.
- Remove the meat from the pot and place on an oven proof platter or roasting pan, cover with tinfoil and place in the oven with the beets.
- Bring the broth and vegetable mixture up to a boil and add the cabbage. Boil for 5 minutes and then turn down to a simmer and cook for at least 3 more minutes, more if you like softer cabbage (I do it for 10 more minutes).
- Slice the meat and serve on a platter, surrounded by the vegetables and some of the stock or pot liqueur .
- Enjoy!

This dinner was a new twist on an old favorite: Boiled Dinner. Made with a tri-tip, accompanied by carrots, onions and potatoes, cooked in the slow cooker for hours to blend the flavors and make it fork tender. It could not be any easier. - 1. Take the tri-tip from the freezer and place in the slow cooker on low heat. Add the broth and water, a-1 sauce, worcestershire sauce, onions, garlic, pepper, Mrs. Dash, carrots, and place the whole potatoes on top of the meat. The slow cooker should be about 3/4 full of liquid and cover the ingredients. If not, add more water. Let it cook at least 3 hours on low, then raise the heat to 2 hours on high, then back down to low for remaining cook time. It will take 6 hours or a little more to get done. Make sure the meat is fork tender and the vegetables are tender before serving. You can make gravy from the broth or cut the meat in slices and drizzle the broth over the meat and the potatoes and carrots. It makes good open faced sandwiches the next day with mashed potatoes and gravy. Enjoy!
- 2. Cook's Tip: I cooked this meat frozen rock hard in the slow cooker. It took 6 1/2 hours to get done. Keep in mind, if you use fresh meat, it should lessen the cooking time. This is a good recipe if you have to be away from the house for a long period of time. You can still come home to a great dinner!
