2 boneless pork chops
salt and ground black pepper to taste
1 pinch Italian seasoning, or to taste
1 tablespoon butter
1 tablespoon olive oil
1 onion, sliced
2 shallots, sliced
1 tablespoon chicken stock
2 tablespoons white cooking wine
1 cup half-and-half
2 ½ tablespoons horseradish mustard
2 teaspoons lemon juice
¼ teaspoon fresh thyme

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season pork chops with salt, pepper, and Italian seasoning.
  • Heat butter and olive oil together in a skillet over medium-high heat until butter begins to foam; cook pork chops in the hot butter-oil mixture until golden brown, about 3 minutes per side. Transfer pork chops to a baking dish, keeping the pan juices in skillet.
  • Bake pork chops in the preheated oven until no longer pink in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Cook and stir onion and shallots in the skillet with pan juices over medium heat until softened, 3 to 5 minutes. Pour chicken stock and cooking wine into onion mixture, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  • Whisk half-and-half, horseradish mustard, lemon juice, and thyme into onion mixture until mustard sauce is smooth and heated through, about 5 minutes. Serve pork chops drizzled with mustard sauce.

4 pork loin chops (bone-in, trimmed or 1 lb (boneless))
1/2 tsp kosher salt
fresh black pepper
1/4 cup chopped shallots
1 cup low sodium chicken stock
10 oz sliced baby bella mushrooms
1 tbsp Dijon mustard
2 tbsp chopped fresh parsley

Steps:

  • In a large frying pan heat the butter over moderately low heat.
  • Season pork with salt and pepper.
  • Raise heat to medium and add the chops to the pan and sauté for 7 minutes.
  • Turn and cook until chops are browned and done to medium, about 7-8 minutes longer or until the pork reads 160F in the center.
  • Remove the chops and put in a warm spot.
  • Add shallots to the pan and cook, stirring, until soft, about 3 minutes.
  • Add the stock to deglaze the pan, stir in the mustard, 1 tbsp parsley, then add mushrooms, season with fresh pepper and cook about 3 minutes, or until mushrooms are done.
  • Put the chops on a platter and pour the mushroom sauce over the meat, top with remaining parsley.

salt and freshly ground black pepper
1/2 cup low-sodium chicken broth
2/3 cup half and half ((or heavy cream))
1 Tablespoon dijon mustard
2 teaspoons lemon juice

Steps:

  • Season pork chops with salt and pepper on both sides.
  • Heat a large skillet over medium-high heat and spray with nonstick cooking spray. Add pork chops and cook for 2-4 minutes on each side, until browned and just barely cooked through (don't overcook or they will be tough).
  • Transfer pork to a plate and cover with aluminum foil.
  • Add chicken broth to the skillet and scrape up any remaining browned bits from the pork.
  • Add cream or half & half, dijon mustard, and lemon juice.

2 tablespoons vegetable oil
1/4 cup finely chopped shallots (1 to 2)
2 tablespoons unsalted butter
1/2 cup reduced-sodium chicken broth
1/4 cup country-style Dijon mustard
2 tablespoons heavy cream
2 teaspoons fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Heat a dry 12-inch heavy skillet over moderately high heat until hot. Pat pork dry and sprinkle with salt and pepper. Add oil to hot skillet, swirling to coat, then brown chops, turning over once, about 8 minutes total. Transfer to a shallow baking pan, reserving skillet, and bake, uncovered, until cooked through, about 5 minutes. Let stand, loosely covered with foil, 5 minutes.
  • Meanwhile, pour off fat from skillet, then cook shallots in butter over moderate heat, stirring, until softened, 3 to 5 minutes. 4 pork chops (22 oz with bone, fat removed, 1 inch thick, trim all visible fat)
1/2 tsp salt
fresh ground pepper
3 tbsp chopped onion
3/4 cup chicken stock or broth
1 tbsp dijon mustard
2 tbsp chopped (fresh herbs like parsley, chives)

Steps:

  • In a large skillet melt the butter over moderately low heat.
  • Season the pork with salt and pepper.
  • Raise heat to medium and add the chops to the pan and sauté for 7 minutes. Turn and cook until chops are browned and done to medium, about 7-8 minutes longer. Remove the chops and put in a warm spot.
  • Add the onion to the pan and cook, stirring, until soft, about 3 minutes. Add the stock and boil until it reduces to 1/2 cup, about 2 to 3 minutes.
  • Stir in the mustard, herbs, and 1/8 tsp pepper.
  • Put the chops on a platter and pour the sauce over the meat.
