3/4 teaspoon garlic powder, divided
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless pork loin chops (6 ounces each)
1 tablespoon olive oil
1/2 cup white wine or chicken broth
1/4 cup chicken broth
2 tablespoons Dijon mustard
1 tablespoon honey
1/2 cup heavy whipping cream

Steps:

  • Combine 1/2 teaspoon garlic powder, salt and pepper; sprinkle over pork chops. In a large skillet over medium heat, brown pork chops in oil. Remove and keep warm., Remove skillet from heat and add wine, stirring to loosen browned bits from pan. Bring to a boil over medium-high heat; cook until liquid is reduced by half. Reduce heat to medium. Whisk in broth, mustard, honey and remaining garlic powder; cook and stir for 1 minute. Whisk in cream; cook and stir for 4-6 minutes or until thickened., Return pork chops and juices to the skillet. Cover and cook until a thermometer reads 145°, 3-5 minutes. Let stand for 5 minutes before serving.

4 lbs boneless pork roast
1/2 cup dijon-style mustard
1/2 cup honey
1/4 cup soy sauce
1/2 cup brown sugar
1/4 cup water
2 teaspoons Worcestershire sauce

Steps:

  • In a resealable plastic bag, combine thoroughly the Dijon-style mustard, honey, soy sauce, brown sugar, water and Worcestershire sauce until well blended.
  • Place the boneless pork roast in the resealable plastic bag; mix together; seal the bag and refrigerate for about 2 hours or as long as overnight.
  • Preheat grill to medium heat. Remove the pork roast from the bag; discard any remaining marinade; place the pork roast on the grill grids over indirect heat; close grill hood and grill for about 1 hour and 15 Minutes until internal temperature reads 160°F

1 (3-4 pounds) boneless center-cut pork loin, trimmed of excess fat
Salt and ground black pepper to taste
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey mustard
5 garlic cloves, minced
1 tablespoon chopped fresh rosemary
1 onion, quartered
2 carrots, peeled and cut into big chunks
2 celery ribs, cut into big chunks
1/2 cup chicken broth or more, if needed.

Steps:

  • Using a small paring knife, cut a few slits about 1/4 inch deep into the pork. Season the pork with salt and pepper and place it into a large zip top bag or a shallow pan.
  • In a small bowl, mix the olive oil, balsamic vinegar, honey mustard, garlic and rosemary. Spread the mixture over the pork until evenly coated and allow it to sit at room temperature for at least 30 minutes or refrigerate it and marinate up to 24 hours.
  • Preheat the oven to 400 degrees Fahrenheit.
  • Place onions, carrots and celery in a large roasting pan. Place the pork loin fat cap side up on top of the vegetables. Pour the broth on the bottom of the roasting pan.
  • Place in the oven and roast for 15 minutes. Lower the oven temperature to 325 degrees Fahrenheit and roast for 50 to 60 minutes or until the internal temperature reaches 145 degrees, adding extra broth if the roasting pan is completely dry on the bottom.

  • 1. Preheat the oven to 375 degrees F. Sprinkle the pork with salt and pepper. Heat a large, ovenproof skillet over medium-high heat. Add the oil; add the pork and cook, turning occasionally, until browned on all sides. Transfer the pork to a cutting board.
  • 2. Return the skillet to medium heat. Add the butter, thyme, parsley, rosemary, and garlic; cook, stirring, until fragrant, about 1 minute. Stir in the panko and 1 teaspoon salt; cook, stirring, until the panko is golden, about 2 minutes. Transfer the toasted breadcrumbs to a piece of wax or parchment paper.
  • 3. Brush the pork with 2 tablespoons of the mustard and roll in the toasted breadcrumbs to coat. Return the coated pork to the skillet. Halve the garlic heads crosswise and add to the skillet.   • Then leaving the pan in the oven turn on the broiler to high and broil for 2-3 minutes. The pork chops' internal temperature should reach 145-160 degrees.

2 1/2 - 3 pound pork loin with fat on one side.
everglades low sodium seasoning
ground course pepper
beer to marinade with pepper and salt added
SAUCE
2 Tbsp prepared horseradish (the creamy stuff)
1 tsp heaping of ground fresh horseradish
1 Tbsp extra virgin olive oil
1 tsp dijon mustard

  • 1. Marinate the pork tenderloin in beer and season with a little salt and pepper over night.
  • 2. Next Day: Season both sides of your loin with the everglades seasoning. Prepare your grill. Now this is where you decide how you want to cook your meat. You can also do this in your oven.
  • 3. Prepare the sauce by combining all ingredients in a small bowl and mix well.
  • 4. Note he seared the meat and then cooked it with the fat side up. He said this is very important. He smoked the meat for about 35 minutes and then added the horseradish sauce. Continued to smoke it until a meat thermometer registers at 165 degrees. During the smoking/cooking process he added more sauce to each side of the loin. Flip occasionally and add more sauce. Serve with a nice salad or your favorite veggie.

  • If you place the pork chops in the fridge longer than 30 minutes you will need to remove them 30 minutes before you wish to grill them to allow them to come to room temperature.
  • Turn on your gas grill, or get coals ready to heat for a two temperature cook area. On a gas grill, have one area on high, and one area on medium. With charcoal, know where the hot spots are and know where its a lot cooler.
  • While the grill is heating up, pull out the pork chops and place on a plate, shaking off any additional marinade. Place leftover sauce in a sauce pan and bring to boil for 5 minutes to cook any remaining pork juices. Set aside to serve over top of cooked pork chops.
