TENDER PORK CHOPS IN GRAVY
I'm posting this as a reply to someone who was looking for tender pork chops without using a crock pot. I've had this recipe for so long, probably even before there WERE crock pots! (BTW - this recipe can also be made in a crock pot.)

Steps:
- Brown pork chops in frying pan. I like to sprinkle with seasoned salt, seasoned pepper and a small amount of garlic salt when browning.
- Remove from pan and place in casserole dish.
- Mix brown gravy mix, soup, and water.
- Place potatoes and onion around pork chops; cover all with gravy mixture.
- Season with salt and pepper.
- Cover and bake at 350 degrees Fahrenheit for 1 hour or until potatoes are tender.

- In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the bread crumbs, 1 teaspoon parsley and thyme. Sprinkle pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper. Dip chops in egg mixture, then crumb mixture., In a large cast-iron or other ovenproof skillet over medium-high heat, cook pork chops in oil for 4 minutes on each side. Bake, uncovered, at 425° until a thermometer reads 145°, 10-15 minutes., Meanwhile, in second skillet, melt butter. Stir in flour and remaining salt and pepper until smooth; gradually stir in cream and broth. Bring to a boil; cook and stir until thickened, 2 minutes. Serve gravy with pork chops; sprinkle with remaining parsley.

- In a large skillet, brown pork chops in 2 tablespoons butter for 2-3 minutes on each side. Remove and keep warm. , Toss mushrooms with lemon juice. In the same skillet, saute the mushrooms, onion in remaining butter until tender. Add garlic; cook 1 minute longer., Stir the flour, salt and tarragon into the skillet until blended. Gradually stir in the broth, wine and, if desired, browning sauce, scraping up any browned bits from bottom of pan. Bring to a boil. Return chops to skillet. - Sprinkle the pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper covering all sides then set aside for 30-minutes;
- While the pork chops are resting, in a small bowl, mix together the seasoning blend including flour, chili powder, garlic powder, onion powder, paprika, sage, marjoram, black pepper, and salt;
- After 30-minutes, pat the pork chops off and then dredge in the seasoning blend until coated well on all sides;
- In a large skillet, heat the olive oil until hot and then place the pork chops into the ban with at least 1" between each chop;
- Cook the pork chops on medium-high heat for 2-3 minutes until golden brown, then turn;
- Reduce the heat to low and cover the skillet with a lid then simmer for 5-6 minutes for thin chops and 8-10 minutes for thicker chops (cook to 145°F or until juices run clear)
- Remove the pork chops from the skillet and set aside (cover to hold heat);
- Now, add the chicken broth and vinegar to the skillet and use a wooden spoon to break up any fond (bits of food) on the bottom of the skillet;
- Stir in the honey then simmer until reduced by half;
- When reduced, add in the butter and stir until melted;
- Remove the skillet from the heat, add the pork chops back into the sauce, and spoon the gravy over them;
- Let the chops rest for another 1-2 minutes in the pan gravy before serving with sauce over the top and a sprinkle of fresh parsley.

- Pat the pork chops dry with paper towels to remove any moisture. Season pork chops with garlic powder, onion powder, cayenne, seasoning salt, pepper and olive oil.
- Dredge each chop in the flour; shake off the excess and KEEP THE REMAINING FLOUR.
- Heat 2 tablespoons olive oil and 2 tablespoons of butter in a skillet or pan over medium heat. When hot, fry the pork chops in a single layer on each side until golden browned, about 3-4 minutes per side.
- Remove pork chops from the pan and keep warm.
- In the same pan, heat 1 tablespoon of butter over medium heat.
- Add in sliced onions and add a pinch of salt. Cook while stirring occasionally, until soft and caramelized, about 10 minutes. (Add in 1 tablespoon of the chicken broth if the pan becomes too dry.)
- Add the garlic and thyme; cook until fragrant, about 30 seconds.
- Add 2 tablespoons of the remaining flour to the pan. Mix the flour into the onions and cook to dissolve, about 2 minutes.
- Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Let the liquid reduce and thicken slightly, about 2 minutes.
- Whisk in the buttermilk (or cream) and simmer for 1-2 minutes until thick and creamy.
- Return the pork chops to the pan. Coat them in the sauce and let simmer until the pork is completely cooked through, about 5 minutes (or until the pork is cooked to your desired doneness). (The sauce will continue to thicken due the coating on the pork. If too thick, add a little cream or broth to thin out until reaching your desired consistency.)
- Taste test and season with salt and pepper, if needed. Garnish with the chopped parsley before serving. Serve warm.

- Season pork chops with salt and pepper.
- In a shallow dish, combine the flour with garlic powder and ground mustard.
- Dredge each pork chop in the flour, and shake off any excess.
- Heat oil in a skillet over medium high heat, and brown pork chops on both sides until golden brown (work in batches) - about 2-3 minutes per side.
- Transfer the pork chops to the slow cooker.
- In the same skillet, sauté the onions until translucent (2-3 minutes), then add the garlic and cook for 30 seconds.
- Transfer the onions and garlic to the slow cooker.
- Pour the chicken stock over the chops. Cover and cook on LOW for 2-3 hours. The pork chops are ready when the internal temperature of the meat reaches 145°F/63°C. Make sure that they don't cook for too long and dry out.
- Remove the pork chops onto a plate, and cover to keep warm.
- Thicken the gravy by whisking in flour. Cook covered on HIGH until the gravy has thickened.
- Return pork chops into the gravy to mix together. Serve warm with mashed potatoes and salad or steamed green vegetable (broccoli, green beans, broccolini, or asparagus).

I whipped up this recipe tonight while trying to figure out what to do with these pork chops. This is very easy and my two boys loved them. I served them with mashed potatoes and mushrooms. I wasn't quick enough to get a picture!

- Season pork chops on both sides with oregano,chopped dried onions,salt,pepper and garlic powder.

- Place Chops in Ziplock bag add the Dressing.
- Marinade for 3 hours.
- Drain dressing off and flour and fry in frying pan.
- Drain any oil left over and put the chops back in fring pan.
- Mix Soup and Milk together and pour over chops.
- Let simmer till they are tender.
- Gravy is great over potatoes.
