BBQ BONELESS COUNTRY RIBS
Spoiler alert: The secret behind these easy-to-eat boneless BBQ ribs (and why they're one of our most popular recipes of all time) is the quick homemade barbecue sauce. - Preheat oven to 425°F. Coat bottom of baking dish with 1 tablespoon of olive oil. Place ribs in dish, separating them slightly. Drizzle remaining 1 tablespoon olive oil over top of ribs and rub to coat. Sprinkle seasoned salt lightly over all. Place sliced onions on top of ribs. Roast ribs at 425°F for 30 minutes.
- Meanwhile, in medium saucepan over medium heat, combine water, ketchup, Worcestershire sauce, chili powder and red pepper sauce. Bring to boil. Reduce heat to low and continue to simmer sauce until it is reduced and thickened a bit.
- After 30 minutes of roasting, pour BBQ sauce over ribs, reserving about 1 cup for later. Reduce oven temperature to 350°F and bake ribs another 60 minutes (or longer, depending on thickness of ribs), basting with sauce every 15 minutes. Ribs are done when meat is tender and cooked through, and the internal temperature reaches a minimum of 145°F. You can cover the pan loosely with foil for the final 30 minutes of baking if the ribs appear to be drying out. Be sure to keep basting the meat frequently to keep it moist and flavorful.
- Transfer ribs to a plate and pour BBQ sauce over all. Serve immediately.

- Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
- Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
- Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

SIMPLE PORK RIB DRY RUB
I have used this simple rub to make ribs on the barbi in both Memphis, where I learned, and England, where I now live. The dry rub will stop the ribs from burning on the outside, as happens with some wet sauces. This rub is hot and sweet, which makes it perfect for ribs. The proportions of ingredients can be adjusted to taste. On two continents, I've received nothing but compliments for this recipe. I use this for approximately 2 kilograms ribs.

BONELESS COUNTRY STYLE PORK RIBS RECIPE

- Preheat oven to 500°F.
- Combine all the ingredients except the pork ribs in a saucepan. Cover and simmer for 10 minutes.
- Place ribs in bottom of a roasting pan or 9X13 baking pan.
- Pour sauce over the meat.
- Cover the pan with foil and bake at 500 degrees for 10 minutes.
- Reduce heat to 325 degrees and bake for an additional 1 to 1 ½ hours. Check them at the 45-minute mark and turn them in the sauce.
- When the ribs are tender, remove the foil and cook for 15 minutes without the foil, just enough to slightly reduce and thicken the sauce.
- Ribs are done when the meat is tender and pulls apart easily.
- Remove the BBQ ribs from the sauce to serve. The sauce can be put in a small bowl to serve on the side.

BONELESS COUNTRY STYLE RIBS WITH CHIMICHURRI PESTO AND JICAMA SLAW

- Mix paprika, garlic powder, onion powder, kosher salt and pepper in a bowl.
- Rub spices all over Boneless Country Style Ribs, then cover and refrigerate for 2 hours.

- Mix the dry spices together in a small bowl. This shold equal about 1/2 Cup of rub. Mix dry ingredients well. Put the pork ribs in an aluminum pan, then rub both sides of the meat with rub evenly coating. You can rub the spices in with your fingers. Be SURE to wash your hands before and after handling the meat.

- Cut ribs into serving-size pieces; rub with 1 tablespoon cumin. In a large skillet, heat oil over medium-high heat. Brown ribs in batches.
