STEAK AND DUMPLINGS
This is a great recipe my Mom used to make. I believe it's a Depression-era recipe since it's made with round steak and flour dumplings. The trick is to let it simmer for a few hours to get the meat fork-tender. From the kitchen of Maureen Dutcher. Enjoy!

Steps:
- Heat vegetable oil in a skillet over medium heat; place the strips of steak into the hot oil. Sprinkle with garlic powder, salt, and black pepper to taste. Cook, stirring frequently, until the steak pieces are browned, 10 to 15 minutes. Pour in the beef broth, and use a spoon to scrape up and dissolve any browned flavor bits from the bottom of the skillet. Stir in onion and carrot; drop in the beef bouillon cubes. Bring the mixture to a simmer, and reduce heat to medium-low. Simmer until steak strips are tender, at least 1 1/2 hours. Stir occasionally.
- About 10 minutes before serving time, bring a large pot of lightly salted water to a boil over medium heat. Mix together the flour, 1 teaspoon of salt, and baking powder in a bowl; stir in eggs and water, 1 tablespoon at a time, to make a thick batter. Drop tablespoon-sized blobs of batter into the boiling water, and stir; dumplings will sink at first, but then rise to the top. Let the dumplings simmer for about 4 minutes after they float to the surface of the water.
- With a slotted spoon, scoop out the dumplings into a serving bowl. Serve topped with the steak strips and gravy.

BEEF AND DUMPLINGS
Beef and Dumplings are the ultimate comfort food. The beef is fork-tender & melts in your mouth, and the dumplings are light as a cloud.

- Heat a large pot over medium-high heat.
- Add the canola oil and the stew meat. Let the meat cook until nicely browned. The meat should release easily from the bottom of the pot when it is ready to turn.
- Stir the stew meat and add the onion along with the salt and pepper. Continue to cook until all sides of the meat have browned and all of the moisture has evaporated from the bottom of the pot.
- Add the Worcestershire Sauce and the *red wine to deglaze the pan. Use a wooden spoon and scrape up all that good stuff on the bottom of the pan.
- Add the beef broth and the fresh herbs. (Tie the herbs together with butcher string for easy removal later). Bring the broth to a boil, cover, and reduce heat. Simmer the stew meat for anywhere from 1 - 2 hours until the meat is fork-tender.
- Mix the Bisquick with the milk and fresh parsley. Stir only until combined. Drop by tablespoons full into the boiling broth. I usually get about 9 dumplings.
- Cook the dumplings for 10 minutes, then cover and cook another 10 minutes. And that is it, dinner is done!

BONNIE'S SHORT RIBS WITH BEEF GRAVY AND DUMPLINGS
Sometimes, we really get tired of potatoes and rice with our entree, and we want something different. So I created a beef gravy and dumpling recipe that really kicked our short ribs up a notch! This more than met our expectations, and it was the perfect complement to the meal. Enjoy!

- 1. Directions Coat the short ribs in flour and fry on all sides in oil over medium heat. Transfer to a large slow cooker. Mix all the ingredients and pour over the short ribs. Cook on low setting for 5 to 6 hours until fork tender.
- 2. Make beef gravy and dumplings 1/2 hour before meat is done. In a small bowl, add flour, baking powder, salt, pepper, garlic and onion powder, and parsley. Mix dry ingredients well, then add butter. Mash the butter into the flour with a fork, then using your fingers distribute it evenly throughout the flour, then add milk. Stir mixture just until wet. The goal is to make a sticky, moist, spoonable dough.
- 3. Make sure the beef broth is boiling. Dip your spoon in the hot broth, and then drop spoonfuls of the dough into the simmering broth until the bowl is empty. Turn the heat up and bring it to a boil and then immediately turn the heat to simmer (so it won't tear your dumplings) Put the lid on tight. Cook 20 minutes. NO PEEKING, PLEASE! You will lose your steam, because the heat and steam is what cooks your dumplings. Turn off the heat, set aside. Let the pan rest on the burner for about five minutes before serving. The gravy thickens as it rests.
- 4. Spoon the gravy over servings of beef short ribs and serve with the dumplings as a side dish with a green vegetable. Enjoy!

- In a large Dutch oven, combine the first eight ingredients. Slowly bring to a boil over low heat. Cover and simmer for 45-60 minutes or until meat is tender, skimming the surface as foam rises., In a large bowl, combine the flour, parsley, baking powder, salt and nutmeg; stir in milk, egg and oil just until moistened. , Drop batter by tablespoonfuls onto simmering broth. Cover and simmer for 12-15 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering). - Peel and chop all vegetables.
- Brown steak in a large stockpot.
- Add water to cover.
- Add all vegetables.
- Pour over gravy granules.
- Aimmer for 2 hours.
- Make dumplings by combining 2oz suet, 4oz plain flour and a little water. Separate into small balls and roll in flour. Add to top of stew half an hour before end of cooking. They are ready when well risen.
- This recipe freezes very well and is a weekly meal in our home.

LORI'S BEEF AND GRAVY
I learned how to make this dish in Home Ec. while attending German school. It's one of my kids favorite dinners. Note: This recipe ends up with a lot of gravy. I usually like that, because I can freeze some for other sauce-less beef or just over mashed potatoes/rice/noodles on a meatless night.

- Place the cubed beef in a medium sized pot. Add water. Include the bouillon cube. Cover and simmer for 1 hour.
- Separate the meat from the broth and keep the liquid hot.
- In a skillet on medium heat melt the butter, sauté the onions until transparent then add garlic. Continue until you can just smell the garlic aroma.
- Sprinkle in the flour and cook until slightly brown. Using a whisk, pour in the hot broth until the sauce is smooth and thickened. Place the meat in the gravy and continue cooking covered on low for another 1/2 hour.
- Peak in and stir every so often adding water if needed to get the desired gravy consistency that you prefer.
- Taste for salt and pepper. add freshly grated nutmeg to taste if using.
- I have served this over potato dumplings (packaged or homemade), rice, mashed potatoes, noodles.
